Basic Butter Cookie Dough

Steps:

  • Divide dough in half; form into two 2-inch square logs, each approximately 5 1/2 inches long. Wrap logs in waxed paper; refrigerate until firm, at least 2 hours.
  • Preheat oven to 350 degrees. Slice dough crosswise, 3/16 inch thick; carefully transfer slices to baking sheets.
  • If decorating, brush with egg wash, then sprinkle with sugar or sprinkles. Bake until edges are firm (not brown), 10 to 15 minutes. Cool 1 to 2 minutes on baking sheets; cool completely on a rack.

½ prepared Basic Butter Cookie Dough recipe at room temperature
3 Tablespoons honey or molasses
1 Tablespoon cinnamon
2 teaspoons ground ginger
1½ teaspoons anise seeds, crushed lightly
½ teaspoon ground cloves
¼ teaspoon freshly grated nutmegIcing:
1 cup confectioners' sugar
1½ Tablespoons fresh lemon juice

Steps:

  • In bowl of a standing electric mixer beat together the dough, honey or molasses, and spices until just combined well. Halve dough and on sheets of wax paper form each half into a 12-inch log. Chill logs, wrapped in wax paper, at least 2 hours or overnight. Preheat oven to 350°F. With a sharp knife cut logs into generous 1/8-inch slices and arrange 1/2 inch apart on baking sheets. Bake cookies in batches in middle of oven until pale golden, about 12 minutes, and cool on racks.Make icing: In a small bowl whisk together icing ingredients and then transfer the icing to a sealable plastic bag. With scissors cut a 1/8-inch opening in one corner of bag. Arrange cookies on sheets of wax paper and, using the plastic bag with the icing in it draw stars or dreidels on the cookies with the icing. Let icing dry completely.

Consider this no-bake dessert the layered cheesecake of your dreams. It's simple to make, but packed with complex flavors -- alternating bites of cookie butter-cream cheese, speculoos cookies (think spiced shortbread meets a biscuit cookie) and apricot preserves. A little extra plastic wrap helps you unmold the cake easily.

1 cup apricot preserves
1/2 cup cookie butter spread
1/2 cup confectioners' sugar, sifted
4 ounces cream cheese, at room temperature
2 1/2 cups heavy cream
One 8.8-ounce package speculoos cookies, 2 set aside for garnish (see Cook's Note)

Steps:

  • Line an 8-by-8-inch baking dish with plastic wrap, leaving about 2 inches of overhang on all sides. Stir together the apricot preserves and 1 tablespoon water in a small bowl. Set aside.
  • Combine the cookie butter, sugar and cream cheese in a large bowl and beat with an electric mixer until smooth, about 2 minutes. Scrape down the sides of the bowl as needed. Add the cream and continue to beat, starting on medium speed until the cream and cookie butter mixture are combined and then increasing the speed to medium high, until very stiff peaks form, about 3 minutes.
  • Spread a quarter of the cookie butter-cream on the bottom of the prepared baking dish. Evenly dollop with 3 tablespoons of preserves. Arrange 10 cookies on top of the preserves, breaking some up into little pieces to fill in the gaps. Repeat this layering process 2 more times, each time with a quarter of the cookie-butter cream, 3 tablespoons of the preserves and 10 cookies. Make a final cookie butter-cream layer with the remaining mixture. Cover with plastic wrap and refrigerate for at least 8 hours and up to 12. Refrigerate the remaining preserves.
  • Once completely chilled, remove the plastic wrap from the top of the icebox cake and invert onto a platter. Remove the rest of the plastic wrap. Lightly crush the reserved cookies and sprinkle on top of the cake. Drizzle the remaining preserves over the cookie crumbles.

1 Cup Lard (I use Vegetable Oil or Canola Oil)
1 Cup Butter
3 Eggs
1 Teaspoon Cinnamon

6 1/2 Cups Flour
1 Teaspoon Baking Soda
2-3 Tablespoons Hot Water
1 Cup Chopped Walnuts

