This is a delicious dry spiced tea mix which can be packed in jars and given as gifts. It can also be prepared sugar free by using sugar free orange flavored drink mix and sugar free iced tea mix.

- In a large kettle or Dutch oven over medium heat, bring 1 qt. of water to a boil. Remove from the heat; add tea bags. Cover and steep for 5 minutes. Remove tea bags. , Place cloves and cinnamon sticks in a double thickness of cheesecloth; bring up corners of cloth and tie with a string (or, if desired, place loose spices in pan and strain tea before serving). , Place the cheesecloth bag in pan; add the concentrates, sugar, tea and remaining water; bring to a boil. I have been making this Spiced Tea Mix for over 30 years now, and it's such a wonderful treat that we look forward to every Christmas. I usually make a double or triple batch so I have extra (which I place in decorative jars or cellophane treat bags) to give as Christmas gifts to special friends, co-workers, my kids' teachers, bus drivers, and coaches. And every year I get requests for more, and someone always asks for the recipe. Feel free to adjust the ingredient amounts to suit your taste preferences. Serving size and yield are approximate (as preferences for stronger or weaker beverages can vary).

- Mix all ingredients in a large bowl and stir with a wooden spoon until all of the ingredients are well blended.
- Store the mix in an air-tight container.
- When ready to serve, place 3 teaspoons of the mix in a coffee mug and add 1 cup of hot water. Stir with a whole cinnamon stick, and serve while hot.
- NOTE: Measurements are approximate; adjust ingredient amounts to suit your taste preferences.
- GIFT-GIVING TIP - This is a wonderful treat that is suitable for gift-giving. Place about 1 1/2 cups of the mix in a decorative glass jar, a strong cellophane bag, or a pretty holiday tin. Tie a festive holiday ribbon around the neck of the jar (or top of the bag), or secure a pretty bow to the top of the tin. For special touch, attach 3 or 4 cinnamon sticks to the ribbon. Be sure to add a label to the package with instructions to place 3 teaspoons of the spiced tea mix to a coffee mug and add 1 cup hot water.

- Place tea bags in a small bowl or large measuring cup/batter bowl. Add 3 cups boiling water and steep tea 5 minutes.
- Fill a large pitcher with ice cubes, 5 to 6 cups. Pour sugar over ice. Add lemon and orange juice, cinnamon stick and cloves. Pour hot tea over ice and stir with wooden spoon until most of the ice dissolves and tea has been quick-cooled. Serve or chill until ready to serve.
- When ready to serve, pour into a tall glass filled with more ice, a shot of light rum. Pour spicy iced tea through a strainer to remove the cinnamon, cloves and fruit pulp/pits. Fill glass with tea. Serve tea with extra sugar and lemon wedges.

- Lightly crush the cinnamon, peppercorns, cloves, and cardamom pods in a mortar and pestle or on a cutting board with the bottom of a saucepan. Transfer to a medium saucepan, add the ginger, citrus peels. Put the crushed spices in a medium saucepan and add the water. Bring to a boil, reduce the heat, and simmer, partially covered, until aromatic, and the cinnamon stick opens a bit, about 10 minutes. Add the tea bags, immediately remove from the heat, and steep for 3 to 4 minutes.
- Remove the tea bags, and add the cider and juice of 1 orange. Return the pan to a medium heat and warm, taking care not to let the tea boil. Serve hot.
HOT SPICED TEA FOR THE HOLIDAYS
This is an old family favorite, handed down from my great-grandmother. The holidays officially begin with Christmas carols and my favorite hot spiced tea! Definitely a seasonal comfort beverage for me! I prefer to use fresh juices with pulp. The flavors are different. Canned pineapple in light syrup is best. Set the pineapple chunks aside for the rest of your holiday baking. Store leftovers in refrigerator and reheat as needed.
