Swapping spaghetti squash for pasta is a great way to cut back on carbs and calories in this saucy vegan dinner. Here, we have tossed the squash with a simple fresh tomato sauce. Jazz up the sauce with crushed red pepper flakes, Kalamata olives and/or capers, if you like.

1 medium spaghetti squash (4-5 pounds), cut in half, seeds removed
3 tablespoons extra-virgin olive oil
⅔ cup chopped onion
4 garlic cloves, minced
2 pounds ripe tomatoes, diced (about 4 cups; save juices)
¼ cup vermouth, dry red wine or dry white wine
½ teaspoon ground pepper
¼ teaspoon salt
8-10 fresh basil leaves, torn

Steps:

  • Preheat oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
  • Place spaghetti squash halves, cut-side down, on the prepared baking sheet. Bake until the squash is tender when pierced with a knife, 40 to 50 minutes.
  • Meanwhile, heat oil in a large skillet over medium-high heat. Add onion and cook, stirring often, until fragrant and starting to soften, 2 to 3 minutes. Reduce heat to medium. Add garlic and continue cooking until golden, about 2 minutes. Add tomatoes and their juices. Increase heat to medium-high. Add vermouth (or wine) and cook, stirring occasionally, until the tomatoes begin to break down, 4 to 5 minutes. Stir in pepper and salt. Reduce heat to low and simmer for 5 minutes. Remove from heat and cover.
  • When the squash is cool enough to handle, use a fork to scrape the flesh from the shell; add it to the tomato sauce. Stir in basil.

This unbelievably creamy, 5-ingredient alfredo sauce marries perfectly with tender spaghetti squash for the ultimate comfort meal that's deceptively healthy and simple. Just 8 ingredients required!

4 cups cooked spaghetti squash ((see step 1 for cooking methods))
1 Tbsp water ((or sub just enough oil to coat the pan))
1 healthy pinch sea salt, plus more to taste
1/4 tsp Italian herbs ((basil + oregano))
1/8 tsp garlic powder
1 pinch red pepper flake ((optional))
1/4 cup raw cashews
2 cloves garlic, plus more to taste
2 Tbsp nutritional yeast
1/4 - 1/2 tsp sea salt, plus more to taste
3/4 cup unsweetened plain almond milk ((or other dairy free milk like rice or hemp))
1 handful fresh basil ((optional))
Fresh herbs ((basil or parsley))
Vegan parmesan cheese ((or additional nutritional yeast))
Red pepper flake

Steps:

  • SPAGHETTI SQUASH: Cook your spaghetti squash using our oven method or Instant Pot method. Once slightly cooled, fluff with a fork to make it stringy. Then measure out roughly 4 cups spaghetti squash (as the original recipe is written // alter as needed if adjusting serving size) and set aside.
  • SAUCE: In the meantime, prepare sauce by soaking raw cashews in very hot water for ~15 minutes.
  • After the 15 minutes are up, drain and rinse cashews and add to a small blender. Add remaining sauce ingredients (garlic, nutritional yeast, salt, and almond milk) and blend until creamy and smooth. The sauce should be thin and pourable (add more water as needed).
  • Taste and adjust flavors as needed, adding more nutritional yeast for cheesiness, salt to taste, or garlic for zing. Set aside. NOTE: At this time, you could also blend in a handful of fresh basil for added flavor and gorgeous green color.
  • PASTA: Heat a large pan over medium heat (non-stick* or cast iron are best as stainless steel can be sticky). Add a bit of water (or oil) to the pan and then add your spaghetti squash.
  • Season with a healthy pinch of salt, Italian herbs, garlic powder, and red pepper flake (optional). And use a spatula or tongs to toss. Cook for 3-4 minutes, or until the squash is slightly browned and very hot.
  • Add the sauce and stir / toss to coat the squash. Cook for an additional 1-2 minutes, or until the sauce is bubbly and slightly thickened.
  • Serve immediately as is, or garnish with fresh herbs (such as parsley or basil), vegan parmesan cheese, or red pepper flake (all optional). Add a few of our Best Vegan Meatballs to make this dish even heartier!
  • STORAGE: Store leftovers covered in the refrigerator for up to 3-4 days (reheat in the microwave or on the stovetop until hot, adding a little dairy-free milk if it appears dry). Not freezer friendly.

