Fresh spinach leaves are tossed with toasted almonds and dried cranberries and drizzled with poppy seed dressing. 1/4 cup sugar
2 tablespoons cider vinegar
2 tablespoons white wine vinegar
1 teaspoon dried minced onion
3/4 teaspoon poppy seeds
1/8 teaspoon paprika
1/4 cup canola oil
10 ounces fresh baby spinach (about 12 cups)
3/4 cup dried cranberries
2 green onions, sliced
3/4 cup sliced almonds, toasted

Steps:

  • Whisk together first 6 ingredients; gradually whisk in oil. In a large bowl, toss spinach, cranberries and green onions with dressing; sprinkle with almonds. Serve immediately.

1 package (6 ounces) fresh baby spinach
2 large tart apples, thinly sliced
10 bacon strips, cooked and crumbled
1 cup dried cranberries
3/4 cup slivered almonds, toasted
VINAIGRETTE:
1/4 cup sugar
3 tablespoons cider vinegar
2 teaspoons finely chopped onion
1/4 teaspoon salt
1/3 cup olive oil

Steps:

  • In a large bowl, combine the first five ingredients. In a blender, combine the sugar, vinegar, onion and salt; cover and process until blended. While processing, gradually add oil in a steady stream. Pour over salad; toss to coat.

1/4 cup plus 2 tablespoons sugar
1 tablespoon water
1/2 cup sliced almonds
4 oranges
1/4 cup Champagne or white wine vinegar
1/4 cup extra-virgin olive oil
1/2 teaspoon orange zest
1/4 teaspoon salt, plus more for seasoning salad
1/8 teaspoon cayenne pepper
10 ounces baby spinach (6 cups), washed and dried
1 cup thinly sliced celery
1/2 cup thinly sliced red onions
Freshly ground black pepper
1/4 cup plus 2 tablespoons sugar
1 tablespoon water
1/2 cup sliced almonds
4 oranges
1/4 cup Champagne or white wine vinegar
1/4 cup extra-virgin olive oil
1/2 teaspoon orange zest
1/4 teaspoon salt, plus more for seasoning salad
1/8 teaspoon cayenne pepper
10 ounces baby spinach (6 cups), washed and dried
1 cup thinly sliced celery
1/2 cup thinly sliced red onions
Freshly ground black pepper

Steps:

  • Lightly grease a 10-inch square of aluminum foil with butter or vegetable oil and set aside.
  • Combine 3 tablespoons sugar and 1 tablespoon water in a small saucepan and cook over medium-high heat, swirling occasionally, until the sugar turns a golden amber color, 3 to 4 minutes. Add the almonds and stir to coat. Continue cooking until the almonds are fragrant and golden brown, about 1 minute. Transfer to the prepared aluminum foil, using a spoon to spread into a thin layer, and set aside to cool completely.
  • With a thin, sharp knife, cut the peel and bitter white pith from the oranges, 1 at a time. Working over a bowl to catch the juices, cut in between the membranes to release the segments. Reserve the segments in a separate bowl. Combine 1/4 cup orange juice, the remaining 3 tablespoons sugar, the Champagne vinegar, olive oil, orange zest, 1/4 teaspoon salt, and the cayenne in a mixing bowl and whisk to blend. Transfer the dressing to a plastic container with a tight-fitting lid until you are ready to serve.
  • Put the spinach in a large serving bowl, then top with the orange segments, celery, and red onions. Cover with plastic wrap and refrigerate until ready to serve.
  • When ready to serve, break the caramelized almonds into bite-size pieces and scatter over the top of the salad. Drizzle the dressing over the salad and season with salt and black pepper, to taste. Toss to coat evenly and serve immediately.

My cousin brought this to our family Christmas dinner. It was so good and fresh tasting. A welcome change from all the traditional holiday fare! This sounds really easy. She had red raspberries but I'm sure you could use the black ones! I am guessing on the prep time and cooking time for the dressing.

1 (10 ounce) bag pre-washed Baby Spinach
6 ounces fresh red raspberries
6 ounces fresh blackberries
2 ounces slivered almonds
1 small sweet onion, thinly sliced into rings (optional)
1 pinch fresh ground black pepper (optional)
12 ounces seedless raspberry jam (red)
1/3 cup vegetable oil or 1/3 cup oil, of your choice
4 tablespoons white vinegar
2 -3 tablespoons . sugar

Steps:

  • Place the spinach,berries almonds and onion(if using) in a large bowl and toss.
  • In a saucepan combine the jam,vinegar and sugar. Heat on med.-low heat until jam is melted. Remove from heat and whisk in the oil til well combined.
  • Spoon on the dressing when you are serving.
  • Sprinkle on a little ground pepper if you choose.

Steps:

  • Divide spinach amongst 2 plates. Top each plate with half of the strawberries, blueberries, and raspberries. Sprinkle with goat cheese and sliced almonds, adjusting quantities if needed to your tastes and preferences.

1/3 cup almonds, slivered
4 cups Baby Spinach
3/4 cup strawberry, quartered
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon honey
3 tablespoons extra virgin olive oil
1 ounce soft fresh goat cheese
salt and pepper

Steps:

  • Place the almonds in a dry skillet or saute pan. Cook over low heat, shaking the pan the entire time until the almonds are toasting. The almonds are done when you start to smell a "nutty" scent.
  • Remove almonds from the pan to cool. (Do not cool in the skillet because they will burn from the heat that remains in the pan.)
  • Prepare the dressing by placing the vinegar, mustard, and honey in a mixing bowl. Slowly whisk in the oil.
  • Place the spinach in a large bowl. Add the strawberries, almonds, and dressing. Toss to coat. Top with goat cheese. If desired, season with a pinch of salt and pepper.
  • Serve immediately. 1 1/4 cups per serving.
  • TIPS:.
  • Instead of slicing strawberries for the salad, quarter them. Quartered strawberries are easier to pick up with a fork.
  • When you include caloric, high-flavor ingredients such as nuts or cheese in a salad, spread the flavor around by finely chopping, crumbling, or slicing those ingredients. A little will truly go a long way.
  • Top this or any salad with three ounces of your favorite lean protein to give it some staying power.
