I created this southwestern pasta salad for a friend who owns a catering business. I was told it was a hit at her events and it's now among the most-requested dishes. -Valonda Seward, Coarsegold, California

1/2 cup fresh lime juice
1/4 cup olive oil
2 teaspoons ground cumin
2 garlic cloves, minced
1 tablespoon salsa
1 tablespoon white wine vinegar
3/4 teaspoon cayenne pepper
1/2 teaspoon salt
1 package (16 ounces) uncooked spiral or cavatappi pasta
1-1/2 cups fresh or frozen whole kernel corn, thawed
1 can (15 ounces) black beans, rinsed and drained
1 cup cherry tomatoes, halved
2 cans (2-1/4 ounces each) sliced ripe olives, drained
1 small green pepper, finely chopped
1 small sweet red pepper, finely chopped
1 small red onion, finely chopped
1/2 cup coarsely chopped fresh cilantro, divided
1 medium ripe avocado, peeled and sliced

Steps:

  • In a small bowl, whisk the first 8 ingredients until blended. Cook pasta according to package directions. Drain pasta; rinse with cold water., In a large bowl, mix pasta, corn, beans, tomatoes, olives, peppers, onion and 1/4 cup cilantro. Pour dressing over salad; toss to coat. Refrigerate until serving., Just before serving, top with avocado and the remaining cilantro.

Southwestern Salsa-Style Pasta Sauce image

I found this recipe on Tabasco's website. It's the first pasta I ever learned how to cook and cook well. Generally, it's a pasta sauce that is almost like a salsa but is served over angel hair pasta. The cheese is essentially what makes the whole thing. This is MY version of the recipe. It calls for slightly more garlic and a bigger onion instead of 2 mediums. I also add pepper and a lot more Tabasco to give it a slight kick. It's also one of the only sauces I know that tastes great, cold.

4 tablespoons olive oil
4 garlic cloves, minced
1 white onion, diced
1 (28 ounce) can diced tomatoes
4 tablespoons cilantro, minced
1 teaspoon salt
2 tablespoons Tabasco sauce
1 tablespoon sugar
pepper, to taste
1 lb angel hair pasta

Steps:

  • I always make sure to chop my stuff up before I start, so peel your garlic and mince it, then put it aside. I keep my minced garlic in a shot glass. Next, dice your onion. Put that aside. Also, mince your cilantro. The cilantro doesn't HAVE to be minced now but it IS good to mince it during the last 2 minutes of sauteing your onions and garlic.
  • Get a saucepan and line the bottom with Olive Oil over medium heat.
  • Once hot, throw in your garlic and onions.
  • Immediately add a layer of salt and pepper and stir.
  • Set your kitchen timer for 12 minutes and stir about once every 1-2 minutes thereafter, to keep the garlic and onion cooking down and to prevent it from cooking the middle portion of the pan.
  • After 12 minutes, open your can of tomatoes and add those in there. Also, add your salt, sugar, cilantro, and Tabasco Sauce. Stir REALLY well. Use the pepper to taste. If the sauce tastes too "salty", add a tiny bit of sugar and stir to balance it out. If it tastes too sweet, add a tiny bit of salt to balance it. You want it someplace in the middle.
  • Turn the heat up to the highest setting and boil it for about five minutes while stirring frequently to prevent burning as well as to burn off some of the extra juice from the tomatoes and thicken the sauce.
  • Turn the heat down to LOW (about "2" on any stove) and let the sauce simmer for about 30 minutes, stirring about every 5-10 minutes.
  • Prepare your pasta according to the package. It would help to add a splash of olive oil to your water to prevent foaming.
  • Drain and serve the pasta in a large serving bowl and add the sauce separately.
  • Add Cheese.
  • Enjoy!

Salsa is an easy way to dress up pasta, resulting in an offbeat, festive dish.

8 ounces rotini (pasta twists)
One 16-ounce can black beans, drained and rinsed
1 cup cooked fresh corn (from 1 to 2 ears) or frozen corn kernels, thawed
One 16-ounce jar tomato salsa, mild or medium-hot, or to taste
2 to 3 scallions, thinly sliced

Steps:

  • Cook the pasta according to package directions and drain.
  • Meanwhile, combine the beans, corn, salsa, and scallions in a saucepan and bring to a simmer.
  • Combine the pasta and sauce, toss well, and serve.

