SPICED FRESH ORANGE AND HONEY SORBET

Steps:
- Combine first 8 ingredients in heavy large saucepan. Bring to boil over medium-high heat, stirring until sugar dissolves. Boil until syrup is thick and mixture is reduced to 2 cups, about 12 minutes. Discard bay leaf; cool syrup.
- Strain syrup into medium bowl. Add orange juice and lemon juice. Transfer to ice cream maker and process according to manufacturer's instructions. Transfer sorbet to container, cover, and freeze until firm, at least 6 hours and up to 3 days.
SPICED ORANGE SUNDAES
Why not cool off this summer with the fresh taste of spiced oranges and ice cream? This would be a great ending to a summer barbecue or pool party and presents beautifully in the orange shell. The dessert can be prepared ahead of time and kept in the freezer and fridge until you're ready to serve it.

Steps:
- Making zigzag edges, cut the oranges in half.
- Cut out all the orange pulp, scraping it out with a spoon if necessary.
- Rinse the shells, dry them and put in the freezer.
- Remove the seeds and white membrane from the orange pulp.
- Combine the orange pulp, sugar, cornstarch, ginger, cinnamon and raisins in a saucepan.
- Bring to a boil, stirring; boil gently until slightly thickened.
- Cover and chill.
- Remove the shells from the freezer and fill with a scoop of ice cream.
- Cover with plastic wrap and return to the freezer until ready to serve.
- To serve the dessert, place each orange shell in a small dish.
- Spoon the spiced orange syrup over the ice cream.

- Heat the dessert sauce in small pot or microwave in small bowl. Stir in orange liqueur, cinnamon, and hot pepper. Fill sundae dishes with 2 scoops of ice cream and top with spicy, warm sauce and whipped cream. Using a vegetable peeler, decorate the sundaes with shavings of dark chocolate.

- For the churro chips: Add 1 to 2 inches vegetable oil to a heavy-bottomed pot. Heat to 350 degrees F.
- Meanwhile, mix together the sugar, cinnamon and salt in a small bowl, then set aside.
- When the oil is ready, add the wonton wrappers in batches, being careful not to overcrowd the pot. Cook until golden and crisp, about a minute. Remove the chips and toss with a good amount of the cinnamon mixture; you don't want to skimp! Repeat with the remaining wonton wrappers and cinnamon mixture.
- For the sundaes: Add a scoop of each of the ice creams to a bowl. Add some chips around the edge, crushing a few over the top for good measure. Top with the whipped cream, cherries, dulce de leche and sprinkles. Repeat with the remaining ingredients to make 3 more sundaes.

- Place orange slices in a large stainless-steel saucepan; cover with cold water. Simmer until skins are tender, about 1 1/4 hours.
- Remove oranges with a slotted spoon; place in a colander to drain. Discard water.
- Combine sugar and vinegar in the same saucepan; stir over low heat. Bring to a boil. Add spices; simmer 10 minutes.
- Add oranges and simmer, covered, for 40 minutes, or until skins are translucent. Cool.
- Layer oranges in sterilized jars, cover with syrup, and seal. The oranges can be used right away, but the flavor will be improved by waiting 4 to 6 weeks.
