HOME-STYLE BEEF 'N NOODLES W/MUSHROOMS AND ONIONS FOR A CROWD
I make this often in the fall and winter! Perfect comfort food! My recipe serves at least 10-12, but you can easily cut it in half, or freeze the leftovers for a rainy (or snowy!) day! If taking to a potluck, you'll want to make a whole batch and bring the recipe! ;) ;) (Sorry about the terrible photo, was taken a long time ago...

- 1. Try to find two 3-4 lb. chuck roasts, and cut the excess slab of fat off the top. Cut into LARGE bite-sized pieces because beef shrinks when it cooks. You want to end up with nice big chunks! :) In large metal roaster that you can use on the stove, lightly brown meat on all sides over medium-high heat in a little oil. You may have to do this in frying pan(s). *Pepper beef lightly to liberally with coarse ground pepper as you add it to the roaster or frying pan. (Should take about 10 minutes.) When beef is lightly browned on the outside, add broth, onion, soup mix, A-1, garlic, horseradish, mustard, butter and a nice amount of salt. Add salt a 1/2 teaspoon at a time so you don't over do it. Bring to a boil, cover with lid, turn down heat and simmer for 1 1/2 hours. Stir occasionally. Add mushrooms, recover, and simmer 15-20 minutes longer. Remove lid. Mix cornstarch and cold water, add, stirring. Simmer, stirring only occasionally, for another 5 minutes til thickened a bit. Fold in cooked, drained noodles. Serve with warm crusty bread and butter, and a side vegetable such as green beans, broccoli or salad. *You can add another 1/2 bag more cooked noodles if you want to stretch this out. I make it hearty, full of lots of meat, though; when it's being considered as a "main dish". If you stretch it out though, you may need to add a cup or so of beef bouillon. Just see what you end up with, add as needed. *If you accidently add too much salt, just add a few more Tbl. butter. **This can be held on low heat for up to at least another hour no problem. Stir/fold now and then. Or put in a heated crockpot on low to hold.

Wish you could smell my kitchen right now, I'm dyin'! Made a huge pot of this for catering tomorrow. It's taking everything I've got not to just dive into the pot! It was EVEN BETTER! *Don't worry, it doesn't taste like you added it, it just added more flavor and totally mellowed out especially after the noodles were added and sat on LOW HEAT for about another hour or so.I took this to my sister's Christmas party and everyone loved it! People even asked for the recipe. :) (I should have thought of it before, because that's how I make my pot roast anyways! :) And NO ONE knows it's in there!) *I used (about)6 1/2 lbs. beef, 2 1/2 bags noodles and added an extra 3 tbsp butter because I thought I had added a bit too much salt. It was really good! Hope ya try it! :).

BEEF WITH ONIONS AND MUSHROOMS
I'm into quick and easy these days and this popped into my head when I was trying to think of something fast for dinner last night. This would be good with green beans or a salad on the side. Note that the 45 minute cooking time is a little deceptive because you can cut the onions and mushrooms while browning the meat.

Steps:
- Heat oil in a heavy skillet cook beef until it is cooked through and well browned.
- Remove beef from skillet and deglaze the pan with 2/3 of the wine, add the bouillon and reduce the sauce.
- Add onions and mushrooms to the sauce and cook until mushrooms and onions are tender.
- Add cooked beef to the onions and mushrooms and add the remaining wine.
- Cook until the wine has reduced add the cooked rice and blend everything together.
- Enjoy!
BEEF AND NOODLES
I was looking for a recipe for beef and noodles that didn't use any sort of condensed soup. I found one at Better Homes & Gardens and made a few changes to come up with this. I use Homemade Noodles (recipe 27344) for the noodles, and they absorb a lot of liquid so this is pretty thick - if you like it thinner, adjust accordingly (I've not tried this with purchased noodles but they may make a difference as well).

- Add oil to a large dutch oven over medium heat.
- Sprinkle the flour over the meat and toss to evenly coat cubes with flour.
- Brown half of the coated meat in hot oil. Remove from pan. Brown the remaining meat and remove. Set aside.
- In the same pan, brown the onion and garlic, adding more oil, if necessary. Drain off any excess fat. Return all meat to the pot.
- Stir in the broth, wine, marjoram, and pepper. Bring to a boil; reduce heat. Simmer, covered, for 1-1/2 to 2 hours or until meat is tender.
- When meat is tender, remove with a slotted spoon and set aside to cool briefly.
- In the meantime, stir noodles into broth. Bring to a boil; reduce heat to low.
- Shred beef and add back to pot with noodles.
- Cook, uncovered, for about 30 minutes or until noodles are tender and mixture is thick. Add additional broth or water if necessary (if noodles are absorbing it all).

- Cook the noodles in boiling salted water for 10 minutes. Strain and put into a greased casserole.
- Slice the mushrooms and the onion and saute in butter until tender. Add to the noodles.
- Mix in most of the cheese, reserving some for sprinkling over the top.
- Beat the egg, and stir into remaining butter the mushrooms were sauteed in, adding a little boiling water to make a sauce. Pour the sauce over the noodles and mushrooms. Sprinkle with cheese and breadcrumbs and dot with small nobs of butter.
- Bake in a 325F over for 20 to 25 minutes.
BEEF CUBES WITH MUSHROOMS, ONIONS AND CHEESE
This recipe takes a basic economical cut of meat like beef cubes (beef stew) and used to create a very nice meal with portabella mushrooms, vidalia onions, swiss cheese and a creamy sauce. May I suggest serving this recipe with fingerling or hasselback baked potatoes and lima beans... enjoy.

- PREPARATION:.
- Using a meat tenderizer tool, pound the beef cubes into flat pieces, set aside.
- Remove the stem from the Portabella mushrooms and cut into ¼ inch slices, then in half, set aside.
- Cut the vidalia onions into large pieces, set aside.
- Cut the Swiss cheese into thin strips, set aside.
- In a cup melt some margarine or butter (microwave briefly to melt), then add the half & half cream, Harvey's Bristol Cream, Worchester Sauce, flour, stir to blend and set aside.
- COOKING INSTRUCTIONS:.
- In a cast iron skillet add 1 tablespoon cooking oil, when hot add the mushrooms and stir-fry for 1 minute, then add 1 tablespoon soy sauce, stir-fry for about 1 minutes, the set aside.
- In a skillet add 1 tablespoon cooking oil, when hot add the onions and stir-fry for about 2 minutes, then add 1 tablespoon soy sauce and continue to stir-fry until the onions are somewhat caramelized (about two minutes), set aside.
- In a skillet add 1 tablespoon cooking oil, when hot add the garlic and stir-fry for 15-30 seconds, then add the beef cubes and stir-fry for 1 minutes, then add the cup of margarine and half & half and continue to stir-fry until the sauce coats the meat (about 2 or so minutes), add some hot sauce to taste.
- Next add back into the skillet the mushrooms and onions and stir-fry for 1 more minute.
- Place the Swiss cheese on top, cover the skillet to melt the cheese (1-2 minutes), remove the cover and sprinkle with basil and arugula leaves.
- Plate with two vegetables of your choice and enjoy!
