2 tablespoons extra-virgin olive oil
1 pound extra-lean ground beef
½ onion, diced
¼ cup tomato sauce
6 large pimento-stuffed olives, diced
2 tablespoons sofrito (such as Goya®)
1 (1.41 ounce) package sazon seasoning with coriander and achiote (such as Goya®)
2 small garlic cloves, minced and crushed
½ teaspoon oregano
2 (14 ounce) packages frozen empanada dough (such as Goya® discos)
vegetable oil for frying

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add onion, tomato sauce, olives, sofrito, sazon, garlic, and oregano. Bring to a simmer and cook until mixture thickens, about 15 minutes.
  • Spoon 1 heaping tablespoon of meat mixture into the middle of a disco. Fold dough over, moisten edges, and press with a fork to seal. Repeat with remaining meat mixture and discos.
  • Pour oil into a saucepan and heat over medium-high heat. Fry pastelillos until golden brown and bubbly, about 3 minutes each. Drain on paper towels before serving.

MY DELICIOUS MEAT PATTIES/ PUERTORICAN PASTELILLOS
1 lb chopped meat/ beef or chicken
1/2 geen pepper/chopped
1 small onion chopped
3 clove garlic minced
1 tsp dry oregano
1/2 tsp cilantro, dried
1 Tbsp adobo powder
1 pkg sazon w/ culantro and achiote
1/2 tsp hot pepper sauce
1 TABLESPOON TOMATO PASTE
salt to taste if needed
corn oil for frying
1/4 c pimento stuffed olives
1 Tbsp tomato paste

Steps:

  • 1. put in a sauce pan the choped meat ,at medium heat put onions ,green pepper choped and minced garlic, also add cilantro dried and oregano 1 tablesoon of adobo seasoning and package of sazon w/ culantro and achiote annato for red color,also 2 tablespoon pimento olives,and tomato paste. stir with large spoon ,make sure eveything is blended taste and if you like it like that then don't add the salt, cover let meat cook at low heat,for 15 minutes. see if tender and well cook ,if too much extra oil drain and put aside ,ready to form the meat patties. take 1 disc dough for meat patties add 2 tablesppons fold with a fork press edges in one side and the other, do the same for all the pastelillo dic, when formed heat the oil and add 2 at a time at midium heat ,turning so it won't get darkend , just till golden brown, when finish arrange them in a flat plate and serve to ur kids or guess. makes 10 but if you want more , then double the amount, and buy more pattie disc. hope you enjoy this recepi, bon appettite.

This is my take on a traditional Australian meal. They kind of remind me of little sloppy joe pocket pies. Very tasty!

2 sheets frozen puff pastry, thawed but cold
1 1/2 lbs ground beef
1 medium onion, finely chopped
1 medium green pepper, finely chopped
2 tablespoons flour
3 tablespoons Worcestershire sauce
1 tablespoon tomato paste
1 tablespoon brown sugar
1 cup beef broth
1 tablespoon McCormick grill seasoning
1 teaspoon salt
1 teaspoon pepper
1 tablespoon oil
2 tablespoons butter
1 egg
1 teaspoon water

Steps:

  • Preheat oven to 400.
  • Heat oil and butter in large skillet. brown ground beef with the onion and green pepper, about 5-7 minute Drain fat.
  • Add flour and cook a minute more.
  • In a bowl, combine tomato paste, worcestershire, brown sugar, grill seasoning and broth. Stir into meat mixture.
  • Let simmer 10 minute until flavors meld. Take off heat and let cool a bit while you prepare pastry dough.
  • Combine egg and water for egg wash.
  • Roll cool pastry dough into sheets and cut each into 4 squares.
  • Brush edges of pastry square with egg wash and place 2-3 tbs. of meat mixture in center and fold into triangles.
  • Place onto pan and bake 12-15 minute or until pies are golden brown.
  • Serve with ketchup.

These spicy little meat pies are tasty and quite simple to make. The recipe is based on one posted in a forum about Ambergris Caye. Using a food processor to make the dough is not only a time-saver, but you'll know it's the right consistency when a ball forms in the bowl.

1/2 lb ground beef
1 small bell pepper, chopped finely
1 small onion, chopped finely
1/2 teaspoon ground black pepper
1/2 teaspoon dried thyme (or 1 tsp fresh thyme leaves)
1 tablespoon tomato sauce
1 tablespoon cumin powder
1 tablespoon Worcestershire sauce (or Maggi seasoning)
1 habanero pepper, finely chopped (optional)
1 lb flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 lb shortening
2 tablespoons cold water (may need more or less)

Steps:

  • Combine the first 9 ingredients (through the habanero pepper) in a deep skillet over medium heat. Brown, lower heat and simmer for 20 minutes.
  • Meanwhile, make the pastry dough by combining the flour, baking powder, salt and shortening and mixing until it resembles fine bread crumbs. Slowly add 1 tablespoon cold water at a time, incorporating after each addition, until the mixture comes together in a firm ball. It should not be sticky. Divide the mixture into two discs and let rest for about 15 minutes before rolling out into a round about 1/8 - 1/4" thick. Cut out twelve 2 1/2 - 3" circles in each round.
  • Place a circle at the bottom of each muffin well in a 12 muffin tin and press lightly along the bottom and sides to form the pie bottoms. Place the meat mixture in each pie bottom leaving about 1/4 " of dough above the filling on the sides. Place a circle on top of each filled pie and crimp to seal the edges. Pierce a small hole in the top with a knife point to allow steam to escape while baking.
  • Bake the pies at 350 degrees F for 15 - 20 minutes until nicely browned. Let cool until they can be handled and serve.

