SEASONED BAKED POTATO WEDGES
Recipe video above. Crunchy wedges seasoned so they taste like the wedges you can get from the freezer section at the supermarket! I found that the trick to make crunchy wedges is to use the right amount of oil. Too much results in soggy wedges and the seasoning comes off!

Steps:
- Preheat oven to 220°C/430°F (200°C/390°F fan/convection)
- Mix the Seasoning ingredients.
- Cut the potatoes in half lengthwise, then cut each half into 4 "wedges" (so you get 8 pieces from each potato). If your potato is small/medium, just cut into 6 wedges.
- Place potatoes in a large bowl, drizzle over oil and seasoning. Toss with hands.
- Spread out on tray, ensuring cut side lies flat on the tray.
- Bake for 35 to 45 minutes, turning once, or until dark golden brown and crispy.
- Serve immediately!
- Dipping sauces: Classic Aussie way is with sour cream and sweet chilli sauce. Otherwise, try tomato sauce/ketchup, BBQ sauce, yogurt, ranch, aoli.

SLICED BAKED POTATOES
An easy way to give the bland potato a lot of new flavor ! The light coating of butter and cheese gives the potatoes a crisp outside. These are fun to make, and look delightful ! Oven baked, or microwave. Oven bake time: appx. 1 hour. Microwave bake time 16-20 minutes.

Steps:
- Peel potatoes only if the skin is tough, otherwise, just scrub and rinse them.
- Cut potatoes vertically, into thin slices, but not all the way through. Lay a spoon next to the potato to prevent knife from cutting all the way through. (A wooden spoon works great.).
- Put potatoes in a baking dish. Fan them slightly.
- Sprinkle with salt, and drizzle with the melted butter. Sprinkle with herbs.
- Bake potatoes at 425 degrees for about 50 minutes.
- Remove from oven. Sprinkle with cheeses.
- Bake potatoes for another 10-15 minutes until lightly browned, cheeses are melted, and potatoes are soft inside. Check for doneness with a fork.
- To microwave: Prepare potatoes as above, and place in a microwave safe dish or pan.
- Sprinkle with melted butter and herbs.
- Microwave on High power for 10 minutes, rearranging the potatoes after 5 minutes if your microwave does not have an automatic turn table.
- Let rest for 5 minutes.
- Sprinkle with grated cheese and Parmesan cheese.
- Microwave for another 4-6 minutes on High power until cheeses are melted, and potatoes are soft.
- Sprinkle with salt, and serve.
- Note: You may substitute 2-3 teaspoons dried herbs of your choice for the fresh, if you prefer.
- After the potatoes are done, a little sour cream on top, sprinkled with bacon bits might be good.
HOMEMADE SPICED POTATO WEDGES (BAKED)
These Homemade Spiced Baked Potato Wedges are full of flavour, deliciously moreish and taste gorgeous with my Low Fat Ranch Dipping Sauce.

- Preheat the oven to 400 F/ 200 C/ gas mark 6. You will need a large non-stick baking tray.
- Combine all the spices and mix them well. Set aside.
- Peel the potatoes and cut into wedges, 5-6 per potato (they won't all look identical but should have similar thickness). Line a large bowl with 2 sheets of paper towel (they should stick outside the bowl), put the wedges in the bowl, toss, then bring the opposite ends of the paper towels together and pat the wedges dry until all the moisture has been absorbed (the towels will be wet through). Use another towel if you need to.
- Sprinkle the wedges with the spice mixture, drizzle with oil and using a spatula or your hands mix together until all the wedges have been evenly coated in the spice and oil mixture.
- Spread the wedges on top of the baking tray without overcrowding it (line it with parchment paper if not using non-stick tray). Bake on the top oven shelf for 35-40 minutes, turning them over once halfway through.
- Remove from the oven and serve immediately, either with my Low Fat Ranch Dipping Sauce or a sauce of your choice. They taste great on their own too!

SPICED + CRISPY BAKED POTATO WEDGES (OIL-FREE)
These potato wedges are oil-free, yet crispy as can be. First steamed, then tossed in a 6-spice mix and roasted in the oven. They are full of flavour or so more-ish.

- Preheat oven to 450F/230C. Bring a pot of water to boil. Chop potatoes into wedges. Place in a steamer basket or large colander and set over pot of boiling water. Cover and steam for 3-5 minutes, or until slightly tender, but not cooked.
- In a bowl make your 6-spice mix: add nutritional yeast, garlic powder, thyme, cinnamon, paprika, and sea salt. Mix to combine. Transfer lightly-steamed potatoes to a large mixing bowl and sprinkle with 6-spice mix. Toss gently until all the potatoes are covered in spice.
- Line a baking tray with parchment paper and arrange potatoes in an even layer. Be sure not to overcrowd potatoes (or they won't get as crispy). You may have to use two baking trays.
- Bake in the oven for 15 minutes, then flip wedges and continue baking for another 10-15 minutes, or until crispy and golden.

- Peel potatoes and cut in half lengthwise, then cut each half into 3 or 4 wedges.
- Place potato wedges in a large bowl and cover with cold water and let sit for about 5 minutes while preparing the coating.
- Preheat oven to 450 degrees F.
- In a large mixing bowl, combine bread crumbs, Italian seasoning, paprika, seasoning salt, black pepper, and granulated garlic powder; mix well.
- In a medium size bowl or saucepan, melt butter.
- Dry wedge potatoes on paper towelling.
- Drop several potato wedges into the melted butter and mix to coat with butter.
- Now roll potatoes in the crumb/spice mixture to coat well.
- Place coated potatoes directly on the middle rack in the oven, keeping them separated.
- Bake in preheated 450 degree F oven for 15 to 20 minutes or until potatoes are nicely browned and done to your liking.
- Serve immediately with a Dill Dip or Garden Dip.
HOLLY TATERS - SEASONED BAKED POTATOES
I grew up with a chain of fried chicken fast food joints. They had the best seasoned potatoes. Below is my late grandma's recipe for baking instead of frying. These are also great to make ahead and bake later. I take these to work when we have lunch for the staff.

- Preheat oven to 375. Melt stick of margarine in METAL baking pan(glass pans seem to make the taters soggy) . Wash and quarter the potatoes - keep the skin on. In a plastic zip-loc bag put all the dry ingredients. Coat the potatoes and place in a single layer in pan. Bake for 45 minutes.
- I keep the mix in the fridge for making one or two potatoes.

- Wash and clean the potatoes.
- Rub them down with olive oil.
- Slice each potato down the center, but do not cut it all the way open, but go deep.
- Place 2 slices of bacon inside.
- Place several slices of onion.
- Season to your likings with salt, pepper,& garlic powder.
- Drizzle inside with olive oil.
- Close tight (you can use toothpicks if needed).
- Roll tight in foil so to keep potatoes closed, then twist sides of foil inches.
- Bake at 400°F in oven or on BBQ grill until they are tender.
