EPIC BEEF NACHOS SUPREME
You need to make this epic beef nachos supreme at your next game day. Seasoned ground beef, refried beans, cheese, tomatoes and green onions make such a great flavor combination.

Steps:
- Preheat the oven at 400 degrees.
- Meanwhile on the stovetop, brown the ground beef and diced onions over medium-high heat until fully cooked (about 8 minutes) and drain.
- Return the beef to the pan, and sprinkle on the taco seasoning.
- Stir in 3/4 cup water, bring it to a simmer, reduce heat and simmer until the liquid mostly evaporates, about 5 minutes.
- While the beef is cooking, add a generous layer of chips to two baking sheets lined with parchment paper.
- Spoon on refried beans, half on each pan. These are thick, but I just add spoon fulls all over the chips. (The spoon fulls will spread with the heat of the oven.)
- Spoon on half the ground beef to each pan of chips.
- Sprinkle shredded cheese on top.
- Bake at 400 degrees for 15 minutes.
- Remove from the oven, and sprinkle on diced tomatoes and green onions.
- Serve immediately.

This easy Nachos Supreme dinner is the perfect family meal to add all of your favorite toppings to for truly epic nachos supreme that are so much better than any from Taco Bell! No one complains when I'm dishing up their servings of this ultimate baked beef nachos recipe!

- Preheat your oven to 425 degrees F (218 degrees C) and line a large rimmed baking sheet with aluminum foil for easy cleanup if desired.
- In a large skillet or non-stick frying pan heat the olive oil to medium-high temperature. Once shimmering and just beginning to smoke, add the diced white onion and saute for 2-3 minutes. The onion should get fragrant, tender, and become transparent. Add 1 tablespoon of minced garlic and saute with the onion for 30 seconds to 1 minute.
- Add the 1 pound of ground beef, break apart, and brown until almost completely browned or about 5-6 minutes. Add the taco seasoning and stir into the ground beef. Add the water as instructed on your packet (or use 1/4 cup of water with my homemade taco seasoning mix). Combine the refried beans with the ground beef and taco seasoning. Cook until the beans are heated.
- Spread the tortilla chips as your base, then top with 1 cup of nacho cheese sauce (heat in the microwave before pouring over the chips), beef and beans mixture, and 2 cups shredded Mexican cheese blend.
- Bake at 425 degrees F (218 degrees C) for 15 minutes or until the cheese is completely melted and slightly browned.
- Remove from the oven and add your favorite toppings then serve immediately.

- In a large skillet over medium heat, add ground beef and season with salt and freshly ground black pepper. Break down the meat while cooking until half way done. Add red onions and sauté until soft and translucent, about 4 minutes. Transfer to a colander to drain then return meat mixture back to skillet.
- Add chipotle purée, garlic, green chilies, taco seasoning and oregano. Stir ingredients very well before removing from the heat. Preheat oven to 400ºF.
- To assemble the nachos, cover bottom of a deep dish pizza pan with tortilla chips. Spoon half beef mixture on top followed with ¼ cup red peppers, half can sliced black olives and sprinkle 1 cup each of Monterey Jack and Cheddar cheese. Repeat with the second layer starting with tortilla chips, remaining beef mixture, remaining ¼ cup red peppers and the rest of black olives. Add about 15 pickled jalapeño peppers and cover with the remaining 2 cups of cheeses. Add more jalapeño pepper (about 15 more).
- Transfer dish to preheated oven and bake for 7 minutes or until cheeses are melted and ingredients are heated through. Remove from the heat and garnish with diced tomato and sliced green onions. Serve with salsa, guacamole, refried beans and sour cream. Serve 4 to 6.
