This beautiful healthy sweet potato bread recipe is another addition to my list of bread recipes with vegetable extracts in it. Healthy sweet potato bread combines the health benefits of whole wheat and sweet potatoes in it.

300 gm Whole Wheat Flour
100 gm All Purpose Flour
150 gm Sweet Potato (Boiled and Mashed)
1 tsp Active Dry Yeast (Prime)
1 tsp Organic Brown Sugar
1.5 tsp Salt
1 tbs Oil
290 ml Water

Steps:

  • In a bowl add lukewarm water. Add sugar and yeast. Stir it and let it rest until it froth.
  • In another bowl take flours, salt and sweet potatoes. Add yeast solution.
  • Start kneading the dough by adding water and prepare a soft dough.
  • Take the dough on counter. Add oil and knead it for 5 min.
  • After 5 min of kneading dough will become soft and smooth. Now place the dough in greased bowl and cover it with cling wrap.
  • Place the bowl at a dry and warm place. Let it rest until dough becomes double.
  • When dough becomes double, punch it to release the air.
  • Using a rolling pin, roll it into a rectangular sheet and shape it like a loaf.
  • Place the shaped loaf in a greased loaf tin facing seam side down.
  • Cover it with cling wrap and let it rest until it again becomes double in volume.
  • Preheat the oven at 200 °C for 10 min.
  • Brush the dough with water and bake in preheated oven for 35 min.
  • When baked, take the bread out from oven. Demould it and place it on cooling rack.
  • Let the bread rest for minimum 2 hrs before you slice.

1/2 cup coconut sugar (, or other fine sugar, add 2 tbsp more for sweeter)
1 tsp cinnamon
1 tsp pumpkin pie spice
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 cup fresh cranberries or mixed berries
3/4 scant cup sweet potato puree ((I use canned puree), or use well mashed boiled or steamed sweet potato)
3/4 cup non dairy milk
1 tsp lime juice or apple cider vinegar
3 tbsp oil or omit

Steps:

  • Preheat your oven to 365F (185°C). Line a loaf pan with baking paper and set aside.
  • Whisk 1.5 cups flour with the dry ingredients in a large mixing bowl. Add berries and mix.
  • Mix vinegar into the non-dairy milk. then add it to the dry ingredients. Add sweet potato puree and oil and mix well to combine into a smooth batter. If the batter is too thin then add more flour a few tbsp at a time. (If you are baking muffins, you can keep the batter less stiff. For loafs or larger volume baking, you want the batter to be thicker, stiff with a more dry to moist ratio ad the sweet potato puree will leak moisture during baking.)**
  • Spoon the sweet potato bread dough into your prepared loaf pan. (Add a streusel if you like. )
  • Bake at 365 deg F (185 C) for 55 to 60 mins. (25 mins for muffins). Check with a toothpick from the center. Cool for 10 mins then remove from pan and cool completely before slicing. Store on the counter for the day and refrigerated for upto a 5 days.

1 teaspoon baking soda
¾ teaspoon ground cinnamon

2 eggs
¼ cup maple syrup
⅓ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
  • Place sweet potato on a microwave-safe plate and pierce skin 5 or 6 times. Cook in the microwave, rotating halfway through, until tender, 5 to 8 minutes. Cool until easily handled, about 5 minutes. Peel and mash in a small bowl.
  • Mix whole wheat flour, baking soda, cinnamon, nutmeg, and salt together in a large bowl.
  • Whisk applesauce, eggs, and maple syrup together in a separate bowl. Mix in 1 cup mashed sweet potato.

3 medium sweet potatoes (or whatever equals (I had a big and a medium))
2 eggs
1 teaspoon vanilla extract
1/2 cup extra virgin olive oil
11 oz whole wheat flour (320 gr)
5,3 oz brown sugar (150 gr)
5,3 oz heavy cream (150 gr - I used a vegan version: coconut cream)
2 teaspoons baking soda
3 teaspoons mixed winter spices (allspice, ginger, cinnamon)
1 extra teaspoon cinnamon

Steps:

  • Preheat the oven to 180°C/350°F.
  • Wrap the sweet potatoes in foil and bake them for 40-60 minutes, depending on their size: wait until they're fork-tender.
  • Mix the dry (flour, sugar, spices, baking soda) and the wet ingredients (eggs, vanilla extract, olive oil) in two different bowls.
  • When the potatoes are ready, peel them, mash them with a fork or a masher and add them to the wet ingredients.
  • Mix all the ingredients using a wooden spoon. Notice that it will not be a cake texture dough, nor a bread one. It will be right in the middle.
  • Place the mixture into a plum cake pan lined with baking paper.
  • Set the oven to 160°C/320°F and bake the bread for 40-45 minutes.

