SPICY CORN CAKES

Spicy Corn Cakes image

Tod Man Khao Pod is a variation on the popular tod man plaa, or 'fish cakes' which are so common here in Thailand. This version uses corn kernels instead of fish, and is quite easy to make. Serve it with Slightly Pickled Cucumber Salad.

Number Of Ingredients 7

1 cup sweet corn kernels
1 tablespoon red :curry paste:
1/4 cup flour (japanese tempura flour or wheat flour)
1 egg
1/2 teaspoon white sugar
2 lime leaves, sliced very thin, then chopped
about 1/2″ of oil in the pan, for frying

Steps:

  • Remove the kernels of corn from the cob. The best way to do it is to remove by hand, peeling in a downward motion, one at a time. This preserves the whole kernel, and leaves them juicy and flavorful when you bite into them. If you're lazy, you can use a knife and slice them off. Or even lazier, just get frozen corn. Whole kernels do taste better, however, and don't explode when you fry them. In a bowl, add the corn, flour, egg, curry paste, sugar and lime leaves. Mix well. Drop by rounded spoonful (and smush a bit once in the pan to flatten) into hot oil. Cook on medium-high heat until golden brown, flipping once. It should take about one minute per side. Serve with Slightly Pickled Cucumber Salad.

SWEET CORN CAKES

Sweet Corn Cakes image

This is a recipe I found in a Taste of Thai Cookbooklet I got in the mail from the Taste of Thai company...it is a good twist on regular southern corn cakes and I love them. Don't let the long ingredient list turn you away. This is quickly put together and inexpensive, and the dipping sauce is of course optional.

Categories     Corn

Time 20m

Yield 6 serving(s)

Number Of Ingredients 16

2 cups fresh corn or 2 cups frozen corn (if using frozen corn, make sure to drain it well to avoid soggy cakes)
2 cups all-purpose flour
2 1/4 teaspoons baking powder
3 teaspoons minced red chili peppers
1 large egg
2 tablespoons brown sugar
1 scallions or 1 green onion, minced (I use 2 'cause I like green onions)
1/4 cup chopped cilantro (you can use parsley if you can't find fresh cilantro)
2 tablespoons fish sauce (simply seasoning sauce or Nam Pla)
oil (for cooking, as needed)
1/4 cup malt vinegar
2 tablespoons chopped cilantro
2 teaspoons minced red chili peppers
2 tablespoons soy sauce
1 tablespoon brown sugar
2 tablespoons fish sauce (seasoning sauce)

Steps:

  • In a large bowl, combine the corn, flour, and baking powder; mix with mixer on medium speed until flour begins to bind with the corn.
  • Add the minced red peppers, sugar, scallion, cilantro, seasoning sauce and egg.
  • Continue mixing until mixture becomes thick and spreadable (you want mixture to spread slightly when it is dropped in the oil).
  • In a nonstick skillet, heat about one tablespoon of oil.
  • Drop large spoonfuls of batter into skillet and let spread; brown cake on both sides, approximately 3 minutes per side.
  • Continue doing this until batter is gone, adding oil as needed.
  • Serve with Spicy Malt Seasoning Sauce.
  • SPICY MALT SEASONING SAUCE FOR DIPPING:.

THAI CORN CAKES

Thai Corn Cakes image

Received in email from Gourmet_recipes_from_around_the _world. the email notes it was adapted from Very Simple Food. Very pretty with either fresh cut or sweet kernel canned corn - frozen doesn't work as well because the kernels skins get tough when frozen. The sweet chili sauce makes the meal - get it; it's cheap & addictive.

Whizz for a few seconds then start adding the oil – drip in one tiny drop at a time until the yolks have absorbed about a third of the oil and the mayonnaise has started to emulsify. Add the oil any quicker and the mayonnaise might split.
