This is the most wonderful cake you have put in your mouth. Another one of my Granma Norn's recipes that has been in our family for years. It is also one we rarely share, but I love this site so much and have gotten so many wonderful recipes, I decided to give you great cooks something you will truly enjoy and get many, many compliments from. 1 (18 ounce) box yellow cake mix
4 eggs
1 cup oil
2 (3 ounce) boxes blackberry Jell-O or 2 (3 ounce) boxes raspberry Jell-O gelatin
1 (16 ounce) bag frozen blackberries, unthawed with juice (can use fresh berries also)
1/2 cup butter or 1/2 cup margarine, softened
1 (8 ounce) package cream cheese, softened
1 (16 ounce) box confectioners' sugar

Steps:

  • In large bowl mix cake mix, eggs, oil and Jello on high speed with electric mixer about 2 minutes.
  • Add berries; mix until blended well.
  • Pour into greased and floured 9x13-inch pan.
  • Bake at 350 until fork inserted in center comes out clean, about 40-45 minutes.
  • Allow cake to cool completely.
  • In bowl make icing by beating cream cheese and butter until smooth. Gradually add confectioners' sugar.
  • Frost cake, chill and serve.

This is another Southern Living recipe that I haven't made in years. This makes a delicous cake by itself, but of course you could add a glaze if you would like.

2 cups sugar
1 teaspoon salt
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon ground cloves
3 eggs, beaten
1 cup butter, melted
1 cup buttermilk
1 1/2 cups fresh blackberries
1 tablespoon baking soda
1/2 cup chopped pecans
1/2 cup raisins (optional)

Steps:

  • Preheat the oven to 350 degrees.
  • Sift together the flour, sugar, salt, nutmeg, cinnamon and cloves in a large bowl.
  • Add the eggs, butter, buttermilk and blackberries and beat 1 minute with a mixer on medium speed.
  • Stir in the baking soda, pecans and raisins (if using).
  • Pour the batter in a greased and floured bundt pan.
  • Bake at 350 degrees for 55-60 minutes or until the cake tests for doneness.

2 cups whole-fat buttermilk
1 teaspoon vanilla bean paste
2 large eggs
1 cup all-purpose flour
3/4 cup yellow cornmeal
3/4 cup maple sugar
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
One 6-ounce container blackberries, plus more for garnish
1/2 cup heavy cream
Maple syrup and whipped cream, for serving

Steps:

  • Preheat the oven to 350 degrees F. Grease a 10-inch ovenproof skillet with the butter.
  • In a medium bowl, whisk together the buttermilk, vanilla bean paste and eggs. In a separate medium bowl, combine the flour, cornmeal, maple sugar, baking soda and salt. Stir in the buttermilk mixture until smooth.
  • Line the blackberries in the buttered skillet, then pour the batter over the top. Pour the cream into the center of the batter. Bake until the top crust is golden brown, 40 to 45 minutes.
  • Serve warm with blackberries, maple syrup and whipped cream.

1 cup fresh blackberries
2 cups all-purpose flour, divided
1/2 cup butter, softened
1 cup sugar
2 large eggs, room temperature
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
3/4 cup buttermilk
Optional: Whipped cream and confectioners' sugar

Steps:

  • Preheat oven to 350°. Toss blackberries with 1/4 cup flour; set aside. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs. Combine baking soda, cinnamon, nutmeg, salt, cloves, allspice and remaining 1-3/4 cups flour; add to creamed mixture alternately with buttermilk, beating well after each addition. Fold in blackberries. , Pour into a greased and floured 9-in. square baking pan. Bake until a toothpick inserted in center comes out clean, 45-50 minutes. Cool on a wire rack. 250g self-raising flour
25g oats
280g soft brown sugar
200g cold butter, cut into pieces
75g desiccated coconut
2 medium eggs, beaten
350g frozen or fresh blackberry

Steps:

  • Heat oven to 180C/160C fan/gas 4. Tip the flour, oats and sugar into a large bowl. Rub the butter into the flour mixture using your fingertips until only small pea-size pieces remain. Stir through the coconut, then fill a teacup with the mixture and set this aside.
  • Stir the eggs into the bowl of mixture, then spread over the bottom of a lined baking tin (31 x 17cm), or a 21cm square tin. Smooth the surface with the back of a spoon, then scatter over the blackberries. Scatter over the reserved teacup mixture and bake for 1 hr-1 hr 15 mins until golden and cooked through (if you poke a skewer in, it should come out with moist crumbs but no wet mixture). Leave to cool, then remove from the tin and cut into squares. Serve with some extra berries, if you like. Great for teatime or to pop into a lunchbox.