1 lb. extra-lean ground beef
1 jar (16 oz.) TACO BELL® Thick & Chunky Salsa
1 g zucchini, chopped
1 tsp. chili powder
3 g cavatappi pasta, uncooked
1 g (11 oz.) no-salt-added corn, drained
1 cup KRAFT 2% Milk Shredded Cheddar Cheese, divided
1 Tbsp. lime juice
1/4 cup chopped cilantro

Steps:

  • Brown meat in large skillet sprayed with cooking spray; drain. Stir in salsa, zucchini and chili powder; simmer on low heat 10 min., stirring occasionally. Meanwhile, cook pasta as directed on package.
  • Stir corn and 1/2 cup cheese into meat mixture; cook 3 min. or until cheese is melted, stirring frequently.
  • Drain pasta; place in large bowl. Add meat mixture, lime juice and cilantro; mix lightly. Top with remaining cheese.

1/4 cup light olive oil
1/2 cup fresh lime juice
1 1/2 teaspoons cayenne, to taste

1 tablespoon salsa, to taste
1 tablespoon white wine vinegar
1 1/2 cups whole kernel corn (can, Frozen or Fresh)

1/2 cup green bell pepper, diced
1/2 cup red bell pepper, diced
1/2 cup fresh cilantro leaves, rough chopped
1 cup cherry tomatoes, halved
1 cup black olives, sliced
1/2 cup red onion
1 large avocado, sliced

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large bowl combine oil, vinegar, lime juice, cayenne, cumin, salt, garlic, dried cilantro and salsa.
  • Stir in corn, beans, green pepper, red pepper, tomatoes, olives and 1/2 of the cilantro leaves. Spoon onto a platter and garnish with avocado and remaining cilantro. Serve chilled.

This always goes over very well when I've taken this to pot-lucks. I use low-fat mayonnaise and sour cream, so it makes a healthy, and flavorful dish. In a clear straight-sided bowl, this makes a nice colorful presentation.

8 ounces medium pasta shells, uncooked
3/4 cup mayonnaise
1/2 cup sour cream
1/2 cup salsa
2 tablespoons fresh cilantro, minced
2 teaspoons vegetable oil
1/2 teaspoon cumin
salt, to taste
1 (15 ounce) can black beans, rinsed and drained
1 (11 ounce) can whole kernel corn, drained
1 red bell pepper, cut into strips
3/4 cup green onion, sliced
1 (2 1/4 ounce) can black olives, drained and sliced

Steps:

  • Prepare pasta according to package directions; drain and rinse under cold water. Drain again.
  • Toss with oil and sprinkle with cumin; salt to taste.
  • Layer pasta, beans, corn, bell pepper, green onion and olives in a 2 1/2 to 3 quart straight sided bowl.
  • In a small bowl combine mayo, sour cream and salsa; mix well. Spread evenly over top of pasta, sealing to edge of bowl. Sprinkle with cilantro.

2 (8 ounce) cans shoe peg corn, not drained
1/2 orange bell pepper, chopped (or yellow or red bell pepper)
1/2 purple onion, medium, diced
2 -3 jalapeno peppers (optional to remove seeds)
1 quart diced tomato
1 tablespoon oil
1/2 teaspoon salt

While browsing for a pasta salad recipe, I found Inez Willenborg's Homestyle Macaroni Salad. It sounded good, but I didn't have all the ingredients, so I improvised and came up with this one. We absolutely loved it. Thank you, Inez, for the recipe that was the inspiration for this winner.

2 hardboiled egg, chopped
1/2 cup celery, chopped fine
1/4 cup fresh salsa (homemade or the refrigerated variety sold in the produce section)
2 scallions, chopped
1/4 cup buttermilk
1/4 cup Miracle Whip (or mayonnaise)
1/2 teaspoon garlic powder
1/8 teaspoon cayenne pepper

  • Cook pasta in salted boiling water until tender.
