CHICKEN PAPRIKASH

Chicken Paprikash image

This easy paprikash recipe is a traditional Hungarian dish with chicken cooked in a sauce loaded with paprika and sour cream.

Provided by Ryan Beck

Categories     Main Course

Time 1h

Number Of Ingredients 10

2 lbs boneless, skinless chicken thighs or breasts
1/2 cup all-purpose flour
3 tbsp paprika OR Hungarian paprika ((depends on how much spice you like))
1/2 tsp salt
1/2 tsp black pepper
3 tbsp vegetable oil
1 cup sweet onion, chopped
1/8 tsp cayenne pepper
2 cups low sodium chicken stock
1 cup sour cream

Steps:

  • Combine flour, 2 tbsp paprika, salt and pepper. Depending on your tolerance for spice, the type of paprika you use will make a big difference. Regular paprika has almost no heat level while Hungarian has a kick. Dredge the chicken in the flour mixture. (VERY IMPORTANT - save the leftover flour, do not throw out)
  • Heat oil in large Dutch or skillet over medium-high heat. Add chicken and brown on both sides, about 6 minutes total. Remove chicken and set aside. Add onion, cayenne pepper and 1 tbsp paprika and saute the onion until it's tender, about 2 minutes.
  • Return chicken to the pot and add chicken stock. Bring to boil then reduce heat, cover and simmer for about 45 minutes or until chicken is done.
  • Once chicken is done, make mixture to thicken sauce. With leftover flour, add 1/2 cup sour cream and 1/2 cup of liquid from skillet. Mix until smooth. Add mixture to pot and simmer for 5 minutes, stirring occasional. Turn heat off and add remaining 1/2 sour cream, stirring constantly. The sauce should be a very pale orange color. Serve immediately.

Easy Hungarian Chicken Paprikash image

An easy Hungarian chicken paprikash recipe using traditional Hungarian sweet paprika... Also known as Chicken Paprikas or Csirkepaprikás, this simple spicy & creamy chicken recipe served over broad egg noodles boasts big flavor!

Provided by Tara Kuczykowski

Categories     Main Dishes

Time 45m

Number Of Ingredients 10

1 (12-oz.) pkg. No Yolks Broad noodles
1 medium onion
4 tablespoons unsalted butter
3 tablespoons Hungarian sweet paprika
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2.5 pounds chicken breasts and thighs
3 tablespoons flour, divided
1 1/2 cups chicken broth
1 cup sour cream

Steps:

  • Dice the onion, and cut the chicken breasts and thighs into bite-size chunks.
  • In a large skillet, sauté the onion in the butter over medium heat until translucent. Meanwhile, toss the diced chicken pieces with about two tablespoons of flour. Add the coated chicken to the pan, and brown on all sides. Once the chicken is browned, add the sweet paprika, salt, and pepper, and stir well.
  • Slowly add the chicken broth to the pan, and use a wooden spoon to scrape and deglaze the bottom of the skillet. Cover and simmer on low for 25 minutes. While the chicken is simmering, prepare the No Yolks noodles according to the directions on the package.
  • Remove the chicken to a plate. Whisk about one tablespoon of flour into the drippings left in the skillet to thicken. Turn off the heat and stir in the sour cream. Add the chicken back to the sauce and stir to coat.
  • Season to taste with additional salt, and serve immediately over broad egg noodles.

HUNGARIAN ROAST CHICKEN WITH HORSERADISH SAUCE

Hungarian Roast Chicken With Horseradish Sauce image

A great recipe from the Food Network Kitchens cookbook. To make porcini powder, simply grind a few dried porcini mushrooms in a spice or coffee grinder. To crack caraway seeds, use a mortar and pestle or place them in a small plastic bag and roll over them with a rolling pin. Great served with Recipe #385298.

Time 1h25m

Yield 4 serving(s)

Number Of Ingredients 12

4 garlic cloves
1 teaspoon kosher salt (plus more for seasoning)
3 tablespoons unsalted butter
1 tablespoon sweet Hungarian paprika
1 teaspoon finely ground dried porcini mushrooms (optional)
1/2 teaspoon caraway seed, cracked
fresh ground black pepper
1 chicken, trimmed of excess fat and giblets removed (3-4 pound)
1 large shallot, sliced (or 1/2 medium red onion)
1/2 lemon, zest of, peeled in large strips
1 -2 tablespoon horseradish, drained (I use prepared horseradish)
1/4 cup sour cream

Steps:

