- In a bowl whisk together all the ingredients until combined well. Transfer to a serving bowl and serve with Asian noodle salad.
SPICY PEANUT SAUCE
Steps:
- Whisk together the peanut butter, hoisin, soy sauce, sriracha, lime juice and garlic in a medium bowl. Whisk in 4 tablespoons water. The sauce should be a thick enough to coat the back of a spoon but still drip off lightly. Add another tablespoon or two of water if the sauce needs thinning.
PEANUT SAUCE
I also use this sauce with the chicken satays, but it's great for dipping and salads, too! Just add a little water for salad dressing consistency.

SPICY PEANUT SAUCE
One of the best recipes for peanut sauce I have tried! This goes great with grilled meats, especially on grilled chicken skewers, on noodles, even used as a salad dressing for spinach salad!. You won't be able to keep your spoon out of the jar, it is that good LOL! This peanut sauce is of a thinner consistency, if you want a thicker sauce, then add in more peanut butter and reduce the water just slightly. This can be made up to 3 days in advance. Kikkoman Thai-Style chili sauce can be found in any Asian section of major grocery stores, I purchase mine at Safeway stores in the Asian section, but you can use any brand of Thai chili sauce for this. You can use about 1/2 - 1 teaspoon (or to taste) red pepper flakes in place of the chili sauce. This recipe may be cut in half to make 2 cups.

- In a saucepan heat oil over medium heat and sauté the scallions, garlic and ginger (about 1 minute).
- Add/stir in the remaining ingredients and bring to a simmer, stirring.
- Simmer the sauce until smooth, then cool to room temperature.
- *NOTE* If you are refrigerating the sauce, and you find that the sauce is too thick after chilling, stir in a couple of tablespoons of hot water and stir until combined, adding more hot water until the sauce is of the right consistency.
- This sauce is best served at room temperature.

EASY NOODLES IN GARLIC-GINGER PEANUT SAUCE
From Easy Asian Noodles by Helen Chen, this recipe is a GREAT cool noodle dish for a hot summer day! Very versatile, I've even made it with dollar store ramen when the budget's tight - just boil the noodles (2 packs) with the flavor packets in the boiling water and drain, then cool the noodles thoroughly in ice water as the recipe suggests. Chen says, "This is a bold peanut vinaigrette that's bursting with garlic and ginger flavor. It's excellent on either Asian noodles or Italian pasta and is a perfect side dish to almost any grilled fish or meat. If using Italian noodles, I prefer the thinner vermicelli." Meant as a side dish, we enjoy it as a dinner also - toss in some shredded cabbage and carrots and it really is a great summer evening meal!

- In a pot of boiling water, cook the noodles until a little softer than al dente. Drain, rinse in cold water, and set aside to drain again.
- In a small bowl, combine the peanut butter, vinegar, soy sauce, sesame oil, sugar, ginger, and garlic. Stir until smooth.

- Combine peanut butter, soy sauce, ginger, rice vinegar, sesame oil, brown sugar, oil, and chile powder in a blender and blend until smooth and combined. Scrape down blender as needed. It will need to be thinned and its thickness will largely depend on the type of peanut butter used. If you happen to be making pasta at the same time, you can use some of the starchy cooking water. If not, use tap water or we love black tea as well. Start with a couple of tablespoons, blend, and adjust as needed. If you are using as a dip you can leave it on the thicker side. For a sauce to be tossed with pasta or drizzled over chicken or fish, keep adding liquid until you have a flowable texture. Taste and add more chile powder if desired.
- Sauce can be refrigerated in an airtight container for up to a week. It might need more thinning after being chilled but no need to pull out the blender. Simply stir in your chosen liquid until you reach the texture you want.
