1 1/4 ounces taco seasoning
1/3 cup water
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon pepper
11 ounces whole kernel corn
1/2 cup salsa
2 deep dish pie shells
2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 400°F.
  • Brown ground beef in a large skillet over medium-high heat and drain. Add taco season, water, garlic, and onion powder. Stir until coated. Add corn and salsa to meat mixture.
  • Put 1 cup of cheddar cheese on the bottom of pie crust. Add meat mixture, cover with remaining cheese, and cover with top crust.
  • Bake for 30 minutes, or until golden brown.

3 tablespoons unsalted butter
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
2 tablespoons all-purpose flour
One 10-ounce bag (about 2 cups) frozen chopped onion and pepper mix
One 15-ounce can black beans, drained and rinsed
1 chipotle in adobo sauce (from a 7-ounce can), chopped, plus 1 tablespoon adobo sauce
1 cup frozen corn kernels
One 4.5-ounce can green chiles
2 cups chicken stock
1 small rotisserie chicken, meat shredded (about 2 1/2 cups), bones and skin discarded
One 16.3-ounce can flaky refrigerator biscuits, each biscuit peeled in half along the middle layer
1/2 cup crema or sour cream
1/4 cup fresh cilantro leaves
Thinly sliced Fresno chile and lime wedges, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the butter in a 10-inch cast-iron skillet over medium heat. While the butter is melting, add the chili powder, cumin and paprika and "bloom" the spices. Add the flour and cook, stirring, 30 seconds to 1 minute. Add the frozen vegetable mix and let it cook, stirring occasionally, until softened, about 5 minutes. Add the beans, chipotle and adobo sauce, corn and green chiles. Stir in the chicken stock and let it thicken slightly. Add the shredded chicken and stir together.
  • Top with the biscuits and bake until the biscuits are golden brown, 13 to 16 minutes (see Cook's Note).
  • Serve with a dollop of crema and garnished with cilantro, Fresnos and a lime wedge on the side.

3 tablespoons vegetable oil
8 corn tortillas, halved
1 small onion, chopped
2 cloves garlic, minced
Pinch of cayenne pepper
3/4 pound ground pork
Kosher salt
1 15-ounce can crushed tomatoes
2 4.25-ounce cans chopped green chiles
1 cup frozen corn
1/2 cup chopped fresh cilantro
1 cup shredded mozzarella (preferably reduced sodium)

Steps:

  • Preheat the oven to 400 degrees F. Heat the vegetable oil in a large skillet over medium-high heat. Add the tortillas and cook, flipping a few times, until golden, about 3 minutes. Remove with tongs and transfer to a paper towel-lined plate to drain. Add the onion to the skillet and cook, stirring, until soft, about 3 minutes. Add the garlic and cayenne and cook 30 seconds. Add the pork and 1/4 teaspoon salt and cook, breaking up the meat, until browned, about 4 minutes. Stir in the tomatoes, chiles and corn. Bring to a simmer and cook until slightly thickened, about 3 minutes. Season with salt. Remove from the heat and stir in the cilantro. Arrange half of the tortillas in the bottom of a 9-to-10-inch pie plate. Top with half of the meat mixture, then half of the cheese. Repeat with the remaining tortillas, meat and cheese. Cover loosely with foil and bake until the cheese melts, about 10 minutes.

4 ounces onions, small dice
3 ounces green bell peppers, medium dice
3 ounces red bell peppers, medium dice
6 tablespoons oil
2 pounds button mushrooms, quartered
2 pounds rib-eye steak, very thinly sliced
1 teaspoon salt
1 cup milk
1/4 cup heavy cream
6 ounces soft American cheese, such as Velveeta
3 ounces American cheese
6 baked puff pastry rounds, for serving

Steps:

  • For the cheesesteak filling: Saute the onions and peppers in the oil until translucent, and then remove from the pan. Add the mushrooms to the pan and cook until well browned. Return the peppers and onions to the pan along with the beef. Cook the beef, chopping up with a wooden spoon, until just cooked through. Season with salt, remove from the heat and spread out on a baking sheet to chill.
  • For the cheesesteak sauce: Combine the milk and cream and bring to a simmer. Whisk in the cheeses until thoroughly melted and well mixed. Set aside until ready to use.
  • For serving: For each serving, heat 8 ounces of the steak and vegetable mixture in a saute pan. Add 4 to 5 ounces of the sauce and bring to a simmer. Cook until heated through very well and the sauce has started to reduce. Once hot, pour into bowls and top with the rounds of baked puff pastry.

