BRAISED TURKEY LEGS
Slowly bring out the flavor and tenderness of turkey legs by cooking them low and slow with herbs such as fresh sage, bay leaves, parsley, and thyme. It's the perfect recipe for entertaining or an extra-special meal for your family.

Steps:
- Preheat oven to 300 degrees.
- Rinse turkey legs and pat dry; season all over with salt and pepper. Set aside.
- Heat a large Dutch oven over high heat and add olive oil. Add turkey legs, skin side down, working in batches, if necessary. Cook, turning, until turkey legs are browned on all sides, about 5 minutes per side. Transfer legs to a plate and discard all but 1 tablespoon of rendered fat from Dutch oven.
- Deglaze with white wine and cook, scraping up any browned bits from bottom of pot and slightly reduced, 2 minutes. Lower heat to medium-high and add carrots, celery, and leeks to Dutch oven and cook, stirring, until golden brown, about 5 minutes. Add thyme, sage, bay leaves, and stock; bring to a boil. Reduce heat to medium-low and add turkey legs, skin side down; cover and transfer to oven. Cook for 40 minutes. Uncover, turn turkey legs, and continue cooking uncovered until legs are tender, 45 to 50 minutes more.
- Transfer turkey legs to a serving platter. Skim fat from top of braising liquid and discard; season braising liquid with salt and pepper, and spoon over turkey legs. Serve garnished with chopped parsley and thyme.
WASABI MASHED POTATOES
A different side dish to go with your Asian meal. These potatoes are spiced with wasabi horseradish. And yes, you will definitely be able to taste it, so you may want to add the wasabi little by little to your taste.

Steps:
- Peel potatoes and cut into approximately 2-inch chunks.
- Place in pot with 1/4 teaspoon of the salt, cover with water and bring to a boil.
- When boiling, cover and reduce heat to simmer for about 15 minutes, or until potatoes are tender.
- While the potatoes are cooking, in a small bowl combine the wasabl powder and the water to make a paste and set aside.
- Drain the potatoes and immediately return them to the same pot.
- While the potatoes are still hot add the butter and mash until completely smooth.
- Add the cream and mash again until well combined and creamy.
- Add the remaining 1/4 teaspoon of salt and the wasabi paste and mash once more, until well combined.
- As mentioned above, these may be potent for some, so you may want to add the wasabi a little at a time, tasting as you go (It's perfect for me with the full amount).
- If you want creamier potatoes, add more cream by the teaspoon until desired consistency.
- Serve hot.
SOY-GINGER GLAZE
This sweet-sour glaze is great on grilled shrimp, turkey, beef, chicken, and pork, as well as salmon. When grilling, brush glaze on all sides 2 minutes before meat or seafood finishes cooking, then brush on again right after removing from the grill. For roasted salmon, brush fish with glaze before baking.

SOY AND GINGER GLAZED TOFU
I love tofu...I like how it picks up the flavor of whatever sauce it's coated with. I especially liked this recipe where the tofu is browned a bit before having the sauce poured on top. This can be served warm or at room temperature. It would be a good addition to a bento box (Japanese boxed lunch). I found this gem in the Chicago Tribune, which attributes it to Ron Bilaro.

Steps:
- Stir cornstarch into water in a small bowl until dissolved; set aside. Heat vinegar, soy sauce and sesame oil in a small saucepan over medium heat; whisk dissolved cornstarch into the soy mixture. Cook, whisking, until mixture starts to thicken, about 20 seconds. Remove from heat and stir in ginger and garlic. Set aside.
- Spray a large skillet with cooking spray; heat over high heat. Add tofu and cook, turning turning several times, until all four sides of the block are beginning to brown, about 2 minutes each side. Set aside for 2 minutes and then slice into 6 slices. Transfer to a platter and pour soy mixture over slices, then garnish with the chopped green onions.
- You can slice and brown the tofu any way that you prefer -- cut it into logs, blocks or even little bunny shapes if that's what you like!
