1 pound ground chuck
4 ounces dried bread crumbs
4 large eggs
4 ounces whole milk
6 ounces grated Romano
3 ounces grated Spanish onion
2 ounces finely diced fresh garlic
2 ounces finely chopped fresh Italian parsley leaves
2 ounces finely chopped fresh basil leaves

Steps:

  • Preheat oven to 350 degrees F. Spray a baking sheet with olive oil cooking spray.
  • Mix all ingredients thoroughly in large bowl. If mixture seems a little loose add more bread crumbs.
  • Roll meatballs loosely about the size of a golf ball and place on baking sheet. Place into preheated oven for approximately 35 to 40 minutes. Enjoy!

While watching the cooking segment of the October 19th episode of The Tony Danza Show, Chef Rocco's Dispirito's mama prepared her infamous meatballs. I have not tried them, but I have a friend that did the following night and said she will never make another meatball recipe again.

1/3 cup chicken stock
1/4 cup diced yellow onion
1 clove garlic, minced
1/4 cup fresh flat-leaf Italian parsley, chopped fine
1/2 lb ground beef
1/2 lb ground pork
1/2 lb ground veal
1/3 cup plain breadcrumbs
2 eggs
1/4 cup parmigiano-reggiano cheese, grated
1 teaspoon red pepper flakes
1 teaspoon salt
1/4 cup extra virgin olive oil
3 -6 cups of your favorite marinara sauce

Steps:

  • Place the chicken stock, onion, garlic, and parsley in a blender or food processor and puree.
  • In a large bowl, combine the pureed stock mix, meat, bread crumbs, egg, Parmigiano-Reggiano cheese, red pepper flakes, and salt.
  • Combine with hands until mixture is uniform, do not overmix.
  • Put a little olive oil on your hands and form mixture into balls a little larger than golf balls.
  • Pour about 1/2 inch of extra virgin olive oil in straight sided, 10-inch-wide saute pan and heat over medium-high flame.
  • Add the meatballs to the pan, working in batches if necessary, and brown meatballs, turning once.
  • This should take about 10-15 minutes.
  • While meatballs are browning, heat the marinara sauce in a large pot.
  • Transfer the meatballs to the pot with the marinara sauce and simmer for one hour.
  • Serve alone or over your favorite pasta.

1 (18 1/4 ounce) package white cake mix
1 (3 ounce) package strawberry gelatin
1 cup fresh strawberries, mashed with juice
1 cup vegetable oil
1/2 cup whole milk
4 large eggs
1 cup coconut
1/2 cup pecans, chopped
1 (6 ounce) can crushed pineapple
1 (8 ounce) package cream cheese, softened
8 tablespoons butter, softened
3 1/2 cups confectioners' sugar, sifted
1/2 cup fresh strawberries, rinsed, capped and mashed and drained
1/2 cup coconut
1/2 cup pecans, chopped

Steps:

  • Preheat the oven to 350 degrees.
  • Lightly grease three 9-inch round cake pans with butter, then dust with flour. Shake out the excess flour. Set the pans aside.
  • Place the cake mix, strawberry gelatin, pineapple and juice, mashed strawberries and juice, oil, milk and eggs in a large mixing bowl and blend with an electric mixer.The strawberries should be well blended into the batter.
  • Fold in the coconut and pecans.
  • Divide the batter among the prepared pans and place them in the oven on the center rack.
  • Bake the cakes until they are light brown, about 30 minutes.
  • Remove the pans from the oven and place them on wire racks to cool.
  • Remove cooled cake from pans.
  • Meanwhile, make the frosting. Combine the cream cheese and butter in a medium bowl with an electric mixer. Add the sugar and drained strawberries. Blend on low until sugar is dissolved. Then raise the speed to medium and mix the frosting another minute until the frosting lightens and is well combined. Fold in the coconut and pecans.
  • Frost cake.
  • Place this cake uncovered, in the refrigerator until the frosting sets, 20 minutes.
  • Slice and serve.
  • Note:Cover the cake and store, in the refrigerator, for up to 1 week.

2 teaspoons prepared mustard

3/4 cup graham cracker crumbs
3/4 pound lean ground beef (90% lean)
3/4 pound lean ground turkey
BARBECUE SAUCE:
1/2 cup packed brown sugar
3 tablespoons cornstarch
1/2 cup cider vinegar
1/2 cup ketchup
1/2 cup molasses
1/4 cup orange juice concentrate
2 tablespoons Dijon mustard
2 tablespoons reduced-sodium soy sauce
1/4 teaspoon hot pepper sauce
6 cups hot cooked yolk-free noodles

Steps:

  • Place onion in a small microwave-safe bowl; cover and microwave on high for 1-1/2 minutes or until tender. In a large bowl, combine the egg whites, milk, mustard, salt, cracker crumbs and onion. Crumble beef and turkey over mixture and mix well., Shape into 1-1/4-in. balls. Place meatballs on a rack coated with cooking spray in a shallow baking pan. Bake at 375° for 15 -18 minutes or until meat is no longer pink; drain. , Meanwhile, in a large saucepan, combine brown sugar and cornstarch. Stir in vinegar until smooth. Add the ketchup, molasses, orange juice concentrate, mustard, soy sauce and hot pepper sauce. Bring to a boil; cook and stir for 2 minutes or until thickened. Add meatballs; heat through. Serve with noodles.

Who would've thunk that so few ingredients would make the best, and I mean BEST, mushrooms that you've ever tasted? I always serve this at Christmas. Use any combination of mushrooms you like, but make sure to use fresh and not canned.

3 tablespoons butter
2 ½ pounds sliced fresh mushrooms
1 (4 ounce) can sliced black olives, drained
3 cups shredded Cheddar cheese
2 tablespoons all-purpose flour
2 tablespoons butter, melted
½ cup fine dry bread crumbs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt 3 tablespoons of butter in a large skillet over medium heat. Add the mushrooms, and saute until tender, about 10 minutes. Layer half of the mushrooms in the bottom of a casserole dish. Sprinkle with half of the olives, half of the cheese, and 1 tablespoon of flour. Repeat the layers then top with the bread crumbs. Drizzle 2 tablespoons of melted butter over the crumbs.
  • Bake for 30 minutes in the preheated oven, until bubbly and browned on the top.

  • Transfer the meatballs to the foil-lined baking sheet. Cook in the oven for 10-12 minutes, then flip all the meatballs and cook for another 10-12 minutes. Test for doneness with a meat thermometer (they should be at 160°F when cooked) or cut one open to check.
