6 skinless boneless chicken breasts, cut into 2-inch cubes
2 tablespoons butter
2 cups sliced fresh mushrooms
1 (10.75 ounce) can condensed cream of mushroom soup
1 (5 ounce) can evaporated milk
1 ½ cups shredded Cheddar cheese
½ teaspoon garlic powder
½ cup white wine
½ cup mayonnaise
½ cup slivered almonds for topping
¼ cup grated Parmesan cheese for topping

Steps:

  • Place the chicken in a saucepan and add water to cover. Bring to a boil over high heat, then reduce the heat to medium-low, cover, and simmer until the chicken pieces are no longer pink, about 10 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Melt the butter in a skillet over medium heat. Stir in the mushrooms; cook and stir until the mushrooms are lightly browned and have released their liquid, about 5 minutes.
  • Place the chicken pieces in the prepared baking dish and add the sauteed mushrooms.
  • In a small saucepan over medium heat, combine and heat the soup, milk, Cheddar cheese and garlic powder. Remove from heat and add the white wine and mayonnaise. Pour mixture over the chicken and mushrooms. Top with slivered almonds and grated Parmesan cheese and bake in the preheated oven for 1 hour.

4 skinless chicken breasts
1 tbsp plain flour, seasoned
150ml chicken stock (use ½ a cube)
250g pack chestnut mushroom, halved
few thyme sprigs, leaves only
150ml red wine
1 tbsp mild olive oil or vegetable oil

Steps:

  • Toss the chicken in the flour, then tap off the excess. Mix 1 tsp of the excess flour with a little stock and set aside. Heat the oil in a frying pan, then add the chicken, mushrooms and thyme. Cook over a medium-high heat for about 5 mins, turning the chicken breasts over once until golden.
  • Lift the chicken out, then set aside. Pour in the wine and the remaining stock and boil for 5 mins or until reduced by half. Add the flour and stock mix, stirring until the sauce thickens a little. Put the chicken back into the pan, along with any juices from the plate, then simmer for 5 mins or until cooked through and the sauce is glossy. Serve with mash.

1 tablespoon minced garlic
3 pounds skinless, boneless chicken breast halves
1 tablespoon paprika
1 cup brown sugar
1 cup red wine

Steps:

  • Heat oil in a large skillet over medium high heat. Cook garlic in oil until tender. Place chicken in the skillet, and cook about 10 minutes on each side, until no longer pink and juices run clear.

4 skinless, boneless chicken breast halves
¼ cup all-purpose flour for dusting
1 teaspoon salt
1 teaspoon ground black pepper
2 tablespoons olive oil
2 ½ cups fresh sliced mushrooms
2 cups heavy cream
1 cup champagne

Steps:

  • Lightly dust chicken breasts with flour and a little salt and pepper.
  • In a large skillet, lightly brown chicken breasts to a nice golden brown in olive oil. Once browned on both sides, add mushrooms and champagne. Cook over medium heat, champagne should boil a little, for approximately 1/2 hour. When chicken is tender, transfer chicken to a platter.

I found this recipe on-line. I am always looking for grilling recipes, and my kids always enjoy sauce over their grilled chicken, so this looked perfect. Putting here for safe keeping. Update, 10/27/2013: I have now made this recipe and really enjoyed it. My DH loves to make boneless, skinless chicken breasts, wrapped in bacon and grilled over the charcoal grill. So I made this as written except my chicken was wrapped in bacon, so yummy. Then served it with the sauce. I didn't expect the sauce to taste much of garlic based on other reviews, but for us, I found it very garlicky and would cut back on that next time for our tastes and maybe use about double the amount of broth.

4 - 6 bone-in chicken breasts
1 tsp salt and pepper each
1 small (((1.5 lb) bag of baby potatoes)
2 tbsp olive oil or coconut oil
1/2 large onion (, sliced or diced)
1 whole head of garlic (, minced or put through a press)
2 - 3 cups mushrooms (, quartered)
4 sprigs of thyme
2 - 3 cups white wine
2 tbsp cornstartch
1/4 cup half and half cream
1 tsp salt and pepper each or more to taste.

Steps:

  • Heat a large oven proof skillet on medium high heat. While you are waiting for it to get hot, season your chicken well with salt and pepper.
  • Pre-heat your oven to 375.
  • When the pan is hot, add the coconut or olive oil and then the chicken. Brown the chicken on both sides and then remove it from the pan. Set aside for a moment.
  • Turn the heat down to medium, add the onion and garlic to the pan and saute for a few mins, making sure to scrape all the browned bits off the bottom of the pan.
  • Add the mushrooms and the thyme and saute again for a few more mins.
  • Add the wine and cook the sauce till the wine starts to bubble a bit. Make a slurry (or paste) with a little wine and the cornstarch and add it to the pan. Stir till the sauce starts to thicken and then add the cream.
  • Season the sauce to taste with salt and pepper and then return the chicken to the pan. Add the baby potatoes and place the skillet in the oven.
  • Cook for 25 to 30 mins or until the chicken is cooked through. Make sure to test a thick piece before you take the chicken off the heat.
  • Cover the chicken and let it rest for 5 - 10 mins and serve.

30 g unsalted butter
2 green onions, chopped (shallots)
1 cup dry white wine
1/2 cup light cream
1/2 cup shredded basil

Steps:

  • Cover each chicken breast with plastic wrap and lightly flatten with a rolling pin. Season well with freshly ground pepper.
  • Melt butter in a large frying pan on medium.
  • Cook chicken breasts for 3 minutes each side, until golden and almost cooked through. Remove to a platter and keep warm.

1 lb mushroom, sliced
1 1/2 cups heavy cream
1/4-3/8 cup champagne
1 -2 tablespoon cornstarch (optional)

Steps:

  • Mix 1/4 cup flour, 1 teaspoons salt, 1/2 tsp pepper; roll chicken in it.
  • Heat 1/2 cup butter in large skillet. Lightly brown chicken breasts.
  • Add sliced mushrooms. Cover and cook 10 minutes. Transfer chicken and mushrooms to a bowl/plate then clean pan of all butter.
  • Return chicken and mushrooms to pan and add cream and simmer over low heat 10 minutes.

1 tablespoon butter
1 tablespoon olive oil
4 boneless chicken breasts
10 large garlic cloves (whole)
3/4 cup dry white wine (or chicken stock)
3/4 cup chicken stock (low sodium)
2 tablespoons all purpose flour
2 teaspoons fresh thyme (or 1 teaspoon dried)
salt and pepper to taste (will vary depending on salt in chicken stock)

Steps:

  • Heat large skillet to medium high heat.
  • Melt butter and add olive oil.
  • Rub olive oil on chicken and liberally sprinkle chicken with salt and pepper. This will help form a crust.
  • Sear chicken 3-4 minutes on each side. Chicken will release easily from pan when ready to turn. ( It will not be fully cooked but continue to cook in the sauce.)
  • Remove chicken to plate and cover with foil to keep warm.
  • Reduce heat to medium low. Add whole garlic cloves and saute until lightly brown.
  • Sprinkle flour over garlic stirring until no flour is visible.
  • Pour in wine and chicken stock. Simmer for 5 minutes until slightly thick. Add thyme. Taste for seasoning. More salt? More pepper? This will vary especially if using low sodium chicken broth.
  • Add chicken back to pan and continue to cook for an additional 10 minutes or until internal temp reaches 165 degrees.
  • Serve with fresh steamed vegetables, potato or rice.
