I came up with this by combining other recipes. We keep a small slow cooker in our camper and I often make this when we go camping. I just throw everything together before we go to sleep and it's ready for us in the morning.

16 ounces hash browns, frozen
1/2 lb bacon, cooked and crumbled
1/2 medium onion, diced
1/2 medium bell pepper, diced
3/4 cup cheddar cheese, shredded
6 eggs
1/2 cup milk
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Place a layer of frozen hash browns on the bottom of the crock pot, followed by a layer of bacon, then onions, bell pepper and cheese.
  • Repeat the layering process two more times, ending with a layer of cheese.
  • Beat the eggs, milk, salt and pepper together.
  • Pour over the crock pot mixture.
  • Cover and cook on low 8-10 hours. Note based on harsh review: If you know your slow cooker runs hot, reduce the time accordingly. I have made this many times at the stated time with great results - best between 8-9 hours, well done at 10, but not burnt.

2 tablespoons vegetable oil
1 lb turkey sausage
4 tablespoons chopped green onions
6 cups cubed French bread
2 cups shredded mild cheddar cheese
2 2/3 cups skim milk
1 1/4 cups Egg Beaters egg substitute or 5 beaten eggs
2 teaspoons prepared mustard
1 teaspoon ground black pepper

Steps:

  • I use my rival 6 quart slow cooker for this recipe.
  • I prepare it the night before and place liner in the refrigerator until morning.
  • Let liner warm up a little before cooking.
  • Add oil to skillet and brown sausage and green onions until no longer pink.
  • Drain off excess fat.
  • Spray liner of slow cooker with vegetable spray and add cubed French bread.
  • Next add a layer of sausage and then cheese.
  • In a medium mixing bowl, combine milk, Egg Beaters, prepared mustard and pepper.
  • Pour this over ingredients into slow cooker.
  • Cook on High for 3 to 4 hours.

32 ounces o'brien frozen potatoes
1 lb ham, diced
4 cups cheddar cheese (or cheese blend)
1 dozen egg
1 cup milk
salt
pepper
nonstick cooking spray

Steps:

  • Spray Crock Pot with the No Stick spray.
  • Layer Potatoes, ham, and cheese (make about 3 layers of each, ending with a layer of cheese.).
  • In a mixing bowl, beat together the eggs, milk and salt and pepper.
  • Pour mixture over layers. Cover.
  • Cook on low about 10 hours.

  • Layer the ingredients in your crock pot in this order-.
  • 1/2 of the potatoes- on the bottom.
  • 1/2 of the bacon.
  • 1/2 of the onions.
  • 1/2 of the cheese.
