Treat your family with this cheesy bruschetta that's made using ham and Muir Glen® tomatoes - a flavorful Italian appetizer.

1/3 cup juice reserved from canned tomatoes (below)
1/3 cup honey
1/3 cup apple cider vinegar
1 loaf baguette French bread
1/4 cup olive oil
1/2 teaspoon fresh cracked black pepper
1 can (14.5 oz) Muir Glen™ Organic or Meridian Ruby™ diced tomatoes, drained and 1/3 cup juice reserved
1 package (5 oz) blue cheese, crumbled
2 packages (3 oz ea) prosciutto or thinly sliced dry cured ham, cut into strips

Steps:

  • In 1-quart saucepan, mix sweet and sour sauce ingredients. Simmer over medium heat about 10 minutes, stirring occasionally, until sauce coats back of spoon.
  • Heat oven to 400°F. Cut bread into 1-inch slices; place on ungreased cookie sheet. Brush both sides of each bread slice with olive oil; sprinkle 1 side of each with pepper. Toast in oven 5 to 7 minutes or until light brown.
  • Spoon 1 teaspoon drained tomatoes onto each toasted bread slice; top with crumbled blue cheese and prosciutto strips. Drizzle with sweet and sour sauce.

1/2 cup olive oil, plus 1 tablespoon
2 tablespoons balsamic vinegar
1 can (14.5 oz each) Hunt's® Petite Diced Tomatoes, drained well
1/2 cup chopped sweet onion
2 tablespoons chopped fresh basil leaves
1/2 teaspoon finely chopped garlic
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 teaspoons grated Parmesan cheese

Steps:

  • Preheat oven to 400°F. Brush both sides of each bread slice with 1/2 cup olive oil. Place slices on baking sheet; bake 5 minutes on each side, or until golden brown.
  • Combine remaining olive oil, balsamic vinegar, tomatoes, onion, basil, garlic, salt, pepper and parmesan cheese; mix well. Spoon evenly divided portions onto each slice of toast. Serve.

1/2 cup crumbled blue cheese
2 tablespoons coarsely chopped pecans
4 slices bread, crusty, firm-textured, cut about 3/4-inch thick
2 garlic cloves, peeled and halved
1 large tomatoes, sliced about 1/8-inch thick
fresh ground pepper
chopped fresh basil (to garnish) or dried basil (to garnish)

Steps:

  • In a small bowl, mash the cheeses together with a fork, leaving the mixture somewhat chunky.
  • Mix in the pecans.
  • Preheat the broiler.
  • Arrange the bread on a small baking sheet and broil the slices for about a minute on each side, just until golden.
  • Watch it carefully so it doesn't burn.
  • Rub one side of each piece of bread with garlic.
  • Spread some of the cheese mixture over each slice and arrange 2 or 3 overlapping tomato slices on top.
  • Pepper the tomatoes lightly, then garnish with basil and serve.

1 tablespoon fresh lemon juice
1 tablespoon fresh flat leaf parsley, minced
2 ounces blue cheese, crumbled
1 1/2 tablespoons olive oil
fresh ground black pepper
1 baguette, cut into 1/2-inch thick rounds
8 ounces mascarpone cheese
1/4 cup walnuts, toasted and finely chopped

Steps:

  • Cut pears into a small dice, and place in a small bowl.
  • Sprinkle pears with lemon juice and toss. Add the parsley, blue cheese, and oil and toss gently and thoroughly.
  • Season to taste with freshly ground black pepper. Set aside.
  • Preheat the broiler. Arrange bread slices in a single layer on a baking sheet and toast under the broiler until lightly browned and crisp, 1 to 2 minutes per side.
  • Spread each toast round with a teaspoon of mascarpone. Top with a generous tablespoon of the diced pear mixture, mounding it up high and pressing it firmly.
  • Finish each one with a sprinkling of walnuts and serve.

1 large sweet onion, halved and thinly sliced
1 cup grape tomatoes, halved
1/2 teaspoon kosher salt, divided
1/4 teaspoon freshly ground pepper, divided
6 ounces cream cheese, softened
3/4 cup crumbled blue cheese
3 garlic cloves, minced
16 slices French bread baguette (1/2 inch thick)
2 beef ribeye steaks (3/4 inch thick and 8 ounces each)
1-1/2 teaspoons Montreal steak seasoning
2 tablespoons balsamic vinegar

Steps:

  • Preheat oven to 400°. In large skillet, heat 2 tablespoons oil over medium-high heat; saute onion until softened. Reduce heat to medium-low; cook until golden brown, 25-30 minutes, stirring occasionally., Toss tomatoes with 1 tablespoon oil, 1/4 teaspoon salt and 1/8 teaspoon pepper; spread in a 15x10x1-in. pan. Roast until softened, 10-15 minutes. Stir tomatoes into onion, mashing lightly. In small bowl, mix cream cheese, blue cheese, garlic and the remaining salt and pepper., Brush bread slices with remaining oil; grill, covered, over medium heat until lightly toasted, 1-2 minutes per side. Sprinkle steaks with steak seasoning. Grill, covered, over medium heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 3-5 minutes per side. Let stand 5 minutes before slicing., To serve, spread toasts with cheese mixture; top with steak and onion mixture. Drizzle with vinegar.
