BLACKBERRY PORK CHOPS
Pork chops in a blackberry sauce is easy enough for family and fancy enough for guests!

Steps:
- Combine the chili powder, cayenne, salt and pepper. Rub into chops.
- Heat oil in a large heavy skillet over medium-high heat. Add the chops and brown on both sides. Cover the pan and reduce heat to low and cook 5-7 minutes; remove chops from the pan cover and keep warm.
- Saute the onion in the same pan over medium-high heat for about 2 minutes. Deglaze the pan with the wine and scrape up any browned bits.
- Add 3 cups of the berries, stock and sugar. Bring to a boil then simmer for 3 minutes. Coarsely mash the berries then simmer the sauce over low heat until it's slightly thick-about 8 minutes.
- Stir in the remaining berries and cook until heated through; remove from heat and stir in the butter. Season with salt and pepper to taste. Add the chops back to the pan and serve with the sauce.

- In a small saucepan, melt 1 tablespoon butter over medium. Saute shallots until tender, 8 minutes. Add vinegar, brown sugar, and blackberries and cook until mixture is syrupy and some of the berries have collapsed, 10 minutes. Season with salt and pepper.
- Meanwhile, season pork with salt and pepper. In a large skillet, melt 1 tablespoon butter over medium-high. Add half the pork and cook until golden brown and cooked through, flipping once, about 8 minutes. Repeat with remaining 1 tablespoon butter and pork. Serve pork topped with chutney.

- Sprinkle pork evenly with salt, pepper, and allspice.
- Cover and chill 30 minutes.
- Grill pork, covered, over medium-high heat for 20 minutes or until meat thermometer registers 160°, turning pork once.
- Remove from grill and let stand for 10 minutes.
- In a small saucepan, melt 2 tablespoons butter over medium-high heat.
- Add in shallots; stir/saute for 5 minutes or until tender.
- Add in wine; cook 13 minutes or until liquid is reduced by half.

- Mix vinegar, sugar, salt, paprika, mustard, and pepper together; marinate pork in the mixture for up to 4 hours.
- Heat a medium saucepan over high heat and add olive oil. Stir in garlic, shallots, carrot, and celery; reduce heat to medium-high and saute until vegetables begin to brown and caramelize, about 5 minutes. Add Chateau Ste. Michelle Cabernet Sauvignon to deglaze the pan, stirring well.
- Stir in stock, blackberries, jam, and balsamic vinegar. Bring the mixture to a boil, then reduce the heat to medium and continue cooking until the liquid is reduced by half, about 30 minutes.
- Strain sauce and return to pan. Bring sauce to a boil over high heat; reduce heat to medium. Cook until sauce is reduced by half and thickened, about 5 minutes more. Season to taste with espresso, salt, and pepper.
- Heat grill to medium heat. Brush the pork with 2 tablespoons olive oil and place on grill. Cook for about 15 minutes, turning each side 90 degrees to make a crosshatch pattern. An instant-read thermometer inserted into the center should read at least 150 to 155 degrees F.
- Transfer pork to cutting board and let rest 8 to 10 minutes. Slice and serve with blackberry sauce.

BACON-WRAPPED BLACKBERRY PORK ROAST

- Combine the preserves, 1 tablespoon vinegar, the mustard, thyme and 1/2 teaspoon each salt and pepper in a small bowl. Poke the pork in a few spots with a paring knife, then rub with the garlic; season with salt and pepper. Rub the pork all over with the preserves mixture, then transfer to a large resealable bag and refrigerate at least 2 hours or overnight.
- About 20 minutes before roasting, remove the pork from the refrigerator and preheat the oven to 325 degrees F. Put the red onions in a metal roasting pan and set a rack on top. Wrap the pork with the bacon (see below), then set on the rack. Roast until the bacon is crisp and a thermometer inserted into the center of the pork registers 145 degrees F, about 1 1/2 hours. Transfer the pork to a cutting board; let rest 10 minutes.
- Meanwhile, make the gravy: Discard all but 2 tablespoons of the drippings from the pan. Place the roasting pan over 2 burners over medium-low heat and whisk in the flour until incorporated. Add the chicken broth and whisk until thickened, about 5 minutes. Add the remaining 2 tablespoons vinegar and season with salt and pepper.
- Remove the twine and slice the pork. Serve with the onions and gravy.
- How to wrap pork:
- Lay the bacon slices over the pork, overlapping them slightly and tucking them under.
- Tie a piece of kitchen twine around each slice to secure it.

- Season pork chops with salt and pepper.
- Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat.
- Add the pork and cook until browned and just cooked through, 2 to 3 minutes per side.
- Transfer to a plate. (Do not wash skillet).
- Add remaining 1 teaspoon oil to the pan.
- Add shallot and thyme; cook, stirring, for 30 seconds.
- Add port (or tea), black currant nectar (or blackberry or blueberry juice), broth and vinegar; bring to a boil, scraping up any browned bits.
- Cook, stirring occasionally, for 5 minutes to reduce sauce and intensify flavor.
- Mix cornstarch and water in a small bowl.
- Add to the sauce and stir until lightly thickened.
- Reduce heat to low.
- Add blackberries and butter.
- Simmer, stirring, just until the butter has melted.
- Return the pork chops and any accumulated juices to the pan; turn to coat with sauce.
- Serve immediately over buttered & parslied egg noodles, and peas.