MEXICAN MEAT PIE

A savory meat pie courtesy of my Aunt Stephanie that's yummy any time of year, and good either hot or cold the next day. Dress it up with shredded lettuce, chopped tomato, guacamole, shredded cheese, etc., or make a side salad out of these items, and you've got tacos (sort of) without the mess.

2 pie crusts
1 lb ground beef
1 cup onion, chopped
1/2 green pepper, chopped
8 ounces tomato sauce
1 teaspoon oregano
hot spices
salt

Steps:

  • Brown beef with onion and pepper in a skillet.
  • Pour off fat.
  • Stir in tomato sauce, salt, oregano, and hot spices, if desired.
  • Simmer 10 minutes.
  • Place meat mixture in pie shell.
  • Place top crust, seal, and prick.
  • Bake at 425 degrees for 20-25 minutes, or until lightly browned.
  • Alternate:.
  • Leave off top crust and top after cooking with shredded cheese like cheddar or Monterey Jack.
  • Would probably be excellent with cumin instead of the oregano, but I haven't tried this yet.

1 1/2 lbs rabbit or 1 1/2 lbs venison steak
1 cup grated cheese
1/2 cup currants (or any other dried fruit) or 1/2 cup raisins (or any other dried fruit)
4 egg yolks
1/2 teaspoon ground cardamom
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon black pepper
1/2-1 cup broth (whatever most of the meat is)
1 dash cooking wine
9 inches pie shells (with lid)

Steps:

  • Broil the meat till very rare, but cooked through.
  • Cut it into small cubes.
  • Mix with all other ingredients except the pie shell.
  • For the broth, just add enough to make the mixture a little wetter.
  • Put the mixture into the pie shell.
  • Be sure the shell lid is sealed, and punch some holes in the top with a knife.
  • Bake at 350 F for 45 minutes to an hour, till the shell is golden brown.
  • Makes 6-8 slices, and can be served any temperature.
  • It's easiest to cut when cold.

*** THIS IS MY VERSION OF THE RECIPE. PLEASE KEEP THAT IN MIND BEFORE COMPARING IT. IT'S ALSO HELPFUL TO ACTUALLY MAKE THE RECIPE*** My family enjoys these little cakes. I usually cut them in half, place on top of shredded cabbage and either drizzle a little bit of Sarita's All Purpose Tomato Sauce on top or serve it on the side as a dipping sauce. A tortilla press makes the process of flattening the cakes easier. If you do not have one you can just use a rolling pin but just place the masa ball inbetween two sheets of parchment paper to prevent it from sticking to the rolling pin. If you do not have the chicken bullion then you will have to add extra salt and the taste will not be the same. I recommend making and frying one meat pie before making the rest just to make sure that the thickness of the masa is good and not to thick that the masa inside is raw when fried.

3 cups masa harina
1 tablespoon paprika
2 1/2 tablespoons powder chicken bouillon
salt
1 teaspoon pepper
2 tablespoons lard
2 cups warm water
1 1/2-2 lbs ground beef
1/2 cup white rice, cooked
cilantro, a couple of leaves
3 cups oil (enough to deep fry in a large frying pan)

Steps:

  • On medium high in a large pan, cook the ground beef and drain extra fat. To the cooked beef, add in the rice, cilantro and salt to taste. Cook for about 2 more minutes to heat thru. Set aside and let cool for about 7-10 minute.
  • Meanwhile, In a large bowl, mix the masa harina, paprika, chicken bullion and pepper.
  • Using a Pastry blender or fork, cut the lard into the masa mix until the masa is crumbly and the lard is pea size or smaller.
  • Add the warm water, 1 cup at a time, to the masa and using your hands, mix well until the water is fully incorperated. The masa should not be sticky or dry. If it is sticky add a little bit more masa (1 tspn at a time) or if it is dry add water (1 tbspn at a time).
  • Rub a little bit of cooking oil into your hands to make the following step easier. Take out about 2 table spoons of masa and roll into a ball. Using a tortilla press or a rolling pin, make the ball into the size of tortilla but be careful not to roll out to thin. The thickness has to be twice as thick as a tortilla or about the thickness of a pita bread. If it is too thin, the pies will not hold when you stuff them.
  • Heat your deep fry oil on a large frying pan on medium high heat (almost high heat).
  • Place rolled out dough on a flate surface and add about 2 tablespoons of the beef mixture in the middle. Close in half (creating the shape of a meat pie or half moon). Seal in edges with your fingers and creat small indintations with the end of a fork all around the edge of the pie.
  • Before frying, test oil readiness by dropping a small piece dough into the oil. If it automatically sizzles and floats to the top, it is ready. Carefully slide in meat pies into the hot oil and cook about 3-4 minutes per side or until deep golden brown.
  • Drain very well on paper towels. You can also slightly press a paper towel against the fried pies to remove excess oil. You can serve whole over a bed of shredded green cabbage or cut in half and serve Sarita's All purpose Tomato Sauce on the side.

Top it with a sprinkling of Monterey Jack cheese. Rub the edges of the pastry round with a little bit of water. Pull one side of the pastry over the other and press the edges together with your fingers. Seal the edges tightly and crimp them together with your fingers or a fork. Try not to over-stuff the pastry rounds or they will break as they cook. Repeat with the remaining pastry rounds.