  • Chicken:.
  • Preheat oven to 425°F.
  • Smash the garlic cloves, sprinkle with the 1 teaspoons salt, and with the flat side of a large knife, mash and smear the mixture to a coarse paste. Set half the garlic paste aside.
  • Melt the butter in a small saucepan. Set a v rack or regular rack in a roasting pan and brush with some of the melted butter. Stir the remaining garlic paste, the paprika, porcini powder, caraway seeds, and a generous amount of black pepper into the remaining melted butter and cook over medium heat, stirring until fragrant, about 30 seconds. Cool. Smear chicken cavity with reserved garlic paste, then stuff with the shallot and lemon zest. Brush spiced butter over chicken and season with salt.
  • Tuck the wings under the back, cross the legs, and tie them with kitchen twine. Place chicken breast side down on the rack and roast until the back is golden brown, 35-40 minutes.
  • Remove the pan from the oven and turn the chicken breast side up. Cut the string where it holds the legs together and gently spread the legs a bit. Baste the chicken with the pan drippings and roast again until the breast is golden brown and a meat thermometer inserted in the thigh registers 170°F, 20-25 more minutes.
  • Move chicken to a carving board and let rest for 10 minutes before carving.
  • To make sauce:.
  • Whisk the horseradish into the sour cream. Carve the chicken and serve with the sauce and Parslied Egg Noodles for a great Hungarian dinner!

PRESSURE COOKER HUNGARIAN CHICKEN

Pressure Cooker Hungarian Chicken image

I adapted this recipe from "The Pressure Cooker Gourmet", by Victoria Wise. You can substitute any kind of chicken pieces, bone-in or boneless. You would just need to adjust cooking time based on your choice. I actually leave the skin on, I'm weird and kind of like the skin, even when its "soggy"!

Provided by Mrs Goodall

Categories     Chicken Thigh & Leg

Time 1h

Yield 4 serving(s)

Number Of Ingredients 9

1 tablespoon vegetable oil
3 1/2-4 lbs chicken leg quarters, bone-in and skinned
1 small onion, finely chopped
2 teaspoons hot paprika, preferably Hungarian
1/2 cup chicken broth
1 medium tomatoes, peeled and coarsely chopped
1 teaspoon salt
1/2 cup sour cream
6 ounces extra- wide egg noodles, cooked, drained and buttered

Steps:

  • Heat the oil in the pressure cooker over medium-high heat until beginning to smoke. Add the chicken pieces and cook until golden all around, 4 - 5 minutes. Transfer to a plate.
  • Add the onion, paprika, and broth and stir to mix. Return the chicken to the pot and add the tomato on top, but don't stir it. Add the salt.
  • Lock on the lid and bring to pressure over high heat, 4 - 5 minutes. Reduce the heat to medium and cook for 7 minutes. Remove from the heat and let sit for 5 minutes to finish cooking.
  • With steam vent pointed away from you face, gently release any remaining pressure and transfer the chicken to a plate. Set aside in a warm place while the liquid cooks in the pot for 15 minutes.
  • Whisk the sour cream in a small bowl until smooth. Add 1/4 cup of the liquid from the pot and whisk until smooth. Pour the sour cream mixture into the pot and whisk to mix. Return the chicken pieces and any juices to the pot. Reheat briefly without boiling.
  • Spread the warm egg noodles on a serving platter. Arrange the chicken over the noodles and pour the sauce over all.

HUNGARIAN CHICKEN

Hungarian Chicken image

Ever since I made Hungarian Chicken for the first time (after coming across it in an old church cookbook), it's been a family and company favorite. Seconds are always requested. My husband, our three children (4, 2 and 4 months-quite an active group!) and I live in a very small town in the Texas panhandle. We enjoy working outside the yard or our small garden. But, to tell you the truth, I think I'd be content in the kitchen all day!

  • Season your chicken with salt and pepper on both sides. Heat up a skillet, add cooking oil and sear the chicken in batches, until nicely brown. Do not overcrowd the chicken and use a splatter guard if the chicken is splashing around (tip: place chicken skin side down and do not disturb for 6-7 minutes, then flip and cook for 3-4 minutes on the other side; this will ensure a nice sear on the skin).
  • Chop your onions and garlic. Once the chicken is seared on both sides, remove it to a plate and add onions into the same pan (if too much fat has accumulated in a skillet, remove some of it so you are left with approx 1 tablespoon of fat). Saute onions until translucent, for about 5 minutes.
  • Add garlic and cook for one minute. Then add flour to the skillet and cook for 2 minutes. Then add paprika & tomato paste and mix well.
  • Then add chicken broth and place chicken back into the skillet. Cover it and cook for about 20 minutes, until chicken is fully cooked through. Once the chicken is cooked, remove it from the skillet so you can finish up the sauce.