1 1/4 cups graham cracker crumbs
1/4 cup sugar
1/4 cup butter
1 tablespoon cinnamon
3 (8 ounce) packages cream cheese
4 eggs

1/2 pint sour cream
3 tablespoons sugar
1 teaspoon vanilla
1 cup blackberry jam
8 ounces frozen blackberries, thawed

Steps:

  • Preheat oven to 300 degrees.
  • Combine the cracker crumbs, 1/4 c sugar, cinnamon and butter; press onto the bottom of a springform pan.
  • Beat the cream cheese; add eggs, one at a time, and beat after each addition.
  • Gradually add in the sugar and mix well.
  • Pour over the crust and bake 45 minutes.
  • Combine the sour cream, 3 T sugar and vanilla; pour over the cheesecake.
  • Bake for an additional 10 minutes.
  • Remove and chill for at least 6 hours.
  • When you get ready to serve the cheesecake, combine the jam and blackberries in a saucepan.
  • Gently heat until just warmed.
  • Drizzle over the cheesecake slices.

  • Preheat oven to 350°F.

2 tablespoons butter
2 cups fresh blackberries
¾ cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt brown sugar and 2 tablespoons butter together in a saucepan over medium heat. Add blackberries to brown sugar mixture; cook and stir until mixture bubbles, 1 to 3 minutes. Stir 3/4 cup white sugar into berries, crush berries slightly with a fork, and continue cooking until berries are hot and slightly broken-down, about 5 minutes more; remove from heat and pour into a 9-inch cake pan.

This blackberry cake is soft and moist and has a fluffy lemon blackberry buttercream frosting. The lemon juice cuts the sweetness and brightens up the whole cake.

6 large eggs (room temperature)
1 cup granulated sugar
1 cup all-purpose flour
1/2 tsp baking powder
3/4 cup warm water
1 Tbsp granulated sugar
4 Tbsp Lemon Juice (from 1 large lemon)
3 cups powdered sugar
3 sticks (1 1/2 cups unsalted butter, room temperature)
8 oz Cream cheese (softened at room temperature)
1/2 tsp salt (I used fine sea salt)
12 oz blackberries
2 Tbsp fresh lemon juice from 1 medium lemon
Crystal sprinkles (optional)

Steps:

  • In the bowl of an electric stand mixer fitted with whisk attachment, beat 6 large eggs 1 min on high speed. With the mixer on, gradually add 1 cup sugar and continue beating 8-10 min until thick and fluffy.
  • Whisk together 1 cup flour and 1/2 tsp baking powder then sift this mixture into fluffy egg mixture one third at a time. Fold with a spatula with each addition just until incorporated. Scrape spatula from the bottom to catch any pockets of flour and stop mixing when no streaks of flour remain. Do not over-mix or you will deflate the batter.
  • Divide evenly between prepared cake pans and bake at 350˚F for 23-28 minutes (my oven took 25 min), or until top is golden brown. Remove from pan by sliding a thin spatula around the edges then transfer to a wire rack and remove parchment backing. Cool cakes to room temp then slice layers equally in half with a serrated knife.
  • Combine 2 Tbsp lemon juice with 1 cup blackberries in small saucepan. Simmer 6-7 minutes or until berries easily mash up with a fork then turn off heat. Strain through a fine mesh strainer, pushing the blackberries through with a spatula until only seeds are left in strainer. Discard seeds and set the puree aside to cool completely to room temp (you should get 5 Tbsp puree).
  • In the bowl of an electric stand mixer fitted with whisk attachment, cream together 3 sticks butter, 3 cups powdered sugar and 1/2 tsp salt on low speed until combined, scraping as necessary. Increase speed to medium-high and beat until white and fluffy (2 to 3 min).
  • Add cream cheese 1-piece at a time and mix until combined then continue to beat 2 min until fluffy, scraping down the bowl as needed. With the mixer on, drizzle in blackberry syrup 1 Tbsp at a time then beat another minute.
  • Slice 1 cup blackberries and set aside. Make your lemon syrup by combining 3/4 cup warm water, 1 Tbsp granulated sugar and 4 Tbsp Lemon Juice.
  • Place first cake layer on serving platter cut-side up **. Brush with 1/4 of the lemon syrup. Spread frosting over the top and layer with 1/3 sliced berries. Repeat with remaining layers placing the final layer cut-side-down, then frost the top and sides.
  • Pipe remaining frosting onto cake. For the roses, use a closed star Wilton 2D tip. Decorate with remaining blackberries and sprinkle sugar crystals if desired.

2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda

Steps:

  • Combine the flour, brown sugar, cinnamon and salt in a small bowl and mix to combine. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
  • Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
  • Whisk the flour, baking powder, baking soda and salt together in a medium bowl.
  • Beat the butter and granulated sugar together in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs, 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour, beating until just incorporated.

  • Bake until the cake and topping are golden brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Let cool in the pan 20 minutes, then invert onto a plate, re-invert onto a rack to cool completely.

2 peaches, pitted, peeled and sliced 1/2-inch thick
1 cup blueberries
1 cup granulated sugar
1/2 cup (1 stick) butter, at room temperature
4 ounces cream cheese, at room temperature
1 1/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 large eggs
2/3 cup milk
1 1/2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 350 degrees F and place a rack in the center of the oven. Grease the sides of a 9-by-3-inch round cake or bundt pan.
  • Sprinkle the brown sugar in the pan and pour in the melted butter. Top with the peaches and blueberries and set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the sugar with the room temperature butter on medium speed until fluffy, then increase to high speed for 3 to 5 minutes. Turn off the mixer, add the cream cheese ,and then mix on medium speed.