Ground beef, peppers, corn, onions and cheeses all snuggled up like a pot pie between two crusts!Barry Conway submitted this winning entry to Emeril's Pie Contest. I watched him make this the other night and decided to try it. It's easy to see why this pie was a winner! It is just oustanding and a snap to put together. A great family meal, I would suggest a guacamole salad on the side. Watch the cook time! I only baked for 20 minutes.

1 lb ground beef
1 (1 1/4 ounce) package taco seasoning mix
1/3 cup water
1 tablespoon oil
1 (1 lb) package frozen peppers and onions
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon pepper
1 (11 ounce) can whole kernel corn, drained
1/2 cup salsa
1 (15 ounce) package refrigerated pie crusts, softened as directed on package
8 ounces shredded colby-monterey jack cheese or 8 ounces Mexican blend cheese (2 cups)

Steps:

  • Preheat oven to 400 degrees F.
  • Brown ground beef in large skillet over medium-high heat for 8 to 10 minutes or until thoroughly cooked, stirring frequently.
  • Drain.
  • Add taco seasoning mix and water; mix until ground beef is well coated.
  • Meanwhile, heat oil in large saucepan over medium high heat until hot.
  • Add peppers and onions; cook 4 to 5 minutes or until tender, stirring occasionally.
  • Remove from heat and drain excess liquid.
  • Add garlic and onion powders, salt, pepper, corn, and salsa, stir well and set aside.
  • Prepare pie crusts as directed on package for 2-crust pie using 9-inch glass or metal pie pan.
  • Combine salsa and corn mixture with ground beef; mix well.
  • Sprinkle 1/2 cup of cheese evenly in bottom of crust-lined pan.
  • Spread 1/2 of beef mixture evenly in pan over cheese, pat down.
  • Sprinkle 3/4 cup cheese in pan and spread evenly with remaining beef mixture, pat down, top with remaining 3/4 cup cheese.
  • Top with second crust and flute; slit in several places.
  • Bake for 30 minutes or until crust is golden brown.
  • Cover edge of crust with strips of foil or a pie crust shield after 15 minutes of baking.
  • Let stand 5 minutes before serving.
  • Store in refrigerator.
  • Garnish with a dollop of sour cream and a drizzle of taco sauce.
  • Also recommended: guacamole, salsa, and diced green chiles.
  • *If using fresh peppers and onions, use 1 1/2 cups chopped onions and 2 1/2 cups chopped peppers and increase prep time and stove top cooking time.

1 jar (16 oz) Old El Paso™ Thick 'n Chunky salsa (2 cups)
1/2 cup water
1/4 teaspoon ground cinnamon
1 cup frozen corn
1 can (15 oz) Progresso™ chick peas (garbanzo beans), drained
1 pouch (6.5 oz) Betty Crocker™ cornbread & muffin mix
1/2 cup milk
1 tablespoon vegetable oil
1 tablespoon roasted sunflower nuts, if desired

Steps:

  • In 4-quart Dutch oven, heat 1 tablespoon oil over medium-high heat. Add onion; cook about 5 minutes, stirring occasionally, until crisp-tender.
  • Stir in sweet potatoes, salsa, water and cinnamon. Heat to boiling; reduce heat. Cover; simmer 20 to 25 minutes or until squash is tender. Stir in corn and beans.
  • In medium bowl, mix cornbread mix, milk and 1 tablespoon oil. Stir in nuts. Drop dough by large spoonfuls onto vegetable mixture. Cover; simmer about 15 minutes or until toothpick inserted in center of dumplings comes out clean.

