ROASTED LEMONADE

12 lemons, softened by rolling, or placed in a microwave for 30 seconds, halved
2 cups sugar
1/2 vanilla bean, scraped
Water, to cover the lemons
4 to 6 cups water
1/2 cup freshly squeezed lemon juice
Sugar, to taste
Ice
Mint leaves, for garnish

Steps:

  • Preheat oven to 375 degrees.
  • Place the lemons, sugar, vanilla bean scrapings and water in a roasting pan and stir. Place roasting pan in the oven and roast, stirring occasionally for about 30 minutes, until the edges of the lemons begin to caramelize. Remove the roasting pan from the oven and cool to room temperature. Place a strainer over the bowl of a food processor and squeeze the juice from the lemons. Strain the liquid from the roasting pan into the processor bowl. De-seed and roughly chop 2 lemon halves and place in the food processor. Process the lemon juice and lemon pieces until smooth. Strain the contents of the food processor into a large pitcher, add 4 to 6 cups water, lemon juice, sugar to taste and ice, stir well. Pour into ice-filled glasses and garnish with mint leaves.

Vanilla seeds roasted in a skillet with lemon halves and sugar offer a surprising flavor in a sparkling lemonade made with both club soda and still water.

10 lemons, trimmed, halved crosswise, and seeded
1 cup sugar
1 cup water
1 vanilla bean, split and scraped, pod reserved
1 1/2 to 2 cups club soda

Steps:

  • Preheat oven to 375 degrees. Place lemons, cut side up, in a 12-inch ovenproof skillet or a large baking dish. Sprinkle with sugar, then add the water and vanilla seeds and pod. Roast until edges of lemons are golden brown, about 25 minutes. Let cool.
  • Squeeze the juice and pulp from lemons into a blender. Remove vanilla pod, and add syrup in the skillet to the blender. Puree, then strain through a sieve into a pitcher, pressing to extract liquid and some pulp.
  • Fill glasses with ice. Pour 3/4 cup lemonade into each glass. Top with 1/4 cup club soda. (Or cover, and refrigerate lemonade for up to 3 days.)

SPARKLING SUMMER LEMONADE

1 cup sugar
3 sprigs fresh mint, plus more for serving
1/2 cup lemon juice plus 1 lemon, sliced into wheels
1/2 cup blackberries
1/2 cup raspberries
1/2 cup strawberries, halved
2 liters seltzer or soda water

Steps:

  • Pour the sugar and 1 cup water into a small pot and place over medium heat. Bring to a simmer, stirring until the sugar is dissolved. Remove from the heat and add the mint sprigs. Let the mint steep for 10 minutes, then discard the mint.
  • Add the mint simple syrup to a large pitcher, punch bowl or serving canister. Add the lemon juice, blackberries, raspberries, strawberries and lemon wheels and give a good stir. When ready to serve, fill the pitcher halfway with ice. Top the mixture with seltzer and give a good stir. Serve over ice with sprigs of fresh mint.

I have made a few fruity varieties of fresh lemonade over the years, but this one reminded me of those bottled "French Lemonade" products sold at Trader Joes. I made only a double batch for a party last summer, and it was gone in 15 minutes....unfortunately I didn't have any more :(

2 cups vanilla syrup, I like to use the Toriani Sugar Free Vanilla but you can make your own
2 cups club soda
ice
lemon slice, to garnish

  • Mix together lemon juice, syrup, and club soda shortly before serving.
  • Pour into an ice-filled glass and garnish with a lemon slice. Enjoy this refreshing bubbly drink!

3/4 cup simple syrup, recipe follows
2 tablespoons vanilla bean paste
8 cups cold sparkling water
crushed ice
fresh basil or mint leaf, for garnish
lemon slice, for garnish
3/4 cup sugar
3/4 cup water

Steps:

  • Whisk together the lemon juice, Simple Syrup and vanilla bean paste in a large pitcher. If not serving immediately, refrigerate the pitcher.
  • To serve, add the sparkling water to the pitcher and stir to combine. Pour the lemonade into individual glasses of crushed ice. Garnish with a sprig of fresh basil or mint and a lemon slice.
  • Simple Syrup:.
  • In a small saucepan bring the sugar and water to a boil over medium heat, stirring until the sugar is dissolved. Remove from the heat and cool.

1 1/2 cups lemon juice
1 cup fruit sugar or 1 cup berry sugar
1 (750 ml) bottle soda water
thin lemon slice
mint sprig

Steps:

  • In a large pitcher, combine cold water, lemon juice and sugar, stir until sugar dissolves.
  • Cover and refrigerate until chilled.
  • Just before serving, gradually add soda water down edge of pitcher, stir to mix.
