Steps:

1 red onion, diced
¾ cup salsa, or as desired
½ cup olive oil

2 tablespoons lemon juice
1 tablespoon red wine vinegar
1 ½ teaspoons ground cumin
1 teaspoon salt

6 cups fresh spinach, cleaned and dry
1/2 cup chopped sun-dried tomato
1 large shallot, chopped
3 tablespoons key lime juice
1 teaspoon key lime zest
6 tablespoons olive oil
1/4 teaspoon cayenne pepper
1 teaspoon salt
3 tablespoons pine nuts, toasted

Steps:

  • Heat in a large skillet, 2 tbls olive oil.
  • Add shallots and cook until translucent.
  • Add spinach (2 cups at a time) until just wilted.
  • Once spinach is wilted add tomatoes, salt, cayenne pepper and black beans.
  • Remove from heat and place in serving bowl.
  • Mix 4 tbs olive oil and 3 tbls of lime juice and zest in a small mixing bowl.
  • Pour on spinach mixture and toss.
  • Sprinkle with pine nuts.
  • Serve at room temperature.

1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon chipotle chile powder

One 4-ounce can diced green chiles
Two 15-ounce cans black beans, rinsed and drained
1 cup vegetable broth
2 tablespoons chopped fresh cilantro
1/4 cup Cotija cheese

Steps:

  • Heat the oil in a large saute pan over medium-high heat. Add the onion and cook until it begins to soften, about 3 minutes. Add the garlic, cumin, salt, chile powder and cayenne and cook until fragrant, about 30 seconds. Add the chiles, beans and broth and bring to a simmer. Cook, stirring occasionally, until the beans have softened and the sauce has thickened, 5 to 7 minutes. Transfer to a serving bowl and sprinkle with cilantro leaves and Cotija.

I could honestly eat this for days in a row...nothing else. It's a great combination of sweet corn and black beans and lots of other tasty things! It's worth the bit of mincing and is a great dish to make ahead of time. This can be served as a salad, but I've always made it as an appetizer dip, served with tortilla chips.

2 (15 ounce) cans black beans, drained and rinsed
1 1/2 cups sweet corn (I use frozen, thawed)
2 fresh jalapeno peppers, seeded and minced
1/2 cup green onion, minced
1/2 cup fresh cilantro, minced
1/4 cup fresh lime juice
1/4 cup canola oil
2 tablespoons brown sugar
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon ground pepper

Steps:

  • In a jar or container with tight-fitting lid, combine lime juice, oil, brown sugar, mustard, salt and pepper. Shake until completely blended.
  • In a separate bowl, combine beans, corn, green onions, jalapeno and cilantro.
  • Pour dressing over bean mixture and toss to coat.
  • Cover and chill for atleast an hour or up to a day. If a day, give it a stir or two.
  • To serve as a salad, arrange with cabbage or lettuce leaves. Add more cilantro to make it pretty on top, if you wish.
  • To serve as an appetizer, I like to eat it with tortilla chips.

2 lbs flank steaks
1 tablespoon dark soy sauce
2 teaspoons dry sherry
1 tablespoon cornstarch
2 tablespoons fermented black beans (also known as salted black bean)
2 garlic cloves, minced
3 tablespoons oil
2 teaspoons minced ginger
2 scallions, minced
1/4 cup beef broth
1 tablespoon oyster sauce
1 teaspoon sugar
2 teaspoons sesame oil

Steps:

  • Cut asparagus on a diagonal into 2" pieces. Cut steak lengthwise into 3" wide strips and cut strips crosswise into 1/4" slices. In a bowl, toss steak with soy sauce, sherry and cornstarch. Rinse black beans to remove excess salt. In a small bowl, mash black beans with garlic and 2 teaspoons oil. In a wok, heat remaining oil over medium heat. Add asparagus and stir fry until tender but still crisp, about 3 minutes. With a slotted spoon, remove to a plate. Return wok to high heat until smoking. Add ginger, scallions, and black bean mixture. Stir fry until aromatic, about 30 seconds. Add beef and cook until browned around the edges but still pink inside, 2-3 minutes.
