- Slice bread and brush both sides lightly with extra virgin olive oil. Bake 5 minutes at 350˚F to lightly toast it (toasting the bread keeps the bread from getting moist from the cheese).
- Top with a slice of mozzarella and a slice of tomato. Sprinkle the tops with salt and pepper and bake at 350˚F for 8-10 minutes or until cheese is melted.
- A few minutes before the crostini are finished baking, in a small ramekin, mix together 1 Tbsp balsamic vinegar and 1 Tbsp extra virgin olive oil until well combined. Toss in the sliced fresh basil and stir gently. Top each crostini with the marinated basil.

- Slice bread and toast the bread in a toaster or oven until golden brown.
- Next, in a small bowl, add the cherry tomatoes, sprinkle a little salt over them, and toss to blend. Set them aside.
- In a small glass, pour some extra virgin olive oil.
- Working with each slice of bread, one at a time, lightly spoon some olive oil over the bread and rub it over the bread with the back of the spoon. Take a clove of garlic and run it up and down the bread.
- Place a slice of Burrata cheese on top, then add a few sliced cherry tomatoes on top and transfer to a serving platter.
- Repeat with each slice of bread needed. (Keep in mind, the amount of bread you will need will be determined by the amount of Burrata cheese you slice).
- Sprinkle lightly over the crostini with fresh cracked pepper. Scatter on top with fresh chopped basil. Then serve.
- Quick Tip: If you make these ahead of time, cover lightly with foil wrap and set aside in a cool place until you are ready to serve. Do not refrigerate (this will cause the bread to get soggy).

- Add garlic and saute for about 1 minute being careful it doesn't burn.
- Add chicken and saute for 7 minutes or until cooked through.

- Preheat the oven to 450 degrees F.
- Using a small serrated knife, cut off the top eighth of each tomato and hollow out the insides, leaving the sides intact. (Discard the seeds and insides.) Slice a small sliver off each tomato bottom so it sits flat. Drain well on paper towel, taking care to dry the inside.
- Sprinkle the tomatoes with 1/4 teaspoon salt. Stuff each tomato with a pinch of the chopped basil and a mozzarella ball and set on a small rimmed baking sheet.
- Combine the breadcrumbs with the olive oil, oregano and the remaining 1/2 teaspoon salt in a small bowl. Divide the mixture among the tops of the tomatoes.

- Place chicken breasts, Italian salad dressing, Italian herb seasoning, and chicken seasoning into a resealable plastic bag, knead bag several times to coat chicken with marinade, and squeeze air from the bag. Seal and refrigerate 4 to 6 hours.
- Preheat oven to 500 degrees F (260 degrees C).
- Pour canola oil into a large cast-iron or ovenproof skillet over medium-high heat. Heat the oil until a small droplet of water pops in the oil. Remove chicken breasts from marinade and discard used marinade. Place chicken breasts into hot oil, fry for 2 minutes, and flip chicken.

- 1. Marinate chicken breast overnight or for a few hours in 1/2 cup of olive oil & 1/4 cup of Balsamic vinegar. Cut into slices.
- 2. Cut baquette into slices (not too thin) and grill for a few minutes to get toasty. (Brush w/ some garlic butter or w/ Italian dressing or balsamic & oil for extra flavor!) Top w/ slices of mozzarella, chicken, & grill until cheese is melted.
