1 ¼ cups applesauce
1 cup white sugar
½ cup vegetable oil
2 eggs
3 tablespoons milk
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
¼ teaspoon salt
½ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, combine the applesauce, sugar, oil, eggs and milk; beat well. Sift in the flour, baking soda, baking powder, cinnamon, nutmeg, allspice and salt; stir until smooth. Fold in the pecans. Pour batter into prepared loaf pan.
  • Bake in preheated oven for 60 minutes, or until a toothpick inserted into center of the loaf comes out clean.

4 pounds apples, such as McIntosh, Gala, and Braeburn
1/4 cup fresh lemon juice (from 2 lemons)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
3 tablespoons dark-brown sugar (optional)

Steps:

  • Peel, core, and slice apples.
  • In a large pot, bring apples, lemon juice, spices, and 1 1/2 cups water to a boil over high. Reduce heat and simmer until apples are very soft and falling apart, 25 to 30 minutes.
  • Mash with a potato masher or pulse in a food processor until smooth with small chunks remaining. (Add sugar, if using.)
  • Let cool, then transfer applesauce to airtight containers.

The result was a dozen gloriously moist and perfectly sweet muffins. To be honest, I couldn't believe a recipe that was literally thrown together in under 30 minutes, from inception to final product, actually resulted in the most divine one-bowl muffins ever. The next morning, my family devoured every last crumb of the dozen "accident" muffins. I call that recipe success!

8 TB butter (melted)
1 cup unsweetened applesauce
1/2 cup honey
1 egg
2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1 cup old-fashioned rolled oats (not instant oats or steel cut oats)
1 cup whole wheat flour (not white wheat or whole wheat pastry flour)
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

Steps:

  • Preheat the oven to 350F.
  • In a large bowl, whisk together the melted butter, applesauce, honey, egg, and spices.
  • In a food processor*, pulse the oats for 40-60 seconds, until they are ground into a grainy, flour-like consistency. Add the oats to the liquid ingredients, along with the whole wheat flour, baking powder, baking soda, and salt. Fold the ingredients together until combined.
  • Grease a muffin pan, or line a muffin pan with muffin liners. Scoop the muffin batter into the muffin pan (I use an ice cream scooper). Bake for 20-22 minutes, until the muffins are cooked through. When the muffins are done baking, they won't feel squishy when the tops are touched, rather the tops should feel "springy" and firm. I know, that's a bit of a crazy description. Allow the muffins to cool for about 5-10 minutes before serving. Leftover muffins freeze very well for a quick and easy breakfast (learn more).

4 Ribeye pork rib chops
Kosher salt and ground black pepper
1-1/2 tablespoons vegetable oil
1-1/2 tablespoons extra virgin olive oil
4 Gala apples, chopped into 1/2-inch pieces
1/2 cup light brown sugar
3 tablespoons apple cider vinegar
1 teaspoon red pepper flakes
1/2 teaspoon cayenne pepper
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
1 teaspoon finely chopped fresh rosemary

Steps:

  • Make the Pork Chops: Preheat oven to 425 degrees F. Sprinkle both sides of pork chops with salt and pepper.
  • Heat large skillet over medium-high heat; add vegetable oil. Place chops in skillet; cook 3 minutes per side.
  • Transfer to oven and bake 6 to 8 minutes or until internal temperature reaches 145 degrees F for medium-rare (or 160 degrees F for medium). Transfer chops to serving platter and let rest 3 minutes before serving.
  • Meanwhile, make the Spicy Applesauce: Heat olive oil in medium pot over medium-high heat. Add apples and cook 5 minutes, stirring occasionally. Add brown sugar, vinegar, red pepper flakes, cayenne, salt and pepper; cook an additional 5 minutes, stirring occasionally. Remove from heat and stir in rosemary. Serve pork chops with warm applesauce.

2 1/2 pounds apples, a mixture of Red Delicious and Granny Smith (10-12)
2/3 cup sugar
1 1/4 cups apple juice
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves

Steps:

  • Peel, core, and cut the apples into 1 1/2-inch pieces; place in a medium saucepan with sugar and 1/4 cup apple juice. Cook over medium-low heat, stirring, until apples are soft enough to mash, 50 to 60 minutes.
  • Add the remaining cup of apple juice, and continue to cook until the apples are very soft and break down, about 30 minutes. Using wooden spoon, stir to break large pieces. If applesauce gets too dry, add more juice, 1/4 cup at a time as needed. Remove saucepan from heat, and whisk apples until smooth. Stir in cinnamon, nutmeg, and cloves. Serve at room temperature.

1/4 cup baking mix (recommended: Bisquick)
2 tablespoons brown sugar

1 (.74-ounce) packet spiced cider drink mix (recommended: Alpine)

Steps:

  • Lightly spray a 6-cup souffle dish with butter-flavored cooking spray and set aside. Make a foil ring 1/2-inch thick for souffle dish to sit on and place inside the bottom of a 5-quart slow cooker.
  • In a large bowl, combine cake mix, applesauce, eggs, pumpkin pie spice, and almond extract. Using an electric mixer beat on low speed for 30 seconds. Scrape down sides of bowl and beat for 1 minute on medium speed. Pour into souffle dish and set aside.

  • Cool in souffle dish on wire rack for 15 to 20 minutes before removing and slicing. Serve with whipped topping.
