SWEET CORNBREAD
For all those cornbread lovers who want a cross between cornbread and cake, this is it -- a tender, sweet cornbread that is lovely and versatile. Enjoy it with a holiday meal or serve it with berries and whipped cream for a light dessert.

- Preheat the oven to 350 degrees F. Butter and lightly flour a 9-inch cake pan. Be sure to remove any excess flour from the pan.
- Whisk together the flour, cornmeal, sugar, baking powder, baking soda and salt in a large bowl.
- Whisk together 8 tablespoons of the butter with the buttermilk, eggs and vanilla in a small bowl until smooth.
- Pour the butter mixture into the cornmeal mixture and stir until thoroughly combined. Pour the batter into the prepared pan and bake until a cake tester comes out clean, about 30 minutes.
- Let cool for 15 minutes before removing from the pan. Mix the honey and the remaining 2 tablespoons butter together in a small bowl, then spread all over the top of the cornbread to finish. Serve immediately or at room temperature.
GRANDMA'S BUTTERMILK CORNBREAD
Fluffy, moist skillet cornbread-just like Nana used to make! Serve with butter and honey.

Steps:
- Preheat the oven to 425 degrees F (220 degrees C).
- Generously oil a seasoned 10-inch cast iron skillet. Place in the preheated oven; set a timer for 10 minutes.
- While the skillet is heating, place cornmeal, flour, sugar, baking powder, salt, and baking soda in a large bowl and mix together with a large spoon.
- Place eggs and oil in a medium bowl. Whisk in 1½ cups plus 2 tablespoons buttermilk.
- When 2 minutes remain on the timer, stir buttermilk mixture into cornmeal mixture using the spoon.
- Remove the skillet from the oven when the timer goes off. Pour batter into the hot skillet.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes.
- Cool cornbread in the skillet for 5 minutes. Place a plate on top of the skillet and invert cornbread onto the plate.

- Preheat oven to 425 degrees.
- Mix all ingredients enough to blend well, by hand with big blending fork or on low with a hand mixer, enough to blend well.
- Pour into a greased 8 inch square pan.
- Bake for 20 minutes.
- This can easily be doubled & put in a 9 x 13 inch pan.
GRAMMA LARRY'S SWEET CORNBREAD
This was in our local TV Cookbook called "KCTS Cooks" (favorite recipes) This was sent in by Eric Morse from Puyallup, Washington. He said this was handed down from his mother Lorraine, and everyone knew her as Grandma Larry, in Quilcene, Washington. He also said that you'll love this with chile! DH and I thought it rated a 5 star!

- Preheat oven to 350 degrees.
- Combine dry ingredients in a large bowl.
- Spray a 9X13-inch pan or large cast iron skillet with nonstick spray and place about 1 tbls butter in pan.
- Heat pan in oven until is melted to coat the bottom.
- Add eggs and butter to dry ingredients.
- Add enough milk so that batter is a little thicker than pancake batter.
- Pour in melted butter (from heated pan) and stir to combine.
- Pour batter into heated pan and bake for 30 to 35 minutes or until golden brown and a toothpick inserted in center comes out clean.