This is a true sandwich bread - soft and fluffy. No bricks here. For the potatoes, you can use leftover mashed potatoes or just cook a couple and mash with a fork. I like to make enough potatoes to last for a whole week of breadmaking. If you have it, use your leftover potato water in place of the regular water. You can bake this in the oven, just follow any standard bread-making procedure. I sometimes substitute 1/2 cup ground oatmeal or ground 7-grain flakes for 1/2 cup of the wheat flour. If you are grinding your own wheat, grind it coarsely for a less dense loaf.

No-Knead Whole Wheat Sweet Potato Bread image

6 cups/840 grams white whole wheat flour
1 tablespoon/12.5 grams sugar
1 tablespoon/18 grams fine sea salt
2 teaspoons/6 grams instant yeast
2 large sweet potatoes, roasted, skinned, and diced
1 1/2 cups/375 grams apple cider
1 1/2 cups/338 grams water
Unsalted butter or nonstick cooking spray for the pan

Steps:

  • In a large bowl, combine the flour, sugar, salt, and yeast. Whisk to thoroughly combine. Add the sweet potatoes and toss gently with a rubber spatula to incorporate. Add the cider and water and continue to fold the mixture gently until all of the flour is absorbed and the mixture forms a wet dough. Cover the bowl with plastic wrap and let rise for 3 to 4 hours. The dough will rise to approximately one and a half times its initial volume.
  • Using a rubber spatula, gently loosen the dough from the bowl. Dampen your hands with cool water and, with the dough still in the bowl, slide one hand under one side of the dough. Fold that side of the dough into the center and press down gently so the dough adheres to itself. Give the bowl a quarter turn and repeat the folding process. Do this two more times.   • Repeat the folding procedure. Gently turn the dough out onto a damp counter top. Grease the inside of your pan with soft butter or nonstick spray and place the dough inside, gently stretching it to fit the inside of the pan. Cover it with plastic wrap and let it rest for 30 minutes.
  • While the dough is resting, preheat the oven to 400°F (200°C) or 375°F (190°C) with convection.
  • Remove the plastic wrap from the bread and put the pan in the oven. Bake for 20 minutes and then, without opening the oven door, turn the temperature down to 350°F (175°C) or 325°F (160°C) with convection. Bake for 45 minutes more. If the top of the bread starts to get too dark, tent the loaf with foil. The bread is done when the top feels firm to the touch and you hear a hollow sound when knocking gently on the bottom of the pan.
  • Remove the bread from the oven. Let it rest for 5 minutes in the pan, then turn it out of the pan and let cool completely on a rack.

This makes great rolls and scones!!! I lost this recipe for over a year and could not find one that was as light. Now that it is on the web I won't ever loose it again!! It was a bread recipe from the back of a wheat bag but I use it for rolls. Can grease 2 1/2 size cans and use as pans. Fill cans 1/2 full.

Number Of Ingredients 9

8 cups whole wheat flour
1 tablespoon salt
4 tablespoons honey
4 tablespoons oil
2 tablespoons yeast, disolved in
1/2 cup warm water
1 medium potato, cooked until mealy in 2 c water OR
1/2 cup instant potato flakes, in 2 c water
1 3/4 warm water, added to potato water. (Instant or cooked potato)

Steps:

  • Mash or beat potatoes and water until smooth.
  • Cool.
  • Add 1 3/4 cup water to potato mixture.
  • Add yeast, oil, salt and honey.
  • Pour this mixture slowly into flour.
  • Mix 5 to 7 min with electric mixer. Dough will be soft.
  • Let rest 10 to 15 minute on greased surface.
  • Punch down and shape into loaves or rolls.
  • Let rise until double.
  • Bake rolls 20 to 30 minutes at 400.
  • Bake loaves of bread 35 to 45 minute.