  • 1. Cream together the Butter, Oil and Sugars in a very large bowl 2. Beat in the Eggs 3. Stir in the Baking Soda, Cinnamon, Nutmeg, Cloves and Salt 5. Add the Flour 1 Cup at a time, and stir well 6. Add the Hot Water to moisten the batter just a bit 7. Now stir in the Walnuts 8. Roll and shape dough into desired length (I usually go with 2 1/2 inches wide by 12 inch long rolls, you should get about 4 rolls) then wrap tightly in plastic wrap and refrigerate for several hours or overnight. You can keep the dough in the refrigerator for several days if you want to make the dough ahead of time. 9. When ready to bake, Preheat oven to 375 degrees, slice the dough into 1/2 inch slices, then place on an nongreased cookie sheet 10. Bake the cookies until the edges are golden brown, about 15 minutes 11. Cool on brown paper (I use a cookie cooling rack) ~makes about 80 cookies Note: any unused dough or cookie slices should be kept in the refrigerator until they go directly in the oven. The cold dough is easier to slice and helps the cookie retain it's shape. For you you youngsters out there, "Icebox" is an old term referring to an old style refrigerator of sorts. Before homes had electricity they would have an Icebox, usually made of wood that had blocks of ice in it, to keep food items cold. Once the refrigerator was developed, some people still called their refrigerator "the Ice box". So the recipe name "Old Fashioned Ice Box Cookies" refers to the fact that you refrigerate the cookie dough before baking and since this is a very old recipe, they still referred to the fridge as an Ice Box.

Steps:

  • Preheat oven to 350 degrees F.

Easy to keep a frozen log in the freezer to bake in a hurry.

4 1/2 cups flour
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon salt
1 cup brown sugar
1 cup sugar
3 well beaten eggs
1 1/2 cups shortening
12 ounces chocolate chips

Steps:

  • Sift flour, baking soda, cinnamon and salt together and set aside.
  • Cream together shortening and sugars, add eggs.
  • Mix flour and shortening mixture together.
  • Divide dough in half, place each half on a sheet of wax paper.
  • Shape dough into logs along length of wax paper. Freeze for 30 minutes.
  • Melt chocolate chips in double boiler (Grandma uses semi-sweet or mint flavored for a surprise, leaving out the peanut butter in that case).
  • Take one dough log out at a time and roll between 2 sheets of wax paper until it reaches across the paper, a little more than a 1/4" thick.
  • Spread half of chocolate on dough. Roll up, like a jelly roll. Return to freezer. Repeat with other log.
  • Allow dough to freeze for at least 30 minutes.
  • When ready to bake, preheat oven to 350 degrees. Slice cookies to desired thickness.
  • Bake on greased cookie sheet for 8-10 minutes.

3/4 cup dried sour cherries
1/3 cup sour cherry jam, or preserves
1 tablespoon sugar
1/8 teaspoon almond extract
1 1/4 cups all-purpose flour
1/2 cup yellow cornmeal
1 teaspoon baking powder
1/4 teaspoon salt
8 tablespoons (1 stick) unsalted butter, room temperature
1 cup sugar
1 large egg
1 teaspoon pure vanilla extract

Steps:

  • Make the filling: In a food processor, combine dried sour cherries, jam, and sugar. Process until coarsely pureed. Transfer to a small saucepan over medium heat. Cook, stirring occasionally until it comes to a boil. Remove from heat, and stir in almond extract. Let stand until cool.
  • Make the dough: In a medium bowl, whisk together flour, cornmeal, baking powder, and salt; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed until light and fluffy, 2 to 4 minutes. Add egg and vanilla; incorporate. With mixer on low speed, add flour mixture to butter mixture; mix to combine.
  • Transfer dough to a clean work surface, and divide into four equal portions. Place one portion between two pieces of parchment paper that are at least 12 inches square. Roll out dough to a 3 1/2-by-9-inch rectangle about 1/4 inch thick. Repeat with the remaining three portions dough. Transfer to a baking sheet and freeze for about 30 minutes.
  • Assemble the cookies: Remove dough from freezer. Remove top pieces of parchment from dough. Spread one-third of the filling evenly over one portion of dough. Invert second rectangle over the first; remove parchment on top. Repeat layering process, leaving the top rectangle uncoated. Trim to a 3 1/4-by-8 1/2-inch brick. Wrap in plastic wrap and transfer to freezer for 1 hour.
  • Preheat oven to 350 degrees. Line baking sheets with Silpats (French nonstick baking mats). Cut the brick into 1/4-inch-thick rectangles; place on baking sheets, spaced 2 1/2 inches apart.
  • Bake until light golden around the edges, 12 to 15 minutes. Transfer to a wire rack to cool. Store in an airtight container for up to 2 weeks.
