1 1/2 cups Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cayenne pepper
1/2 cup brown sugar
1/2 cup vegetable oil
1/3 cup maple syrup
2 large eggs
1 teaspoon vanilla extract
2 cups shredded zucchini
1 cup semi-sweet chocolate chips

Steps:

  • Whisk together dry ingredients (flour, salt, baking powder, baking soda, cayenne pepper) in a bowl.
  • Whisk together sugar, vegetable oil, syrup , eggs, and vanilla extract in a separate bowl.
  • Stir dry ingredients into wet ingredients. Then fold in zucchini and chocolate chips.
  • Pour thick batter into a 9x5-inch loaf pan that has been lightly buttered and floured.
  • Bake bread at 350°F for 70-75 minutes until a tester comes out clean.
  • Let bread cool for 5 minutes in pan, then invert and carefully remove bread. Let cool for another 15-20 minutes before slicing.
  • To store, wrap tightly in plastic wrap and store in the fridge for up to a week.

This zucchini bread recipe is super moist and super spicy, loaded with cinnamon, nutmeg, and cloves. I tried several recipes before I asked my mom for her recipe. I go to the farmers market every Saturday and get these huge zucchinis, and this is the perfect use for them. It reminds me of my childhood. The loaves can be frozen and are great as gifts. People love them.

2 cups white sugar
1 cup vegetable oil
3 eggs
1 teaspoon vanilla extract, or more to taste
2 cups shredded zucchini
3 cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon salt

1 teaspoon ground nutmeg
¼ teaspoon baking powder
¼ teaspoon ground cloves
½ cup chopped walnuts
½ cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5-inch loaf pans.
  • Beat sugar, oil, eggs, and vanilla extract together in a bowl until smooth; fold in zucchini. Stir flour, cinnamon, salt, baking soda, nutmeg, baking powder, and cloves together in a separate bowl; gradually stir into sugar mixture until batter is mixed. Fold walnuts and raisins into the batter; pour into the prepared loaf pans.

Nonstick cooking spray
1 large zucchini
1 cup packed light-brown sugar
2 tablespoons granulated sugar
2/3 cup vegetable oil
2 teaspoons vanilla extract
2 large eggs
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
3/4 teaspoon salt

Steps:

  • Preheat oven to 350 degrees. Lightly coat a 9-by-5-by-3-inch loaf pan with cooking spray, and set aside. Grate zucchini on the large holes of a box grater (to yield 1 3/4 cups); set aside. In a large bowl, whisk together sugars, oil, vanilla, and eggs.
  • Into a small bowl, sift together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt. Add flour mixture to egg mixture, and stir to combine well. Stir in grated zucchini.
  • Pour batter into prepared pan, spreading evenly. Bake until a toothpick inserted in center of loaf comes out clean, 45 to 55 minutes. Cool in pan 10 minutes; invert onto a wire rack, then reinvert, top side up. Cool completely before slicing.

2 cups sugar
1 cup canola oil
3 large eggs, room temperature
3 teaspoons vanilla extract
2-1/2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon baking powder
2 cups shredded peeled zucchini

Steps:

  • In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Combine the flour, cocoa, salt, baking soda, cinnamon and baking powder; gradually beat into sugar mixture until blended. Stir in zucchini. Transfer to 2 greased 8x4-in. loaf pans., Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. 3 cups of flour, I used 1/2 white, 1/2 whole wheat, but you can use whatever combination you'd like, including gluten free
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
2 teaspoons nutmeg
1/2 teaspoon cardamom, optional
1/4-1/2 cup cocoa powder
1 cup brown sugar
1 cup white sugar
1/2 cup oil + 1/2 cup melted butter**
1 tablespoon vanilla
3 eggs
3 zucchinis - shredded
1/4 cup chopped pecans or walnuts, optional

Steps:

  • Preheat oven to 325 degrees.
  • Mix together the flour, saltbaking soda, cinnamon, nutmeg, cardamom, and cocoa powder in a large bowl. Set aside.
  • In another bowl, mix together the oil and butter with sugar, eggs, and vanilla.
  • Gently mix the wet ingredients in with the dry ingredients.
  • Fold in the zucchini and nuts until everything is combined.
  • Spray two loaf pans with cooking spray. Divide batter between the two equally.
  • Bake for 40-50 minutes, or until a knife comes out clean.
  • Let cool in pan 5 minutes and then remove to a cooling rack.

I found this in a magazine promoting our Saskatchewan grains and had to try it. This bakes up with a wonderful texture and who doesn't love chocolate and spice? The magazine suggested spreading it with ginger marmalade which sounds wonderful. Slices of this bread will carry well in a packed lunch.

5 tablespoons unsalted butter, melted, plus more for greasing the pan
1 1/2 cups flour (spoon flour into a dry-measure cup and level off)
1/3 cup cocoa powder, sifted after measuring (Dutch-process or alkalized)
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon ground ginger
2 large eggs
1/2 cup sugar
1/3 cup packed dark brown sugar
2/3 cup sour cream (low-fat sour or regular )

Steps:

  • Lightly grease loaf pan with a little unsalted butter, then line the bottom of the pan with parchment or wax paper cut to fit; butter the paper as well.
  • Position a rack in the middle level of the oven; preheat to 350°F.
  • Combine the flour, cocoa, baking powder, salt and spices in a bowl or on a large piece of parchment or wax paper.
  • Whisk the eggs in a large bowl to break them up, then whisk in both sugars.
  • Whisk for a minute, or until the mixture lightens, then whisk in the 5 tablespoons of butter and the sour cream.
  • Add the flour mixture to the egg mixture all at once; gently whisk until smooth.
  • Scrape the batter into the prepared pan and smooth out the top, pushing the batter evenly into the corners.
  • Bake on the middle oven rack for 35 to 40 minutes, until the bread has risen and a toothpick or a narrow-bladed knife inserted into the center of the bread emerges clean.
