PEACH CREAM PUFFS

On a sizzling day, we crave something light, airy and cool. Nothing says summer like cream puffs stuffed with peaches and whipped cream. -Angela Benedict, Dunbar, West Virginia

Number Of Ingredients 17

1 cup water
1/2 cup butter, cubed
1/8 teaspoon salt
1 cup all-purpose flour
4 large eggs, room temperature
FILLING:
4 medium peaches, peeled and cubed (about 3 cups)
1/2 cup sugar
1/2 cup water
1/2 cup peach schnapps liqueur or peach nectar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
WHIPPED CREAM:
2 cups heavy whipping cream
1/2 cup confectioners' sugar
3 tablespoons peach schnapps liqueur, optional
Additional confectioners' sugar

Steps:

  • Preheat oven to 400°. In a large saucepan, bring water, butter and salt to a rolling boil. Add flour all at once and beat until blended. Cook over medium heat, stirring vigorously until mixture pulls away from sides of pan and forms a ball. Transfer dough to a large bowl; let stand 5 minutes., Add eggs, 1 at a time, beating well after each addition until smooth. Continue beating until mixture is smooth and shiny., Cut a 1/2-in. hole in tip of a pastry bag. Transfer dough to bag; pipe sixteen 2-in. mounds 3 in. apart onto parchment-lined baking sheets., Bake on a lower oven rack 25-30 minutes or until puffed, very firm and golden brown. Pierce side of each puff with tip of a knife to allow steam to escape. Cool completely on wire racks. , Meanwhile, in a large saucepan, combine filling ingredients; bring to a boil, stirring occasionally. Reduce heat; simmer, uncovered, 25-30 minutes or until mixture is slightly thickened and peaches are tender. Cool completely. , In a bowl, beat cream until it begins to thicken. Add confectioners' sugar and, if desired, peach schnapps; beat until soft peaks form., Cut top third off each cream puff. Pull out and discard soft dough from inside tops and bottoms., To serve, spoon 2 tablespoons whipped cream into each bottom; top with 2 tablespoons filling and 2 tablespoons additional whipped cream. Replace tops. Dust with additional confectioners' sugar.

1 cup water
1/2 cup butter, cubed
1 teaspoon ground nutmeg
1/8 teaspoon salt
1 cup all-purpose flour
4 large eggs, room temperature
2 cups heavy whipping cream
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
2 cups coarsely chopped fresh or frozen peaches, thawed
Additional confectioners' sugar

Steps:

  • In a large saucepan, bring the water, butter, nutmeg and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 400° for 25-30 minutes or until golden brown. Remove to a wire rack. Immediately split puffs open; remove tops and set aside. Discard soft dough from inside. Cool puffs., For filling, in a large bowl, beat cream until it begins to thicken. Add confectioners' sugar and vanilla; beat until stiff peaks form., Just before serving, fill puffs with whipped cream and peaches. Dust with additional confectioners' sugar.

For me, this is an absolute Christmas/holiday must and, as with so many good things in my life, comes to me from my sister-in-arms, Hettie Potter. I've used bottled peaches, I've used tinned peaches and it honestly doesn't matter which, but I'm afraid you have to resist the healthier peaches tinned in fruit juice rather than syrup. If you can find only slices, not halves, so be it. This is a beautiful condiment to eat with roast ham, hot or cold, and I love it with cheese, too. It makes the kitchen feel like a proper Christmas/holiday kitchen - and it's a very easy present to whip up for people, too, beautiful in old-fashioned glass jars.

Two 14-ounce cans peach halves in syrup
1 tablespoon rice vinegar or white wine vinegar
2 short sticks cinnamon
1 1/2-inch piece ginger, peeled and sliced thinly into rounds
1/2 teaspoon crushed dried chili flakes
1/2 teaspoon kosher salt or 1/4 teaspoon table salt
1/4 teaspoon whole black peppercorns
3 whole cloves

Steps:

  • Empty the cans of peaches into a saucepan with their syrup. Add the vinegar, cinnamon, sliced ginger, chiles, salt, whole peppercorns and cloves. Bring the pan to the boil, and let boil for a minute or so then turn off the heat and leave it in the pan to keep warm.
  • Serve the peaches with a hot ham letting people take a peach half and some of the spiced juice. Any leftovers can (and should) be stored in a jar and refrigerated and then eaten cold with cold ham.

6 fresh peaches, peeled and halved

Steps:

  • In a large saucepan, bring the first five ingredients to a boil. Reduce heat; simmer 10 minutes. Add peaches; simmer until heated through, about 10 minutes. , Pour into a shallow dish. Cover and chill 8 hours or overnight. Drain. Spoon peaches into serving dishes; garnish with a dollop of sour cream and sprinkle with brown sugar.

2 tsp. finely grated lemon zest
1/4 cup fresh lemon juice
1 cup sugar, divided
3/4 tsp. kosher salt, divided
1/2 cup (1 stick) unsalted butter
1 cup all-purpose flour
1 1⁄2 tsp. baking powder
1 cup whole milk
1 tsp. vanilla extract
Vanilla ice cream or whipped cream (for serving; optional)

Steps:

  • Toss peaches, lemon zest, lemon juice, 1/4 cup sugar, and 1/4 tsp. salt in a large bowl. Let sit, stirring occasionally, until saucy, about 15 minutes.
  • Preheat oven to 350°F. Place butter in a 13x9" glass or ceramic baking dish and heat in oven until melted, 8-10 minutes. Remove pan from oven.
  • Meanwhile, whisk flour, baking powder, and remaining 3/4 cup sugar and 1/2 tsp. salt in another large bowl. Add milk and vanilla and whisk until batter is smooth with no lumps. Pour evenly over melted butter in baking dish (do not mix). Spoon fruit mixture and 3 Tbsp. of the accumulated juices evenly over batter.
  • Bake cobbler, rotating pan halfway through, until batter is puffed and lightly golden across the surface and browned around the edges, 40-45 minutes. Let cool 10 minutes.
  • Serve with ice cream or whipped cream if desired.

1 cup quick cooking oats
1 cup buttermilk
⅓ cup brown sugar
⅓ cup applesauce
¼ cup molasses
2 eggs
1 ⅓ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 ½ cups pitted and diced fresh peaches
2 tablespoons white sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with paper muffin liners.
  • In a large bowl, mix together oats, buttermilk, brown sugar, applesauce, molasses and eggs. In a separate bowl, stir together flour, baking soda and baking powder. Stir flour mixture into eggs mixture, just until moistened. Fold in peaches. Spoon batter into prepared muffin cups.
  • Bake in preheated oven for 15 minutes. While muffins are baking, combine 2 tablespoons sugar and 1/2 teaspoon cinnamon. After 15 minutes of baking, remove muffins from oven and sprinkle with cinnamon sugar. Return to oven and continue baking for 3 minutes, until a toothpick inserted into center of a muffin comes out clean.
