2 tablespoons ground mustard
2 tablespoons white vinegar
1/4 teaspoon garlic salt
4 drops hot pepper sauce

Steps:

  • In a small bowl, combine all the ingredients until smooth. Serve with hot dogs, vegetables, hamburgers, chicken or steak. Store in the refrigerator.

A friend catches Spanish mackerel in South Florida and fillets it for us. He delivers it, and we spend the day smoking 10 pounds of fish. We vacuum pack what we don't need and freeze it for later. It keeps very well for months in a freezer. How long? We don't know, because we make this so often! Can't find smoked mackerel? There are YouTube videos to smoke your own! Serve with an assortment of crackers, toasts, celery, and carrots immediately.

3 smoked Spanish mackerel fillets, skin and bones removed
1 cup olive oil mayonnaise (such as Hellman's®)
¼ cup ketchup
1 chipotle pepper in adobo sauce, liquid reserved
½ red onion, coarsely chopped
1 ½ tablespoons cilantro paste
1 small lemon, juiced
2 teaspoons fine sea salt (such as Alessi®)
1 teaspoon ground black pepper

Steps:

  • Place mackerel, mayonnaise, ketchup, chipotle pepper with 1 teaspoon adobo sauce, onion, cilantro paste, lemon juice, sea salt, and pepper into a food processor and process until thoroughly combined.
  • Transfer mixture to a plastic container with a lid and refrigerate until thoroughly chilled, 1 to 2 hours. Serve.

It's also great to keep on hand to use as a quick and delicious sandwich spread... You won't believe how good it is on a ham and cheese sandwich or your favorite sub!

  • Transfer to a plastic air-tight container.

  • Pour into hot sterilized jars; seal.
  • Makes two 1/2 pint jars.

1 tablespoon cider vinegar
salt
pepper
1/2 medium red onion, sliced paper thin
2 small firm avocados, cut in thin wedges
4 large flour tortillas
4 ounces baby spring greens
6 ounces genoa salami, sliced thin and cut into thin strips
3 tablespoons dark spicy mustard
2 tablespoons balsamic vinegar
1/4 cup mayonnaise

Steps:

  • Stir together Balsamic Mustard Spread ingredients until well blended.
  • Sprinkle cider vinegar, salt and pepper over the onion and avocados.
  • Spread a heaping Tbsp of Balsamic Mustard Spread on each tortilla.
  • Leaving a 1 1/2-inch border at one side of tortilla, scatter half the onion slices over the spread, then top with the greens.
  • Scatter avocado wedges, salami strips and the rest of the onion on top of the greens.
  • Starting with the side of each tortilla with no border, roll toward the side with a border; press edge of tortilla with border against the wrap, allowing the sauce to seal the sandwich (use more sauce if necessary).
  • Eat at once or wrap in plastic wrap and refrigerate.