2 medium spaghetti squash (3 lb each)
1 tablespoon olive oil
1 tablespoon chopped garlic
1 1/2 teaspoons dried dill weed
1 1/2 teaspoons yellow mustard seed
1/2 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon ground red pepper (cayenne)
1/2 cup chopped peeled fresh beets
2 cans (14 oz each) diced tomatoes, undrained
1 tablespoon Dijon mustard
1 tablespoon chopped fresh parsley

Steps:

  • Heat oven to 425°F. Cut squash in half; remove seeds and fibers. Place squash cut sides down in 15x10x1-inch pan. Carefully pour 2 cups cold water in pan.
  • Bake squash about 45 minutes, or until knife can easily penetrate skin. Carefully turn each over to cool 20 minutes. Scrape insides out with fork into bowl.
  • While squash is baking, make sauce. In 10-inch skillet, heat olive oil, garlic, dill, mustard seed, salt, pepper and red pepper over medium heat, shaking pan occasionally, until garlic is golden brown.
  • Add beets and tomatoes; simmer abut 20 minutes or until beets are tender. Remove from heat. Stir in Dijon mustard and parsley. Serve 1/2 cup sauce over 1 cup spaghetti squash pasta.

1 spaghetti squash
1 pound ground beef
2 tablespoons olive oil
1 yellow squash, diced
1 zucchini, diced
1 red bell pepper, chopped
½ onion, diced
1 tablespoon Italian seasoning
1 teaspoon dried basil
½ teaspoon freshly ground black pepper
½ teaspoon dried oregano
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon dried thyme
¼ teaspoon red pepper flakes
1 (14 ounce) can tomato sauce

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Poke 8 to 10 holes in the spaghetti squash; place whole in a baking pan.
  • Bake in the preheated oven until squash is easily pierced with a knife, about 25 minutes. Remove and let cool until easily handled.
  • Cut squash in half; remove seeds and ribs. Place squash halves facedown in a baking dish with a little bit of water and cover with foil. Bake until you can pull the sides away easily with a fork, about 25 minutes more.
  • Meanwhile, heat a medium skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Set beef aside.
  • Heat a large, deep skillet over medium-low heat. Add olive oil, yellow squash, zucchini, bell pepper, onion, Italian seasoning, basil, black pepper, oregano, garlic powder, thyme, and red pepper flakes. Cook and stir until vegetables are tender, about 10 minutes. Pour in tomato sauce and simmer until heated through, adding the beef halfway through, about 10 minutes more.
  • Turn spaghetti squash face-up; shred the sides from the center out with a fork. Scoop "spaghetti" from squash onto serving plates. Flatten and top with the sauce.

1 medium spaghetti squash (2-1/2 pounds)
2 tablespoons water
1/2 cup chopped sweet red or green pepper
1/2 cup sliced green onions

1 medium yellow onion, chopped
1 tablespoon minced garlic
1 can (15 ounces) no salt added or regular tomato sauce
1 can (14.5 ounces) Italian-Style diced tomatoes, un-drained
1 can (6 ounces) tomato paste
1/4 to 1/2 teaspoon crushed red pepper
1 medium spaghetti squash (about 3 to 3-1/2 pounds), cut in half lengthwise, seeds removed
Toppings (optional):
Thinly sliced fresh basil and grated Parmesan cheese

Steps:

  • 1)Heat stockpot over medium heat until hot. One 3-pound spaghetti squash
4 teaspoons extra-virgin olive oil
Coarse salt
Half a 24-ounce jar tomato-basil sauce, such as Classico® Organic Tomato & Basil Sauce
Half an 8-ounce block mozzarella, shredded (or 1 cup shredded mozzarella)
Freshly torn basil leaves, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the spaghetti squash in half lengthwise and scrape out the seeds with a spoon. Drizzle 2 teaspoons extra-virgin in each of the squash halves and sprinkle with salt. Place them flesh-side down on a baking sheet. Roast until you can fluff the squash easily with a fork, 45 to 50 minutes.
  • Flip the squash halves and fluff the "spaghetti" strands with a fork, then season with salt. Pour 2/3 cup sauce over each of the squash halves, and top each with 1/2 cup shredded mozzarella. Bake until the cheese is browned and bubbly, another 25 minutes. (You can flip the oven to the broiler at the last minute for extra cheese browning!)
  • Garnish with basil and serve.

