Spicy Beef and Broccoli Chow Mein image

I just mixed familiar Asian flavors together to make this oh-so-simple dish. Sometimes simplicity makes the best dishes. This is fast dinner to whip up any night to break the normal dish routine.

¼ cup soy sauce
2 tablespoons oyster sauce
2 tablespoons hoisin sauce
1 tablespoon red wine vinegar
1 tablespoon sesame oil
1 tablespoon garlic powder
1 tablespoon honey
2 teaspoons chile sauce
1 teaspoon freshly ground black pepper
½ pound thinly-cut flat iron steaks
1 cup broccoli florets
6 ounces dried chow mein noodles
1 tablespoon olive oil, or more as needed
¼ white onion, chopped
4 cloves garlic, minced, or more to taste

Steps:

  • Whisk soy sauce, oyster sauce, hoisin sauce, red wine vinegar, sesame oil, garlic powder, honey, chile sauce, and black pepper together in a bowl until marinade is smooth. Brush marinade onto steak strips and broccoli, reserving some for the noodles. Refrigerate for 4 hours to overnight.
  • Bring a large pot of lightly salted water to a boil. Cook chow mein noodles in the boiling water, stirring occasionally until tender yet firm to the bite, about 3 minutes. Drain.
  • Heat oil in a wok or deep skillet over medium heat; cook and stir onion for 3 minutes. Add garlic and beef-broccoli mixture; cook and stir until beef is cooked through, 1 to 2 minutes. Add noodles and reserved marinade; toss using tongs and cook until heated through, 1 to 2 minutes.

2 ounces beef sirloin or 2 ounces rump roast, trimmed of all fat and sliced thin
1 dash salt
1 dash pepper
1/2 teaspoon minced garlic
2 1/2 teaspoons sugar
1 teaspoon sesame oil
1/4 teaspoon black pepper
1 teaspoon chopped garlic
4 teaspoons fish sauce or 4 teaspoons soy sauce
1 cup broccoli floret
1/4 cup thinly sliced carrot
2 small mushrooms, thinly sliced
1/4 cup thinly sliced bamboo shoot
4 -5 snow peas, sliced
1/4 cup sliced celery
1/2 cup thinly sliced onion
1 cup napa cabbage
2 -3 teaspoons oyster sauce
2 cups hot cooked rice

Steps:

  • Place sliced beef in a small bowl.
  • Add dash of salt, dash of pepper and 1/2 tsp minced garlic.
  • Refrigerate for 2 hours.
  • In a small bowl, combine next 5 ingredients.
  • Set aside.
  • Heat skillet or wok over high heat.
  • Stir-fry beef until cooked throughout.
  • Add next 6 ingredients.
  • Stir and shake pan constantly for 2-3 minutes more until vegetables just start to become aromatic.
  • Blend in fish sauce mixture.
  • Add onion, cabbage and oyster sauce.
  • Continue to stir-fry approximately 1 minute or until crisp tender.
  • Serve over hot rice.

2 (3 ounce) packages beef-flavor ramen noodles
1 1/2 lbs beef (any lean cut)
4 scallions (if your garlic or onion grew a green top in storage use this)
1 cup slivered onion
5 garlic cloves, minced
6 tablespoons fresh parsley, coarsely chopped incl. minced stems
1 cup chopped celery
2 tablespoons sesame seeds
1 teaspoon red pepper flakes
1 1/2 teaspoons ground ginger or 1 tablespoon minced fresh ginger
1 -2 tablespoon honey or 1 -2 tablespoon sugar
1 -2 tablespoon sesame oil (optional) or 1 -2 tablespoon vegetable oil (optional)
2 teaspoons rice vinegar (optional) or 2 teaspoons white vinegar (optional)
2 teaspoons lime juice or 2 lime wedges

Steps:

  • Cut beef into 1/2 inch pieces.
  • Mince garlic and parsley stems (and ginger if fresh), coarsely chop parsley leaves, chop celery, scallions and finely slice onion (1 medium/small).
  • Drop ramen noddles into boiling water, remove from heat, allow to cool a few minutes then drain. Noodles will not be fully cooked yet.
  • Heat frying pan or wok to med high, add 1/2 cup water, seasoning packets, and onion. Cook a couple minutes.
  • Add beef pieces, toss so each side is browned.
  • Add all other vegetables/flavorings. Add ramen noodles, toss, heat through a couple minutes. Serve in two bowls and top with lime juice.
  • My DH who does not in general like Asian food and is more meat-and-potatoes complimented me on this. I whipped it up late at night for a flavorful, nutritious meal that was not fast food.

3/4 pound round/rump steak
1 tablespoon soy sauce
1 teaspoon salt
1 tablespoon sugar
8 fresh mushrooms
1/2 pound bean sprouts
6 ounces canned bamboo shoots
3 green onions (scallions)
1 egg
2 cups beef stock
2 tablespoons cornstarch
1 teaspoon sesame oil
2 cups dried egg noodles
deep frying oil

Steps:

  • Slice beef about 1 inch long 1/2 inch wide and as thin as possible. Mix the salt, sugar and soy sauce together and mix well, then add the beef and marinate for at least one hour, longer for more flavor. Wash and slice the mushrooms, including stems. Slice the bamboo into thin strips; slice the scallions into 1 inch pieces; soak, rinse and drain the bean sprouts. In a separate bowl, mix the cornstarch and beef stock together. Drain the beef, reserving the marinade. Heat the sesame oil and stir fry the beef for 4 to 5 minutes. Add the cornstarch mixture and remaining marinade, bring to a boil stirring constantly; add the vegetables and simmer for 5 minutes longer. Cook noodles in boiling water for 4 to 5 minutes; drain thoroughly. Deep fry as needed draining on absorbent paper. Beat the egg adding 1 tablespoon water and pour onto lightly oiled skillet. Make a small thin omelet and slice into thin strips. Place cooked noodles on hot dish, top with beef mixture and garnish with the strips of omelet.

450g/1lb rump steak, cut into thin strips
1 tbsp cornflour
2 tbsp dark soy sauce
2 tbsp oyster sauce
4 tbsp beef stock
2 tbsp brown sugar
1 tsp sesame oil
½ tsp freshly ground black pepper, or to taste
1 tbsp vegetable oil
4 garlic cloves, crushed
5cm/2in piece fresh ginger, peeled and cut into thin strips
2 carrots, peeled and julienned
200g/7oz mangetout
450g/1lb cooked egg noodles
200g/7oz beansprouts
2 tbsp sesame oil
8 spring onions, peeled and chopped

Steps:

  • For the marinade, mix the cornflour and soy sauce, whisking with a fork until smooth. Stir in the oyster sauce, beef stock, brown sugar and sesame oil. Add black pepper to taste and whisk well. Add the beef and leave to marinate for at least 2 hours or ideally overnight.
  • To make the chow mein, heat the oil in a large wok until very hot; lift the beef out of the marinade (reserving the marinade) and brown in the wok, then transfer to a plate.
  • Add the garlic and ginger to the wok and stir-fry for 1 minute. Add the carrots and mangetout and stir-fry for 3 minutes.
  • Add the cooked noodles and beansprouts and return the beef to the wok, then pour over the reserved marinade. Stir well to coat the noodles with the sauce. Serve immediately, with the spring onions sprinkled on top.