1 tablespoon cornmeal, divided
3/4 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup milk
1 tablespoon vegetable oil
1 lb lean ground beef
1 cup chunky salsa
1 cup colby-monterey jack cheese, shredded
1 cup lettuce, shredded
1/2 cup tomatoes, chopped
1/4 cup sliced olive
sour cream (to garnish)

Steps:

  • Preheat oven to 450 degrees. Lightly spray 9" pie plate with non stick spray.
  • Sprinkle 1 tbsp cornmeal evenly onto bottom and sides of prepared pie plate.
  • For crust; combine 1/4 c cornmeal, flour, baking powder and salt. Add milk and oil; stir with fork until mixture forms a ball.
  • On a lightly floured surface roll out dough to a 10 inch circle.
  • Place in prepared pie plate; shape edge to form rim.
  • For filling; cook and stir ground beef over medium heat 8-10 minutes or until beef is no longer pink; drain. Stir in salsa.
  • Spoon beef mixture into pie crust; sprinkle with cheese.
  • Bake 12-15 minutes or until crust is golden brown and cheese is melted.
  • Top pie with lettuce, tomato and olives. Garnish with sour cream and additonal salsa if desired.

1 red pepper
1 green pepper
1 yellow pepper
1 large onion
1 lb. ground beef
1 pkg taco seasoning
1/3 c. water
1 tsp onion powder
1 tsp garlic powder
salt, pepper
1/2 c. salsa
1 can corn, drained
8 oz. mexican blend cheese or cheddar cheese
2 pie crusts, thawed

Steps:

  • brown ground beef. drain and add taco seasoning and water, stir to coat meat. heat oil in large pan. add peppers and onion, cooking until tender. drain cooked vegetable, pat dry with paper towels. add onion and garlic powders, salt and pepper, salsa and corn to meat mix. pat 1 pie crust in pie pan. sprinkle 1/2 c. cheese on pie crust. Place 1/2 of meat mix on cheese. sprinkle with 3/4 c. cheese. Place rest of meat on top, pat down and then top with remaining cheese. Top with second crust and slit in several places. Bake for 15 minutes or until crust is golden brown. Cover edge of crust with pie crust shield and bake another 15 minutes. Let stand 5-10 minutes before serving. Store in refrigerator.

SOUTHWESTERN CHICKEN POT PIE

Mmmmmmmmm, really delish and a comfort food for dh and I. Easy to prepare, not much time involved. My dh showed me this in our state daily newspaper and said he'd like for me to try it. I did and fix it alot now. I serve it with warm flour tortilla's w/butter and sometimes warmed nacho chips and salsa. It's very filling and if we don't want it the next day, I have frozen it with success. Also, I have used a can of green chilis instead of the adobo seasoning and think you could spice it as hot as you want with jalepenos. We just don't do hot or really spicy. Also, the last time I only had cheddar cheese and it turned out fine, but it is better with the monterey jack/cheddar blend. Thanks for trying one of our favorite dinners!

2 cups shredded monterey jack and cheddar cheese blend, divided
1 (8 ounce) package corn muffin mix (I made my own)

Steps:

  • Preheat oven to 375 degrees.
  • Heat oil in large skillet over med-hi heat add chicken and saute 5-7 minutes or until done.
  • Add beans, corn, tomato sauce and seasonings to skillet.
  • Bring to a boil over med heat.
  • Remove from heat and stir in 1 cup shredded cheese.
  • Pour into a 2 1/2qt casserole.
  • Top with remaining cheese.
  • Prepare corn muffin mix batter as directed on package.
  • Spoon dollops of the batter over chicken mixture.
  • Bake 25-30minutes or until corn bread is golden brown.
  • You may serve with warm flour tortillas w/butter and a salad if desired.
