MUSHROOM STUFFED SOLE

Mushroom Stuffed Sole image

Thin fillets of sole are easy to roll around a savory mushroom filling (which can be made ahead to save time) and baked for an easy but elegant dinner. Top with a squeeze of fresh lemon and chopped fresh herbs for color. If you do not cook with wine, use half lemon juice and half water or fish broth.

Provided by Sally Cameron

Number Of Ingredients 7

A half recipe of Mushrooms Duxelles
12 ounces small (thin fillets of sole)
1 tablespoon olive oil (divided use)
1/4 cup dry white wine
Salt and pepper (to taste)
Half of a lemon
1 tablespoon fresh chopped parsley for garnish (optional)

Steps:

  • Pre-heat the oven to 400°. While oven is heating, place sole fillets smooth side down on a cutting board. Drizzle half of the olive oil over the fillets. Season with a sprinkle of salt and pepper.
  • Place approximately 1 1/2 tablespoons of the mushroom filling on one end of each fillet, spread it out, then roll the fillets. Place rolls, seam side down, in a small baking dish that has been sprayed with non-stick or drizzled with a little olive oil. Pour wine into the dish, drizzle fillets with remaining olive oil, and sprinkle with salt and pepper. Cover dish with foil.
  • Bake approximately 12-15 minutes. Timing will depend on your ovens and how thick the fillets are. To test for doneness, use a digital thermometer. The stuffed fillets should reach 145° internally. To serve, squeeze fresh lemon juice over the top and sprinkle with parsley.

Sprinkle onions over fish fillets and pour wine over fish. Heat, covered with clear plastic wrap, in Microwave Oven 7 to 8 minutes or until fish flakes easily with a fork. Baste fish with wine and onions several times during cooking. Set poached fish aside. 3. In a medium-sized, heat-resistant, non-metallic bowl melt the 1/3 cup butter or margarine in Microwave Oven 45 seconds. Add mushroom slices and heat, uncovered, in Microwave Oven 2 minutes. 4. Blend in flour until smooth. Gradually add cream, stirring until smooth. Return sauce to Microwave Oven and heat, uncovered, 4 to 5 minutes or until mixture is thickened and smooth. Stir occasionally. 5. Add 1/2 cup fish liquid from baking dish to mushroom sauce and stir until well blended. 6. Place fish fillets on a heat-resistant, non-metallic serving platter. Spoon mushroom sauce over fish. Heat, uncovered, in Microwave Oven 2 to 3 minutes or until heated through. Sprinkle with paprika just before serving. Note: Many fish markets sell sole pre-stuffed with salmon However, if this is not available, you can roll a piece of fresh salmon (about 1-inch in diameter and 4-inches long) in a small fillet. Fasten each roll with a toothpick. Unstuffed sole or sole that has been stuffed with shrimp, clams, scallops or crabmeat can also be used for this recipe. It is advisable to roll sole fillets even though they may not be stuffed.

Pan-Seared Sole with a White Wine Mustard Sauce and Zucchini Fritters and Rice Almandine with Cranberries image

Provided by Food Network

Categories     main-dish

Time 1h10m

Yield 3 servings

Number Of Ingredients 20

3 sole fillets
Salt and pepper
Olive oil, for sauteing
White Wine Mustard Sauce, recipe follows
Green olives, chopped
Zucchini Fritters, recipe follows
Rice Almandine, recipe follows
1 cup white wine
1 cup yellow mustard
1 cup heavy cream
3 zucchini
Salt
1 egg, beaten
1/2 cup Italian bread crumbs
1 clove garlic, minced
Vegetable oil, for sauteing
1 cup long grain rice
1/8 cup dried cranberries
1/4 cup slivered almonds
1 tablespoon butter

Steps:

  • Remove skin the sole fillets with a knife, leaving only the white flesh of the fish. Season each fillet on both sides with salt and pepper. In a large saute pan, heat just enough olive oil to cover the bottom of the pan, over high heat. Place the sole fillets in the pan and sear both sides until they are slightly brown and cooked through. Top each fillet with the white wine mustard sauce and diced green olives. Plate with Zucchini Fritters and Rice Almandine.
  • In a medium sized saute pan, reduce the wine by 1/2 over medium-high heat. Add the mustard and the cream and stir thoroughly until the flavors have combined.
  • Thoroughly clean the skin of the zucchini. With a standing grater, shred the zucchini and place in colander to drain the water. Add salt, to taste. In a medium sized bowl, combine the egg, breadcrumbs, and garlic. Add the zucchini to the bowl and toss until it is covered with the breadcrumb mixture. Form the mixture into small patties. In a large saute pan, heat vegetable oil over medium-high heat, and add the patties to the pan. Cook the fritters until both sides are browned and crispy.
  • In a small pot, bring 2 cups of water to a rolling boil. Add the rice to the pot and reduce the heat to low. Cover the pot and allow the rice to simmer until all of the water is absorbed. In a small pan, saute the cranberries and almonds in butter over medium heat. Add the cranberries and the almonds to the rice before serving.

Categories     dinner, lunch, quick, weekday, main course

Time 30m

Yield Four servings

Number Of Ingredients 10

4 skinless, boneless fillets of sole (or use any nonoily white-fleshed fish such as fluke or flounder), about 1/4 pound each
Salt to taste, if desired
Freshly ground pepper to taste
3/4 pound fresh spinach
2 tablespoons butter
2 tablespoons finely chopped shallots
1/2 pound fresh mushrooms, thinly sliced, about 3 cups
1/8 teaspoon freshly grated nutmeg
1 egg yolk
Ginger butter sauce (see recipe)

  • Heat the butter in a skillet and add the shallots. Cook briefly, stirring, and add the mushrooms, salt, pepper and nutmeg. Cook, stirring, until the mushrooms are wilted. Add the spinach and cook until wilted. Continue cooking until all the moisture evaporates.
  • Scrape the mixture into a bowl and add the egg yolk. Let stand until cool.
  • Place the fillets of fish on a flat surface, skinned side up. Spoon an equal portion of the spinach and mushroom mixture onto the center of each fillet. Roll the fillets jellyroll style to enclose the filling.
