Ingredients

1 (16 ounce) bag cheddar cheese, shredded
2 teaspoons salt
2 1/2 teaspoons black pepper
1 tablespoon garlic powder
1 jalapeno pepper
1/4 cup milk
2 teaspoons paprika

Steps:

Chop pepper into very small pieces, set aside.
Turn stove on medium heat.
Put cheese, milk, and chopped jalapeño in a pan and be sure to watch it until the cheese melts.
When you're sure the cheese has melted, turn stove completely off.
Place cheese concoction in a large bowl.
Add rest of ingredients to bowl; stir.
If your cheese seems to have thickened, heat it on stove for maybe 3 minutes on low stirring occasionally.
Serve IMMEDIATELY so the cheese won't thicken on your party goers.

Pimento cheese spread definitely qualifies as comfort food. Mine is an update with ingredients like good sharp Cheddar, pickled jalapeños, and Sriracha. This recipe is inspired by the pimento cheese from a Brooklyn cheese shop that I love called Stinky (what a great name!).

8 ounces cream cheese, at room temperature
3/4 cup good mayonnaise, such as Hellmann's
1 1/2 teaspoons granulated onion (not onion powder)
2 large garlic cloves, grated (see Cook's Note)
1 teaspoon whole celery seed
Kosher salt
3/4 cup canned pickled jalapeño peppers, drained and chopped
1/2 cup chopped scallions, white and green parts (3 to 4 scallions)
1/2 cup chopped roasted red peppers, drained (4 ounces)
4 cups grated sharp white Cheddar, such as 2-year aged Grafton (10 ounces)
1 tablespoon Sriracha
Ritz crackers, corn chips, and/or crudités, for serving

Steps:

In a large bowl, combine the cream cheese, mayonnaise, onion, garlic, celery seed, and 1/2 teaspoon salt with a wooden spoon. Add the jalapeños, scallions, red peppers, Cheddar, and Sriracha and combine well. Taste for seasonings and serve with crackers, corn chips, and/or crudités.

1 (12-ounce) can stewed tomatoes with juice
4 to 6 cloves garlic
3 whole fresh jalapenos
1 whole medium white onion
2 to 3 tablespoons chopped fresh cilantro
4 to 6 fresh Roma tomatoes
Kosher salt
Fresh ground pepper
1/2 lime, juiced
1 1/2 pounds ground beef
1 large chopped onion
1 or 2 chopped jalapenos
1 tablespoon freshly chopped garlic
Salt and pepper
2 pounds velveta cheese, cubed
1 can cream of mushroom soup
1/4 cup whole milk
Tortilla chips

Steps:

Puree stewed tomato juice only, garlic and 2 jalapenos in a blender or processor. Finely chop the onion, 1 jalapeno, 2 to 3 tablespoons of cilantro and 4 to 6 Roma tomatoes. Roughly chop the stewed tomatoes. Mix all these ingredients in a large bowl. Season with kosher salt, fresh ground pepper and lime juice.;
Cook the ground beef, onion, jalapenos, garlic and dash of salt and pepper. Drain excess fat in a small bowl. Add the beef mixture to slow cooker and put on medium setting. Keep hot. Add cubes of cheese, cream of mushroom soup and milk and stir. Next add 2 cups of the salsa mixture to the cheese mixture. Can be kept warm for 1/2 hour or longer. Serve with chips.

I had this at a party, and it was just too good. Feel free to add onion or chilves or other spices or leave out the hot pepper sauce...whatever floats your boat. The hot sauce isn't as spicy as it sounds. Serving size is estimated.

16 ounces white chicken meat (canned)
16 ounces cream cheese
1 cup ranch salad dressing
6 -8 ounces hot pepper sauce
8 -16 ounces cheddar cheese, shredded
salt & pepper

Steps:

Drain chicken and cook in a large frying pan with salt and pepper.
Add cream cheese and stir until melted.
Add ranch dressing and hot sauce and mix well.
Add cheddar cheese and cook until melted.
Pour into a 9x13" dish and bake at 400 until bubbly (approximately 10 minutes).
Serve with tortilla chips, cut vegetables, or crackers.
