SLOW-COOKER CHEDDAR BACON BEER DIP
My tangy, smoky dip won the top prize in our office party recipe contest. Use your favorite beer or ale, but steer clear of dark varieties. -Ashley Lecker, Green Bay, Wisconsin

Steps:
- In a greased 3-qt. slow cooker, combine cream cheese, sour cream, mustard and garlic powder until smooth. Stir in beer, cheese and all but 2 tablespoons bacon. Cook, covered, on low, stirring occasionally, until heated through, 3-4 hours., In the last 30 minutes, stir in heavy cream. Top with onion and remaining bacon. Serve with soft pretzel bites.

Steps:
- In a medium saucepan over medium heat, add butter and when melted, add flour. Whisk until the roux turns golden, about 1 ½ minutes.
- Pour in beer slowly whisking constantly. Add milk, mustard, Worcestershire sauce, smoked paprika and garlic powder. Whisk until the mixture is smooth and thickens, about 2 ½ to 3 minutes.
- Add cheese and whisk continuously until melted. Taste and if needed, add salt and freshly ground black pepper.
- Add hot sauce and bring the mixture to a simmer; cook for a few minutes until the sauce thickens.
- Serve warm with tortilla chips, pretzels, crackers or veggies. Yields 2 ½ cups.

- Beat cream cheese in a medium bowl until smooth. Add ingredients in the following order, mixing with the beater after each one: sour cream, Cheddar cheese, beer, jalapeno peppers, garlic powder, onion powder. Cover and refrigerate until flavors have blended and dip has thickened, at least 2 hours.
- Remove from the refrigerator 15 minutes before servings.

- In saucepan, heat beer over low heat til warm.
- Stirring, add cheese mixture.
- Stir til melted.
- *If you can't find horseradish mustard, add 1 1/2 teaspoons each of regular mustard and horseradish.

CHILI-CHEDDAR BEER DIP
This addictive dip goes fast and is a great one to make quickly and serve fast. The plate gets cleaned. Lower in fat with the neufchatel and if you sub in 2% cheese. This is from a Kraft cookbooklet for Superbowl 2010. It was so colorful and the flavors fresh. Hope you all enjoy it as much as our guests did. - STIR in Cheddar; spread onto large serving plate.