1 medium spaghetti squash
cooking spray
1 tablespoon olive oil
½ pound bulk Italian sausage
1 medium zucchini, chopped
1 medium red bell pepper, chopped
½ medium onion, chopped
1 clove garlic, minced
salt and ground black pepper to taste
1 (28 ounce) jar pasta sauce
½ cup shredded Parmesan cheese
½ cup shredded mozzarella cheese

Steps:

  • Pierce squash a few times with a very sharp knife. Place squash in a microwave-safe bowl and microwave on high power until squash is tender and a knife can easily poke through the skin, 10 to 13 minutes. Let squash rest, undisturbed, for 10 minutes.
  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C). Spray an 8-inch casserole dish with cooking spray.
  • Heat oil in a skillet over medium heat; stir in sausage, zucchini, bell pepper, onion, and garlic. Saute, stirring occasionally, until veggies are tender and sausage is crumbly and brown, 5 to 7 minutes.
  • Cut open squash and remove and discard all seeds. Scrape out the flesh with a fork and add to the sausage and veggie mixture. Season with salt and pepper and cook over medium heat for 5 minutes. Stir in pasta sauce and transfer to the prepared casserole dish. Top with shredded Parmesan and mozzarella cheeses.
  • Bake in the preheated oven until heated through and cheeses are melted, about 15 minutes.

1 large spaghetti squash
2 lbs roma tomatoes
4 tablespoons olive oil
kosher salt
10 garlic cloves, peeled and sliced
1 cup fresh basil leaf
1/2 cup dry white wine
1 pinch red chili pepper flakes
1 cup parmesan cheese, grated
1/4 cup fresh parsley, chopped

Steps:

  • Preheat oven to 375 degrees.
  • Cut spaghetti squash in half, remove seeds and place in a roasting pan.
  • Wash and quarter roma tomatoes and toss in 2 tablespoons of olive oil and kosher salt and place on a baking sheet. Roast in oven with spaghetti squash for 45 minutes. Remove squash and tomatoes from oven. Let squash cool for about twenty minutes.
  • Meanwhile, sauté garlic in remaining olive oil until golden brown. Add roasted tomatoes, basil, wine and chili flakes and let simmer for 30 minutes.
  • Remove spaghetti squash strands with a fork and place in a bowl and set aside. When sauce is done, add spaghetti squash and toss. Season to taste and garnish with parmesan cheese. Sprinkle chopped parsley on top. Serve and enjoy!

1 large spaghetti squash
1 (16 ounce) jar favorite spaghetti sauce
1 (14 ounce) can stewed tomatoes
1 chopped onion
1 (10 ounce) package frozen chopped spinach
1 (4 ounce) can mushrooms
1 garlic clove, minced
salt and pepper
butter

Steps:

  • Wash spaghetti squash then cut in half, lengthwise.
  • Scrape out seeds.
  • Sprinkle salt and pepper on spaghetti squash halves, add butter then put in baking pan with 1/4 cup water.
  • Cover with aluminum foil and bake at 350 for 45 minutes.
  • Remove from oven.
  • Meanwhile, as squash is cooking, put stewed tomatoes, onions, mushrooms, garlic and spinach in sauce pan, bring to a low boil and simmer 30 minutes.
  • Drain off juice, add spaghetti sauce, bring back to a boil, simmer 15-20 minutes .
  • Using a fork, scrape squash from shell, starting at one end finishing at the other.
  • It will look just like spaghetti noodles.
  • Put squash in one bowl and sauce in another bowl.
  • Serve with Parmesan cheese and garlic bread or a salad.
