CRISPY SALT AND PEPPER POTATOES
These crispy potatoes are like little starch balloons that pop when you bite into them. The secret: They're tossed in egg whites before cooking.

Steps:
- Preheat oven to 400°F and line a rimmed baking sheet with parchment. In a large bowl, whisk the egg whites until foamy (there shouldn't be any liquid whites in the bowl). Add the potatoes and toss until they're well coated with the egg whites, then transfer to a strainer or colander and let the excess whites drain. Season the potatoes with the salt, pepper, and herbs. Scatter the potatoes on the baking sheet (make sure they're not touching) and roast until the potatoes are very crispy and tender when poked with a knife, about 20 minutes (depending on the size of the potatoes).
- Transfer to a bowl and serve.
SPICY POTATOES WITH GARLIC AIOLI

- Preheat oven to 375°. Place potatoes in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 8-10 minutes or until just tender. Drain; pat dry with paper towels. Transfer potatoes to a mixing bowl. Toss potatoes in oil and minced garlic to coat evenly. , Combine the paprika, garlic powder, chili powder, cumin, salt, pepper flakes and pepper; sprinkle over potatoes. Gently toss to coat. Transfer potatoes to 2 greased 15x10x1-in. baking pans, spreading into a single layer. Bake until crispy, about 25 minutes, stirring potatoes and rotating pans halfway through cooking., For aioli, combine ingredients until blended. Transfer potatoes to a serving platter; sprinkle with chives. Serve warm with aioli.

- Preheat the oven to 450 degrees F (220 degrees C).
- Arrange the potatoes and onions in a greased 9x13 inch baking dish so that they are evenly distributed. Season with garlic powder, salt and chili powder. Drizzle with olive oil. Stir to coat potatoes and onions with oil and spices.
- Bake for 35 to 40 minutes in the preheated oven, until potatoes are fork tender and slightly crispy. Stir every 10 minutes. When done, sprinkle with cheese. Wait about 5 minutes for the cheese to melt before serving.

Steps:
- Preheat oven to 350°F.
- In large bowl, combine all ingredients except breadcrumbs, butter and french fried onions; mix well.
- Spread into ungreased 2-quart casserole dish.
- Toss bread crumbs with butter; sprinkle over casserole.
- Bake at 350°F for 30-45 minutes or until bread crumbs are golden and mixture is bubbly.

- Chop up all ingredients and set aside.
- Pre heat non-stick skillet on med/high heat, lightly oil. When nice and hot add onion, saute until soft.
- Then add additional peppers, saute and Salt veggies.
- Add potatoes and mix with all the peppers. Lightly salt the potatoes as well. Lower heat to a med/low setting. Stir occasionally making sure not to over stir as the potatoes will become mushy as they begin to cook through.
- All the ingredients should melt together giving your potatoes an awesome flavor. When potatoes are cooked through and you're about ready to serve, taste for seasoning and add course pepper with any added salt if desired.
- Turn up heat and add additional oil if pan seems dry. This should result in a nice golden texture. Enjoy!
