When I'm out side sitting under a tree, I will have a nice glass ginger orange cocktail with a nice slice of pound cake , I'm in heaven.

- 1. Preparation Place ginger in a piece of cheesecloth, and squeeze juice from ginger into a large pitcher; discard cheesecloth and solids. Stir sparkling wine, orange juice, and pineapple juice into ginger juice. Serve over ice. Note: We recommend Freixenet Spumante for sparkling wine.

- Stir 2 bottles sparkling wine, 1 container orange juice, and 1 can chilled pineapple juice into ginger juice.
- Serve over ice, with orange slices and fresh mint sprigs for garnish.
- MOCKTAIL:.
- In a large pitcher, stir together 1 container orange juice, 1 bottle chilled ginger ale, and 1 can chilled pineapple juice.
- Serve over ice, with orange slices and fresh mint sprigs for garnish.

Steps:
- Simmer water, fresh ginger, and 1/2 cup sugar in a small saucepan, uncovered, 10 minutes. Remove from heat and let steep 15 minutes. Strain syrup through a sieve into a bowl, discarding solids. Chill until cold.
- Finely grind crystallized ginger with remaining 1/4 cup sugar in a blender or food processor, then spread on a small plate.
- Run lemon wedges around rims of glasses, then dip rims into ginger sugar. Put 1 tablespoon syrup into each glass and top off with Prosecco.
