I have always loved SPAM, so I decided to combine it with pineapple to make this Polynesian-inspired macaroni salad recipe. It reminds me of vacationing in Hawaii. -Susan Bickta, Kutztown, Pennsylvania

Ingredients

2 cups uncooked elbow macaroni
1 tablespoon canola oil
1 can (12 ounces) regular or teriyaki SPAM, cubed
1 cup mayonnaise
2 teaspoons sugar
3/4 teaspoon ground mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1 can (8 ounces) unsweetened pineapple tidbits, drained
1 medium sweet red pepper, chopped
1 can (8 ounces) sliced water chestnuts, drained and chopped
4 green onions, chopped

Steps:

Cook macaroni according to package directions; drain and rinse with cold water. Cool completely. Meanwhile, in a large skillet, heat oil over medium-high heat. Cook Spam until golden brown, about 8 minutes. Cool completely., For dressing, in a small bowl, combine mayonnaise, sugar, mustard, salt and pepper. In a large bowl, combine pineapple, red pepper, water chestnuts, cooled Spam and macaroni. Add dressing; gently toss to coat. Refrigerate until serving. Top with green onions before serving.

1 (12-ounce) can SPAM® Classic, cut into cubes
3 cups macaroni, cooked and drained
1 cup cubed cheddar cheese
1 cup shredded carrots
3/4 cup chopped celery
1/4 cup chopped green bell pepper
1/4 cup chopped onion
1/2 cup mayonnaise or salad dressing
2 tablespoons creamy mustard blend
1 1/2 tablespoons barbeque sauce

Steps:

In a large bowl, combine the macaroni, SPAM® Classic, cheese, carrots, celery, bell pepper, and onion, then mix together well.
To make the dressing, use a small bowl and mix together the mayonnaise, mustard, and barbeque sauce.
Toss the macaroni mixture with the dressing.
Cover and refrigerate for 1 hour.

From Creamettes & Spam I have had this recipe that I cut from a magazine for I probably 20 years. To tell the truth, never made it. We love Spam, yes it's true so I though and it just sound good. Hope I will get around to making it some day. I think the colored noodles would be fun with all the other colors.

7 ounces elbow macaroni (2 cups dry)
2 tablespoons salad oil
2 tablespoons vinegar
1 tablespoon onion, minced
1/2 teaspoon seasoning salt
1/4 teaspoon seasoned pepper
1 cup cheddar cheese, diced in chunks
1 (12 ounce) can Spam, cubed
1/2 cup mayonnaise (or salad dressing)
1 cup celery, diced
10 ounces frozen sweet peas or 17 ounces peas

Steps:

Cook macaroni according to directions. Drain, do not chill.
While hot drizzle with oil and vinegar.
Add onion, seasonings and cheese, toss well.
Chill throughly. Serve on salad greens to dress up (optional).

One day I made the salad and another friend took a bite and said, "This would taste magnificent if you added Spam to it. So I added Spam and now it's a hit when I take it to parties or serve it to my lunch quests.

1-(12 oz) pkg elbow macaroni, cooked
1 medium red pepper (chopped)
1 medium green pepper (chopped)
1 medium onion (diced small)
1 tsp seasoning salt
1/2 tsp pepper
2 Tbsp (big squirt) of yellow mustard
1/4-1/2 c miracle whip dressing
1 can(s) spam, cubed into small pieces

Steps:

1. In a large bowl, combine all of the ingredients and stir well. Chill and serve.

My roommate when I was a teenager used to make this. It is a delicious salad/spread that we used to put on toast and brown under the broiler. It tastes just as good served cold as a side dish. This recipe allows for many variations on ingredients (such as ham or sausage for the Spam) and would also make a great low carb meal. Prep time does not include hard boiling and peeling the eggs.

6 -8 hard-boiled eggs, peeled and chopped
1/2 cup cheddar cheese, cut into small cubes
1 1/2 cups Spam, cubed, browned and cooled
3/4 cup Miracle Whip (more or less to taste) or 3/4 cup mayonnaise (more or less to taste)
2 tablespoons yellow mustard (more or less to taste)
1/4 cup onion, minced (I omit this)
salt and pepper

Steps:

Brown the cubed Spam lightly in a nonstick frying pan and set aside. Mix all other ingredients together. Mix in the Spam and season to taste. Chill. Serve as a side dish or top assorted crackers with it. It is also very good spread on top of toast and placed under the broiler until bubbly and the cheese starts to brown.

1 tablespoon vegetable oil
1 (12 ounce) container fully cooked luncheon meat (e.g. Spam), cubed
½ green onion, chopped
1 clove garlic, chopped
1 tablespoon soy sauce
½ cup water
½ tablespoon sesame oil
1 teaspoon freshly ground black pepper

Steps:

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Meanwhile, heat vegetable oil in a medium saucepan over medium heat. Add luncheon meat, green onion and garlic and saute until light brown. Stir in cooked spaghetti , then stir in soy sauce, water, sesame oil and pepper. Mix all together, heat through and serve.
