This is a delicious dry spiced tea mix which can be packed in jars and given as gifts. It can also be prepared sugar free by using sugar free orange flavored drink mix and sugar free iced tea mix.

Steps:

  • Combine iced tea mix, orange flavored drink mix, ground cinnamon, and ground cloves. Store in an airtight container.
  • To serve, stir 1 1/2 teaspoon mix into 1 cup hot water.

3 quarts water, divided
4 tea bags
18 whole cloves
2 cinnamon sticks (3-1/2 inches)
1 can (12 ounces) frozen orange juice concentrate, thawed
1 can (12 ounces) frozen lemonade concentrate, thawed
1 cup sugar

Steps:

  • In a large kettle or Dutch oven over medium heat, bring 1 qt. of water to a boil. Remove from the heat; add tea bags. Cover and steep for 5 minutes. Remove tea bags. , Place cloves and cinnamon sticks in a double thickness of cheesecloth; bring up corners of cloth and tie with a string (or, if desired, place loose spices in pan and strain tea before serving). , Place the cheesecloth bag in pan; add the concentrates, sugar, tea and remaining water; bring to a boil. Boil, uncovered, for 6 minutes. Serve hot.

1 jar (6 ounces) sugar-free instant lemon iced tea mix

ADDITIONAL INGREDIENTS FOR HOT SPICED TEA:
1 cup boiling water

2 quarts apple juice or cider
1-1/2 cups cranberry juice

Steps:

  • In an airtight container, combine the first five ingredients. Store in a cool, dry place for up to 6 months. Yield: about 7-1/2 cups total. , To prepare tea: Dissolve about 1 tablespoon tea mix in boiling water; stir well. I have been making this Spiced Tea Mix for over 30 years now, and it's such a wonderful treat that we look forward to every Christmas. I usually make a double or triple batch so I have extra (which I place in decorative jars or cellophane treat bags) to give as Christmas gifts to special friends, co-workers, my kids' teachers, bus drivers, and coaches. And every year I get requests for more, and someone always asks for the recipe. Feel free to adjust the ingredient amounts to suit your taste preferences. Serving size and yield are approximate (as preferences for stronger or weaker beverages can vary).

2 cups powdered orange breakfast drink mix (I use Tang)
1 cup instant tea powder
3 ounces powdered unsweetened lemonade mix (about 1/2 cup)
1 1/2 cups sugar
2 teaspoons ground cinnamon
2 teaspoons ground cloves
cinnamon stick (optional, for stirring)

Steps:

  • Mix all ingredients in a large bowl and stir with a wooden spoon until all of the ingredients are well blended.
  • Store the mix in an air-tight container.
  • When ready to serve, place 3 teaspoons of the mix in a coffee mug and add 1 cup of hot water. Stir with a whole cinnamon stick, and serve while hot.
  • NOTE: Measurements are approximate; adjust ingredient amounts to suit your taste preferences.
  • GIFT-GIVING TIP - This is a wonderful treat that is suitable for gift-giving. Place about 1 1/2 cups of the mix in a decorative glass jar, a strong cellophane bag, or a pretty holiday tin. Tie a festive holiday ribbon around the neck of the jar (or top of the bag), or secure a pretty bow to the top of the tin. For special touch, attach 3 or 4 cinnamon sticks to the ribbon.   • Place tea bags in a small bowl or large measuring cup/batter bowl. Add 3 cups boiling water and steep tea 5 minutes.
  • Fill a large pitcher with ice cubes, 5 to 6 cups. Pour sugar over ice. Add lemon and orange juice, cinnamon stick and cloves. Pour hot tea over ice and stir with wooden spoon until most of the ice dissolves and tea has been quick-cooled. Serve or chill until ready to serve.
  • When ready to serve, pour into a tall glass filled with more ice, a shot of light rum. Pour spicy iced tea through a strainer to remove the cinnamon, cloves and fruit pulp/pits. Fill glass with tea. Serve tea with extra sugar and lemon wedges.

1/2 teaspoon whole black peppercorns
2 to 3 whole cloves
3 to 5 whole cardamom pods
5 coin-size pieces fresh ginger
2 (1-inch) strips fresh orange peel
2 (1-inch) strips fresh lemon peel
5 cups cold water
4 bags orange-pekoe tea
3 cups apple cider
1 orange, juiced

Steps:

  • Lightly crush the cinnamon, peppercorns, cloves, and cardamom pods in a mortar and pestle or on a cutting board with the bottom of a saucepan. Transfer to a medium saucepan, add the ginger, citrus peels. Put the crushed spices in a medium saucepan and add the water. Bring to a boil, reduce the heat, and simmer, partially covered, until aromatic, and the cinnamon stick opens a bit, about 10 minutes. Add the tea bags, immediately remove from the heat, and steep for 3 to 4 minutes.
  • Remove the tea bags, and add the cider and juice of 1 orange. Return the pan to a medium heat and warm, taking care not to let the tea boil. Serve hot.

This is an old family favorite, handed down from my great-grandmother. The holidays officially begin with Christmas carols and my favorite hot spiced tea! Definitely a seasonal comfort beverage for me! I prefer to use fresh juices with pulp. The flavors are different. Canned pineapple in light syrup is best. Set the pineapple chunks aside for the rest of your holiday baking. Store leftovers in refrigerator and reheat as needed.

2 orange peel strips (1 to 3 inches)
12 whole cloves
12 whole allspice
3 quarts water

Steps:

  • Place the cinnamon sticks, orange peel, cloves and allspice on a double thickness of cheesecloth. Bring up corners of cloth; tie with string to form a bag. Place water and spice bag in a large kettle or Dutch oven; bring to a boil. Remove from the heat. Add tea bags; cover and steep for 5 minutes. Discard tea bags. , Add honey and lemon juice to tea; bring to a boil. Discard spice bag. Serve tea in mugs. Garnish with orange slices if desired.

2 cups whole milk
3 1/2 tablespoons packed light brown sugar, or to taste

5 teaspoons loose orange pekoe tea or other black tea
Equipment: a mortar and pestle or an electric coffee/spice grinder

Steps:

  • Grind together cardamom, cinnamon stick, peppercorns, and fennel seeds with mortar and pestle or coffee/spice grinder.
  • Bring milk just to a simmer in a 2-quart heavy saucepan. Stir or whisk in brown sugar, ground spice mixture, ginger, and 1/8 teaspoon salt, or to taste. Reduce heat to low and simmer gently, stirring occasionally, 3 minutes to infuse flavors.
  • Meanwhile, bring water to a boil in a 1-quart saucepan, add tea, and boil 1 minute.

  • Mix all ingredients thoroughly. A food processor makes this effortless, but I managed with a blender for years, and have even stirred it together by hand when necessary-- although it's not quite as pretty when done that way.
  • To enjoy: stir 2-3 heaping teaspoons into a mug of hot water and adjust to suit your own taste. Ahhh!
  • This mix starts to harden in the jar after six months or so, so drink up! Servings and Yield are approximations only.
