APPLE PECAN PRALINE BREAD

Steps:
- Preheat oven to 350 degrees. Toast 1/2 cup of the pecans in a single layer in a shallow pan for 5-7 minutes.
- With an electric mixer beat together sour cream, sugars, eggs and vanilla.
- In a medium bowl, stir together flour, baking powder, soda, cinnamon and salt. Add to sour cream mixture, beating just until blended. Stir in apples and 1/2 cup toasted pecans.
- Spoon batter into a greased and floured 9×5-inch loaf pan. Sprinkle with remaining 1 cup chopped pecans; lightly press pecans into batter.
- Bake for 1 hour to 1 hour and 10 minutes or until a wooden pick inserted in the center comes out clean. Cover loaf with aluminum foil after 50 minutes to prevent excessive browning. Cool in pan for 10-15 minutes before turning onto wire rack to cool completely.
- To make caramel topping, bring butter and brown sugar to a boil in a heavy saucepan over medium heat, stirring constantly; boil 1 minute. Remove from heat, and spoon over top of bread; let cool completely before serving. (about 1 hour).

A deliciously moist cake, it is full of flavour and I challenge anyone not to love this recipe. It is best eaten the day after it is cooked so plan ahead.

- Pre-heat oven to gas 4 or 180.
- Line a 2lb loaf tin with greasproof paper.
- Peel and core the apples, cut into chunks, place in a pan and cover with water, bring to the boil and simmer until the apples are just starting to soften. Drain and add a little sugar to taste (I prefer the apples to be quite tart). Leave to one side to cool.
- Put all dry ingredients into a large bowl together and mix roughly.
- Next add all wet ingredients at same time, mix until all of the flour mixture is taken up.
- Pour into the loaf tin and cook for 1 1/4 - 1 1/2 hours until browned.
- When the cake is cooked, LEAVE IT IN THE TIN until cool, then wrap in foil.
- This cake is best left until the next day to eat (if you can wait that long!).

- Preheat oven, grease& line the base of a 9x5 loaf pan with baking/parchment paper.
- Sift flour and baking powder into a bowl.
- Cut butter into the flour and mix until the mixture looks like fine breadcrumbs.
- Add in the sugar and pecans.
- Beat eggs together with milk and lemon zest in a seperate bowl.
- Stir in maple syrup.
- Add this to the flour mixture and gently mix together.
- Do not overmix, only until all dry ingredients have become moist.
- The batter should be lumpy.
- Pour batter into pan and smooth out the surface of the batter.
- Bake in the oven for about 50-60 minutes or until cake is lightly browned.
- To make sure, insert a toothpick into the center of the cake and if it comes out clean then the cake is ready.
- Cool cake in pan for at least 10 minutes then turn out and let it cool on the rack.
- (For Icing) Sift the icing sugar into a small bowl and stir in the lemon juice to create a smooth icing.
- Drizzle over the loaf and then sprinkle the chopped pecans over the icing.
- Wait until the icing is set then slice.

WONDERFUL SWEET POTATOES WITH PECAN PRALINE TOPPING
I got this recipe from my niece who had served it at a family Thanksgiving get together a couple of years ago. I personally think these are the best sweet potatoes I've ever had. Definitly not low cal., but oh so delicious.

- Mix together mashed potatoes, butter, eggs, vanilla and pumpkin pie spice.
- Pour into a 9x13 baking dish.
- Mix together flour, butter, brown sugar and pecans and crumble over the top of the sweet potato mixture.

- Preheat oven to 350 degrees.
- Prepare a 9" deep-dish pie plate.
- Set oven rack to lowest position.
- Prepare pie crust.
- Wrap in plastic wrap; refrigerate for at least 20 minutes.
- Roll out the pie dough into a 14" circle; fit into a 9" deep-dish pie pan; trim and flute the edge.
