STRIP STEAK WITH SPICED SALT

Strip Steak With Spiced Salt image

Provided by Food Network Kitchen

Categories     main-dish

Time 1h20m

Yield 4 to 6 servings

Number Of Ingredients 10

Flaky sea salt or kosher salt
1 tablespoon coriander seeds
1 tablespoon black peppercorns
2 teaspoons paprika
2 teaspoons red pepper flakes
1 teaspoon dill seeds
1 clove garlic, minced
4 boneless New York strip steaks (12 to 14 ounces each)
Extra-virgin olive oil, for brushing
1 pound small tomatoes

Steps:

  • Preheat the oven to 250 degrees F. Line a baking sheet with foil. Spread 2 tablespoons salt, the coriander seeds, peppercorns, paprika, red pepper flakes, dill seeds and minced garlic in an even layer on the baking sheet and roast until the garlic is dry, about 30 minutes; let cool. Transfer to a spice grinder and pulse several times. (The spiced salt can be made up to 1 week ahead; store in an airtight container.)
  • Remove the steaks from the refrigerator about 1 hour before grilling to bring to room temperature; sprinkle each side with 1/2 teaspoon of the prepared spiced salt, then cover with plastic wrap and set aside.
  • Preheat a grill to high and prepare for indirect grilling: On a charcoal grill, bank the coals to one side; on a gas grill, turn off half of the burners. Wipe the salt off the steaks and pat dry; brush lightly with olive oil. Grill over direct heat until marked on the bottom, about 2 minutes, then rotate 90 degrees F and cook 2 more minutes. Flip the steaks and repeat on the other side, then transfer to the cooler side of the grill (indirect heat); cook 5 more minutes per side for medium rare. Transfer to a cutting board and let rest 5 to 10 minutes.
  • Meanwhile, grill the tomatoes over direct heat, turning, until marked, about 5 minutes. Serve with the steaks and the remaining spiced salt.

SIX-SPICE HANGER STEAK

Six-Spice Hanger Steak image

During a research trip to Hong Kong, food editor Ian Knauer discovered that every family has its own recipe for five-spice powder, a pivotal ingredient in so many Chinese dishes. He took things a step further by adding black peppercorns to the aromatic mix, which holds its own against the robust flavor of hanger steak. As for side dishes, this would be delicious with steamed rice and stir-fried bok choy, but your menu doesn't have to be Asian-try it with a brightly dressed green salad and roasted potatoes.

SPICY HAM SLICE/STEAK

Spicy Ham Slice/Steak image

I'm not a big ham fan but I just LOVE this dish. Easy to do, very forgiving - you can substitute different kinds of juice or soda. Ham steaks freeze well and thaw fast so it's good for a week night. Fairly economical if you get the ham on sale. I love to have it with orange rice where I substitute about a half a cup of OJ for water with plain old white or even brown rice, and a nice green salad. Enjoy!

Provided by shb1964

Categories     Ham

Time 1h

Yield 2-3 serving(s)

Number Of Ingredients 9

1 slice ham steak
1/2 cup orange juice (apricot or pineapple work well, too, so does Tang!)
1/2 cup ginger ale (or Sprite, 7-Up or a cola drink)
1/2 cup packed brown sugar (I usually use light)
1 teaspoon dry mustard
1 teaspoon red wine vinegar
1 tablespoon oil
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger

Steps:

  • Prick ham slice with a fork all over to make holes and slash the edges so it won't curl during baking.
  • Place in baking dish just big enough to hold slice.
  • Mix all other ingredients together well and pour over ham.
  • Marinate at least 30 minutes but can be longer (some times I do it in a baggie overnight).
  • Put in 350* oven, bake for about 30 minutes. Mmmm!

  • Drizzle a little of the Pompeian olive oil over the top. Not a lot. do not saturate it. Just a light drizzle to allow a very light covering over the surface.
  • Then dash the surface with all of the seasonings. I do each seasoning one at a time. Making sure each one had a good dusting across the surface.
  • Note: if you want less spicy, cut back on the amount of Cheyenne pepper you add. That is the only difference between the perfect spicy steak recipe and the perfect family steak recipe that even kids will eat.

TOP 7 STEAK RUB RECIPES - THE SPRUCE EATS

From thespruceeats.com
  • Herbes de Provence Steak Rub. This herbes de Provence steak rub is fantastic. If you don't have any on hand, simply use dried thyme, marjoram, rosemary, oregano, or sage, either alone or in some combination to your liking.
  • Cumin Steak Rub. If you watch a lot of cooking shows, you might think that cumin has become an overused spice. While it's certainly popular, there's a good reason: cumin adds a spicy flavor and a nice crusty surface to a steak with this cumin steak rub.
  • Tomahawk Steak Rub. A tomahawk steak, also referred to as a cowboy steak, is a very large (30 to 45 ounces) bone-in ribeye. This cut is for the serious steak lover, and this tomahawk steak rub recipe will make the experience even better.
  • Dry Chimichurri Steak Rub. Chimichurri is, of course, a sauce, but this dry chimichurri steak rub takes those flavors and puts them quickly and easily right onto your steak.
  • Montreal Steak Seasoning. How Montreal became the king of spice blends is anyone's guess, but spice maker McCormick has been selling these blends for years.
  • Spicy Tomahawk Steak Rub. This is a delicious, spicy tomahawk steak rub. While this rub is for larger steaks, this rub is perfect for any cut of beef. The small amount of brown sugar brings a touch of sweetness and helps to caramelize the surface of the meat under intense heat.
  • Simple Steak Seasoning. If you want a simple steak seasoning, then look no further than a combination of sea salt flakes, pepper, onion powder, and garlic powder.

HOW TO SEASON A STEAK: 12 STEPS (WITH PICTURES) - WIKIHOW
2. Season your steak with about ¾ - 1 teaspoon of salt per pound, applying on both sides. Since you obviously cannot "salt to taste," it's sometimes hard to know how much salt is enough. Many chefs recommend this benchmark as a good guide for pre-seasoning meat. Salt your steak at least 40 minutes before you cook it.
