Steps:
- Preheat oven to 350°F/180°C. Grease a 9×5-inch loaf pan.
- In a medium bowl sift together flour, baking soda, and salt. Set it aside.
- Using a mixer fitted with the paddle attachment, beat together butter and sugar until fluffy, 3-4 minutes. Add 1/3 cup maple syrup and beat for one more minute. Scrape down the sides and the bottom of the bowl as needed. On medium speed, beat in the eggs one at a time, beating well after each addition. Add mashed bananas and vanilla extract and beat until well combined. With the mixer on low speed, add half of the dry ingredients and beat just until combined. Add the yogurt or sour cream and beat until combined. Add the other half of the dry ingredients and beat just until combined. Do not overmix - the less you mix, the lighter the bread will be. Mix in the nuts, reserving a few for garnish.
- Pour batter into prepared loaf pan and top with reserved nuts. Bake for 50-60 minutes until a toothpick inserted into the center of the bread comes out clean. If the top is browning too quickly, cover the pan loosely with aluminum foil (I cover mine after 30 minutes to help prevent it). Remove from oven and place the pan on a wire rack.
- Warm the maple syrup in a small saucepan over low heat until heated through (or for a few seconds in the microwave). Drizzle slowly over banana bread while the bread is still warm. If the syrup doesn't soak in completely, poke a few holes with a toothpick. Allow the bread to cool completely in the pan.
- Store bread at room temperature in an airtight container for up to 2 days or refrigerate for up to 5 days. Serve at room temperature. The bread can be frozen for up to 2 months. Thaw it on the counter, still covered, or overnight in the fridge.

SPICED PEAR BREAKFAST BREAD
For the naturally sweetest breakfast bread results, use Bartlett pears. If not available, ripe Anjou pears are a good option. The results are still just gently sweet; if you prefer a sweeter pear breakfast bread, add ¼ cup brown sugar or coconut sugar with the liquid sweetener in the recipe.

Steps:
- Preheat your oven to 350ºF.
- Grease an 8x4-inch or 9.5x3.5-inch loaf pan (I use this one), and flour the bottom.
- In a medium bowl, whisk together the flour, baking powder, cinnamon, ginger, baking soda, salt, and cloves.
- In a large mixing bowl, blend the oil, liquid sweetener, egg, and vanilla until just combined. Stir in the pear followed by the flour mixture. Stir just until combined; do not over mix (a few little lumps are okay).
- Spoon the batter into your prepared loaf pan and even out.
- Bake for 45 to 55 minutes (I'm at 4500 feet / dry climate and 50 minutes is spot on), or until a toothpick inserted into the center of the loaf comes out clean.
- Let the loaf cool in the pan for 15 minutes or until cool enough to pick up. Gently remove the loaf from the pan and cool it completely on a wire rack before slicing. Tightly wrap and store any leftovers at room temperature for up to 2 days, but chill in the refrigerator or freezer if you want it to keep longer.

- Pre-heat the oven to 350 degrees, and grease and/or line a bread baking tin. (* I use a 7x3, linked in the notes.) Set aside.
- To a large mixing bowl (for your stand mixer if using one), add the bananas (break off into small pieces), melted oil or ghee, syrup, and pumpkin pureé. Mix all ingredients together until well combined using a masher or your stand mixer. While still mixing, add in the egg, vanilla and apple cider vinegar. Once mixed well, let sit.
- Now, combine the dry ingredients separately. In a mixing bowl, add flour, baking soda and powder, spices, and salt. Whisk together and ensure no clumps remain.
- Start mixing your wet ingredients slowly again, and — while mixing — add your dry flour mixture in slowly so it can incorporate evenly.

- Whisk the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger together in a large bowl until combined. Set aside. In a medium bowl, whisk the oil, eggs, granulated sugar, brown sugar, pumpkin, shredded apple, shredded carrot, and milk together until combined. Pour the wet ingredients into the dry ingredients. Gently whisk until *just* combined. Fold in the walnuts. Batter will be semi-thick.
- Spread the batter into prepared loaf pan. Bake for 55 – 65 minutes. (I like to loosely cover the bread with aluminum foil halfway through to prevent heavy browning on top.) Baking times vary so keep an eye on yours. The bread is done when a toothpick inserted in the center comes out *mostly* clean with zero raw batter. Remove the bread from the oven.
- Cool completely in the pan set on a wire rack before removing and slicing. Cover and store leftover bread at room temperature for up to 3-4 days or in the refrigerator for up to about 10 days.

- PREP: Position a rack in the center of the oven and preheat the oven to 350ºF. Spray a 9x5-inch loaf pan with nonstick cooking spray.
- BROWN BUTTER: Heat the butter in a medium stainless steel saucepan over medium heat. Allow the butter to brown for a total of 3-7 minutes. Every now and then grab the handle and gently swirl the pan and stir often. You’ll notice it’ll start to foam but keep going. Usually, better quality butter has less water, which means it would brown quicker. Remove the saucepan from the stove when the butter smells like hazelnuts and looks light to medium brown in color. Pour into a large glass bowl and allow it to cool to room temp.
- WET INGREDIENTS: Once the butter cools, add the maple syrup and whisk to combine. Add the eggs one at a time and beat well before adding the next. Add the vanilla and the mashed bananas. Stir using a rubber spatula.
- COMBINE: Add the baking soda, baking powder, salt, cinnamon, and nutmeg and stir until well combined. Add ½ the flour, stir, then all the buttermilk and finally the rest of the flour. Fold until *just* mixed. A few lumps here and there are fine! Gently fold in the pecans.
