1 zucchini, cut lengthwise in half sliced
1/4 cup red onion, wedges
1/2 cup zesty Italian dressing
2 tablespoons chopped fresh basil
2 garlic cloves, minced
1 cup Italian cheese blend

Steps:

  • Toss tomatoes, peppers, zucchini and onions in large bowl.
  • Combine dressing, basil and garlic. Pour over vegetable mixture, toss to coat.
  • Add cheese, mix lightly. Refrigerate at least 1 hour before serving.
  • Makes 8 servings, 1 cup each.

This easy marinated vegetable salad recipe is perfect for any type of gathering and is so easy to make using the Foodsaver Quick Marinator or just in a bowl! It's gluten free, dairy free, vegan, and loaded with flavour!

1 heaping cup chopped broccoli florets
1 heaping cup chopped cauliflower florets
1 diced bell pepper
1 cup halved cherry tomatoes
1 cup chopped baby corn
1 cup diced carrot
1/2 cup sliced celery
1/2 cup olive oil
1/4 cup white wine vinegar
1/4 cup red wine vinegar
3 tablespoons honey
Juice from 1/2 lemon
1 clove garlic, crushed
1 heaping tablespoon Greek herb mix (with salt)
1 tablespoon jarred capers

Steps:

  • Add veggies to Quick Marinator container or a large bowl.
  • In a jar add all dressing ingredients, close tightly and shake vigorously until well mixed or emulsified (you could also use an immersion blender).
  • Pour the dressing over the vegetables, close the lid to the Quick Marinator, and shake to coat all the veggies with the dressing.
  • Place in the fridge to marinate for a minimum of 1 hour. Stir once again before serving.
  • If using the Foodsaver Quick Marintor follow the instructions to marinate using the vacuum attachment depending on the FoodSaver model you are using.
  • Once marinating time is up (as indicated on the Foodsaver), turn the dial on the Quick Marinator to release the air and open the container.
  • Transfer salad to a dish to serve or chill as preferred in the fridge.*

1/3 cup chopped fresh parsley
1/3 cup chopped fresh mint leaves
1/3 cup julienned fresh basil leaves
1/2 cup freshly squeezed lemon juice (4 lemons)
1 tablespoon minced garlic (3 cloves)
Kosher salt and freshly ground black pepper
1/2 cup good olive oil
8 ounces good feta cheese, 1/2-inch-diced
Toasted pita bread, for serving

Steps:

  • Place the scallions, tomatoes, cucumber, chickpeas, parsley, mint, and basil in a large salad bowl and toss to combine.
  • In a small bowl or measuring cup, whisk together the lemon juice, garlic, 2 teaspoons salt, and 1 teaspoon pepper. Slowly whisk in the olive oil to make an emulsion. 1 to 2 tablespoons olive oil, for brushing vegetables
1 onion (large sliced)
2 zucchini (large sliced)
2 bell peppers (red, seeded and quartered)
2 eggplants (medium sliced into 1/2-inch-thick rounds)
1 potato (large parboiled and sliced)
Garnish: Feta cheese (crumbled for serving)
For the Vinaigrette
5 tablespoons olive oil
1 garlic clove (peeled and smashed with the flat side of knife)
3 tablespoons balsamic vinegar
1 teaspoon mint (dried)
1 teaspoon oregano (dried)
Pinch: marjoram (dried)
1/2 teaspoon salt (coarse)
1/4 teaspoon black pepper (freshly ground)

Steps:

  • Gather the ingredients.
  • Add the ingredients to a small bottle or bowl and shake or whisk together.
  • Allow the vinaigrette to sit for about 1/2 an hour for the flavors to meld.
  • Discard the garlic clove before using.
  • Heat the grill to medium-high.
  • Lightly brush the vegetables with olive oil and grill for about 5 minutes on each side or until tender.
  • Cut larger pieces into chunks and toss with dressing in a large bowl.

I wish I could think of a catchier name, because I think if you try this recipe you will love it! Compared to other recipes I looked at this one is low in fat and sugar! You can use any combination of fresh summer vegetables (equal to about 7 cups). I listed my favorites. I made this in a 7 cup Rubbermaid container.

1 head of garlic
2 tbsp fresh thyme leaves
1 tbsp fresh rosemary leaves
8 fresh bay leaves
1 tbsp Maldon salt
2-3 tsp cracked black peppercorns (these can be bought in jars)
150ml/¼ pint olive oil
900g/1.3kg/2-3lb of assorted vegetables (e.g. asparagus, large or baby courgettes, sweet potatoes, aubergines , fennel, red onions, corn cobs, parboiled new potatoes)

Steps:

  • Peel the garlic cloves and tip into a food processor with the thyme, rosemary, bay leaves, salt, peppercorns and oil. Whizz well to release the flavours - alternatively grind dry ingredients using a pestle and mortar then blend in the oil.
  • Prepare 900g-1.3kg/2-3lb of assorted vegetables (e.g asparagus, large or baby courgettes, sweet potatoes, aubergines, fennel, red onions, corn cobs, parboiled new potatoes). Halve asparagus lengthways, cut large courgettes into chunks or halve baby ones lengthways. Cut sweet potatoes and aubergines into thick chunks, cut fennel and red onion lengthways into wedges, corn into chunks and potatoes in half lengthways. Mix the vegetables and marinade together and marinate for a couple of hours before barbecuing. Cooking times will vary according to your choice of vegetables and their thickness - keep turning and prodding them and you'll feel when they're done.

1 lb broccoli floret
1 -2 zucchini
2 cups fresh mushrooms, preferable smallish white button mushrooms
1 can large black olives
1/2 cup oil
1/2 cup white vinegar or 1/2 cup wine vinegar
1/4 cup lemon juice
1 -2 teaspoon sugar (to taste)
1 clove garlic, cut in thirds
salt and pepper

Steps:

  • Cut the cauliflower, broccoli and zucchini into bite-size pieces.
  • Halve or quarter the mushrooms, depending upon their size.
  • Cut the olives in half.
  • Combine remaining ingredients, mixing well and stir in the vegetables and olives.
