- Toss 2 large trimmed bunches broccolini with 2 tablespoons olive oil and a pinch each of salt and pepper on a baking sheet. Spread in a single layer and roast at 475˚ F until charred around the edges, 8 to 10 minutes. Whisk 1 1/2 teaspoons soy sauce, 1 tablespoon agave syrup and 1 teaspoon chili-garlic sauce. Drizzle on the broccolini.

- For the crostini: Preheat the oven to 450 degrees F.
- Brush the baguette slices with the oil and place on a rimmed baking sheet. Season with the salt and bake until golden brown and crispy, 5 to 8 minutes. Remove the crostini to a wire rack to cool.
- For the broccoli: On the same rimmed baking sheet, toss together the broccoli, oil and salt. Spread evenly on the baking sheet and roast, flipping the broccoli halfway through, until browned in spots and crispy, about 15 minutes. Sprinkle with the Parmesan.
- For the topping: Meanwhile, in a medium bowl, whisk together the ricotta, oil and salt.
- To assemble, take a crostini and spread with a small amount of the cheese. Pile on a few pieces of broccoli and sprinkle with the chopped almonds.

- Mix the cream cheese spread, basil and garlic until well blended. Spread it in to about a 7-inch circle on a serving plate, keeping the edges higher than the center.
- In a medium mixing bowl, combine tomatoes, cucumbers, onion, olives and Italian dressing. Spoon this mixture into the center of the cream cheese spread.
- Serve with your bruschetta or with fancy crackers.

SPICY BRUSCHETTA
I had something similar to this at a party and decided I could do it better with a spicy Cajun flair.

- Cut french bread into thin slices (
- Cut tomatoes into thin slices and set aside.
- Keeping separated finely chop shallot, green onion, celery, cilantro, parsley, basil and oregano.
- In a pan, using 2 oz olive oil sauté until soft (3-5 min): shallot, 3 tbls green onion, celery, parsley, basil,1 1/2 tbls cilantro, 1 tbls pressed garlic.
- In a bowl mix together all cheeses (may have to microwave cheese 30 sec), cooled down sautéed ingredients from pan, garlic powder white pepper and cayenne pepper, best if refrigerated a few hours before spreading.
- Put butter remaining olive oil and remaining garlic in a cup and melt down in a microwave.
- Spread sliced bread on large cookie sheet.
- Stir butter and generously brush it on one side of each piece of bread.
- Put bread in broiler until lightly toasted.
- Spread cheese mixture on cooled down bread.
- Place sliced olives (2-3) on each piece.
- Top with 2 or 3 slices of tomato.
- Mix remaining cilantro and green onion and sprinkle over each slice.
- You may have to chop some more cilantro and green onion for this.
- Remember cilantro has a very powerful taste so use sparingly.
- You can serve cold or put in oven at 350 for 5-8 minutes not allowing cheese to run.

- Combine mustard, lemon juice, paprika, cayenne and olive oil.
- Cut off ends of broccoli.
- Cut lengthwise into florets, retaining stems.
- Steam or cook broccoli in simmering water until crisp tender, about 5-6 minutes.
- Drain and remove to serving bowl.
- Add mustard mixture and toss until thoroughly coated.
