SPICY CORN CAKES
Tod Man Khao Pod is a variation on the popular tod man plaa, or 'fish cakes' which are so common here in Thailand. This version uses corn kernels instead of fish, and is quite easy to make. Serve it with Slightly Pickled Cucumber Salad.

Steps:
- Remove the kernels of corn from the cob. The best way to do it is to remove by hand, peeling in a downward motion, one at a time. This preserves the whole kernel, and leaves them juicy and flavorful when you bite into them. If you're lazy, you can use a knife and slice them off. Or even lazier, just get frozen corn. Whole kernels do taste better, however, and don't explode when you fry them. In a bowl, add the corn, flour, egg, curry paste, sugar and lime leaves. Mix well. Drop by rounded spoonful (and smush a bit once in the pan to flatten) into hot oil. Cook on medium-high heat until golden brown, flipping once. It should take about one minute per side. Serve with Slightly Pickled Cucumber Salad.

- Combine all ingredients except for the oil, mixing well.
- Set aside for about 10 minutes to allow the baking powder to become activated Heat oil in large pan or flat-bottomed wok over medium to high heat.
- Drop large teaspoonfuls of corn mixture into the oil.
- Allow to fry about 3 minutes each, until golden, turning once or twice.
- Remove corn cakes from oil and place on paper or cloth towel to wick excess oil away.
- Arrange on plate and serve.

Steps:
- Cut the fish into chunks, put in your food processor with the rest of the ingredients, except the oil, and blend using the on/off technique until you have a minced texture but not a paste.
- Remove from the food-processor bowl to another dish.
- Take approx a dessert spoon full of the fish mix, with wet hands form into balls then flatten them with the palm of your hand into cakes.
- Leave them in the fridge, covered, to firm up for an hour or more.
- When ready to cook, heat up the oil and fry the little cakes about 1 minute on each side.
- Drain on paper kitchen towel.

- Combine the corn, eggs, flour and cream in a food processor and blend until the corn is finely chopped and appears creamy, scraping down the sides as needed. Remove to a bowl. Add the shrimp, celery, onions, cilantro, garlic, salt and pepper and mix well.
- Heat the butter and oil in a large skillet.
- For each cake, add a heaping tablespoon of the corn mixture to the skillet. Keep the cakes separated and press to flatten slightly.
- Cook over medium heat until golden brown on the bottom, then turn and cook the other side until golden, about 3 minutes total.
- Continue until all the cakes are cooked, placing them on a platter and keeping them warm. Serve as an appetizer or side dish, garnished with cilantro leaves, if desired.
SWEET CORN CAKES
This is a recipe I found in a Taste of Thai Cookbooklet I got in the mail from the Taste of Thai company...it is a good twist on regular southern corn cakes and I love them. Don't let the long ingredient list turn you away. This is quickly put together and inexpensive, and the dipping sauce is of course optional.

- In a large bowl, combine the corn, flour, and baking powder; mix with mixer on medium speed until flour begins to bind with the corn.
- Add the minced red peppers, sugar, scallion, cilantro, seasoning sauce and egg.
- Continue mixing until mixture becomes thick and spreadable (you want mixture to spread slightly when it is dropped in the oil).
- In a nonstick skillet, heat about one tablespoon of oil.
- Drop large spoonfuls of batter into skillet and let spread; brown cake on both sides, approximately 3 minutes per side.
- Continue doing this until batter is gone, adding oil as needed.
- Serve with Spicy Malt Seasoning Sauce.

- Combine all dipping sauce ingredients; mix well.

- Preheat oven to 350*F.
- Spread corn out in a single layer on a lightly oiled baking sheet.
- Roast corn for 12 to 15 minutes. Cool and divide into 2 batches.
- While corn is cooking, prepare chopped ingredients(cilantro, garlic, jalapeno,and bell pepper). Combine 1 batch of corn with eggs, cornstarch, chopped ingredients, salt, and pepper. Purée in a food processor. Fold in remaining corn by hand.
- Heat corn oil to medium high in a skillet. Drop in 12 heaping tablespoons of batter and fry until golden brown, turn over and fry other side till golden brown. Serve with a dipping sauce if desired. Enjoy!

- Using a fork or your fingers, shred the chicken meat, discarding the skin and bones. In a medium bowl, combine the meat, chipotle, lime juice, 1/4 teaspoon of the salt, the onion, tomatoes, and cilantro; set aside.
- In a large bowl, whisk together the flour, cornmeal, baking powder, pepper, and the remaining salt. Stir in the eggs and ricotta until no lumps remain. Fold in the corn.
- Heat the oil in a large nonstick skillet over medium heat. For each corn cake, spoon about 1/4 cup of the batter onto the skillet and cook until golden brown and set on one side, 2 to 3 minutes. Using a spatula, flip the cakes and cook 1 minute more.
- Divide the cakes among individual plates and top with the chicken mixture. Serve with sour cream, if desired.

Very pretty with either fresh cut or sweet kernel canned corn - frozen doesn't work as well because the kernels skins get tough when frozen.
