3-MINUTE FRIED HALLOUMI CHEESE MEZE
Halloumi is a fabulous cheese from Cyprus and a favorite in Greek cooking. It's an ideal frying cheese because it doesn't melt.

Steps:
- Gather the ingredients. Heat a nonstick frying pan over high heat.
- Dry the halloumi cheese slices by blotting them with a paper towel. Place the slices on a plate and brush both sides lightly with the olive oil to coat each thoroughly.
- Sear the cheese in the hot pan until each slice develops a deep brown crust, about 1 minute on the first side and 1 to 2 minutes on the other.
- Place the fried cheese on a plate and garnish with the pepper, oregano or mint leaves, tomatoes, and vinaigrette.

CYPRIAN HALLOUMI CHEESE
I've been searching for ages for this recipe with no luck.I asked Uncle Phaedrus from www.hungrybrowser.com and he found it for me!!!! I tried it, it was so good I added the tsp of mint. PetsRus (Annelies) this one is for you!!!! Requires 2-3 Muslin bags or similar

Steps:
- To fresh milk add rennet and leave till set (about 30 minutes).
- Break up and place resulting mass into muslin in about two lots (this depends on the amount of milk used).
- Drain any whey from curds back into pan, leave to stand in muslin for about half an hour after which they will be firmer and in oval shape.
- Meanwhile bring whey to the boil.
- any curds which form on the top may be gathered and used fresh/ add sugar and cinnamon or placed in muslin and hung to dry to form a hard cheese suitable for grating onto pasta etc.
- Once milk has come to the boil, remove soft curds from muslin and place into boiling pan.
- Simmer gently until the cheese floats to the top, but certainly for approximately 20 minutes.
- Remove cheese, if liked, sprinkle with salt and fold in half and place a weight on top.
- Leave in fridge for at leave 2 hours before use.
- It may be stored in a jar with a small amount of the whey (keep cool).
- The remaining whey may be used to boil spaghetti in, when cooked, cooked chicken may be added to form a soup, serve with bread (this is a typical Cypriot lunch, nothing is wasted) The soft curds which form on the top to which sugar and cinnamon are added can be made in to'cakes' filo type pastry is filled with the mixture and then deep fried for a few moments, delicious!

CYPRIOT FRIED HALOUMY CHEESE (SAGANAKI HALOUMI)
With gluten free option. A very quick to prepare tasty meze. We enjoy this as a delicious breakfast item or it could always be a snack! I serve it with pita bread but a crusty bread would be very good. Modified from The Complete Middle East Cookbook by Tess Mallos, Cyprus section.

Steps:
- Cut cheese into 1/4 inch slices, dip in water and dredge in flour if desired (I do like it this way).
- Heat enough oil in a small frying pan to cover base, fry cheese until slightly golden on each side.
- Squeeze some lemon on top and serve with rest of the lemon wedges and a crusty bread or some pita to dip into the lemon flavoured oil.

- Heat honey and thyme in a small saucepan over medium-low, swirling pan occasionally, until warm (do not let honey boil). Reduce heat to low and keep warm until ready to use.
- Cut Halloumi into 8 slices. Lightly beat egg in a small bowl, then place semolina flour in a medium bowl. Working with 1 or 2 pieces at a time, dip Halloumi into egg, letting excess drip back into bowl, then gently toss in semolina flour, shaking off any excess.
- Heat oil in a large nonstick skillet over medium-high. Cook Halloumi until golden brown, about 2 minutes per side. Transfer to paper towels and let drain 1 minute.
- Mound arugula on a large plate or platter and arrange Halloumi and figs on top. Drizzle with warm honey and scatter pomegranate seeds over. Season with a few grinds of pepper.
