1 bone-in whole turkey breast (4 1/4 to 5 lb), thawed if frozen
1/2 cup apple juice or dry white wine
2 tablespoons chopped fresh or 1 1/2 teaspoons dried thyme leaves
1 teaspoon paprika
1/2 teaspoon salt
2 cloves garlic, finely chopped

Steps:

  • Heat oven to 325°F. On rack in large shallow roasting pan, place turkey breast, skin side up. Insert ovenproof meat thermometer so tip is in thickest part of breast and does not touch bone.
  • Roast uncovered 30 minutes.
  • In small bowl, mix remaining ingredients. Brush one-third of apple juice mixture over turkey.
  • Roast 1 hour to 1 hour 30 minutes longer, brushing generously with apple juice mixture every 30 minutes, until thermometer reads at least 165°F. Cover with foil; let stand 15 minutes for easiest carving.

2 lbs boneless turkey breast
3 tablespoons olive oil
3 garlic cloves, finely chopped
2 tablespoons fresh thyme leaves
1 tablespoon Dijon mustard
1 teaspoon grated lemon peel
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons lemon juice
1 tablespoon butter

Steps:

  • Trim turkey breast of any fat.
  • In a small bowl combine olive oil with garlic, thyme, mustard, lemon peel, salt and pepper. Rub into turkey breast.
  • Marinate in the refrigerator from 1 hour to 12 hours.
  • Arrange turkey breast, skin side up, on a baking sheet lined with parchment paper or tinfoil.
  • Roast at 350F for 50 to 60 minutes or until a meat thermometer inserted into the thickest portion of the breast reaches 165F and the juices run clear.
  • Remove turkey from oven to a carving board and tent with tinfoil. Place juices in a medium skillet (could drain off some of the fat) add lemon juice (perhaps use less if some of the fat drained off) and boil for 2 minutes. Remove from heat and stir in butter.
  • Carve turkey into thin slices across the breast. Drizzle with sauce and garnish with fresh thyme.

6 lb turkey breasts (half or whole breast, completely thawed out)
1 onion (cut into 4 wedges)
2 celery ribs (cut into 3 " pieces)
2 carrots (cut in 2-3" pieces)
3-4 garlic cloves (cut in half lengthwise)
1 lemon (quartered)
4 fresh thyme sprigs
1/2 cup chicken stock
½ cup butter (1 stick, softened)
4 cloves garlic (pressed)
zest and juice from 1 lemon
1 tablespoon fresh rosemary (chopped)
1 tablespoon fresh thyme (chopped)
1 teaspoon salt
½ teaspoon freshly ground black pepper
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 teaspoons salt
½ teaspoon fresh ground pepper
2 tablespoons olive oil

Steps:

  • Preheat the oven to 425 F.
  • Wash turkey breast and pat it dry with paper towels. Remember to take out the giblets.
  • Season inside of turkey cavity generously with salt and pepper.
  • Using the back of a spoon, carefully separate the skin from the turkey meat, moving downwards with the spoon's back. Loosen the skin from both sides of the turkey breast. You can also just use your fingers to do this, but I find it easier with the spoon. Set aside.
  • Make compound butter by adding butter, lemon juice, lemon zest, minced garlic, and chopped herbs to a small bowl. Using a fork mash and mix until well combined.
  • Spread out 2/3 of the garlic lemon compound butter under the turkey's skin using a spoon and using your hands to spread it evenly. Spread the rest of the compound butter over the top of the skin. Set aside.
  • In a small mixing bowl combine paprika, garlic powder, onion powder, dried thyme, dried rosemary, salt, and fresh ground pepper; pour in olive oil and mix until well incorporated.
  • Slather the spice rub all over the turkey breast on the outside.
  • Add onion wedges, chopped celery and carrots, garlic, and fresh thyme sprigs to a small roasting pan or large enough baking dish or skillet.
  • Place turkey breast on top, skin side up. If making ahead, stop here; cover turkey with foil and refrigerate for up to 24 hours. Remove from the fridge 1 hour before cooking.
  • Pour chicken stock into the pan.
  • Transfer to the oven and place on the middle-lower rack, don't cover the turkey. Reduce oven heat to 325˚F.
  • Bake for 2 to 2.5 hours depending on the size of the turkey breast (see turkey breast cooking time chart below,, or until internal temperature reaches 155˚F. About 15 to 18 minutes per pound. Use a instant read meat thermometer to check for doneness.(If you want crispier skin, baste the turkey breast every 30 minutes. If the top of the turkey breast starts to brown too quickly, loosely tent a piece of foil over the turkey breast and continue to roast.)
  • Remove from the oven & let stand for 20 - 30 minutes before cutting.

1 turkey breast, on the bone rinsed and patted dry (6 to 7-pounds)
1/4 cup unsalted butter, softened
aromatics and seasonings for turkey (recommended ( garlic, fresh herbs, citrus zest, spices, etc.)

  • Preheat the oven to 325 degrees F.
  • In a small bowl, combine the softened butter with chosen aromatics and seasonings and salt and pepper.
  • Carefully lift the skin from the meat and rub half of the seasoned butter directly on the turkey breast. Rub the rest of the seasoned butter on the skin. Season the turkey generously with salt and freshly ground black pepper.

1 gallon water
1 bunch fresh thyme
4 whole heads fresh garlic, cut in half horizontally
2 medium yellow onions, peeled and quartered
4 lemons, zest removed in large strips
1 tablespoon whole black peppercorns
6 fresh or dried bay leaves
1 cup kosher salt
1 cup light brown sugar
Ice
One 20-pound fresh turkey, neck and giblets removed, rinsed
2 sticks (1 cup) unsalted butter, room temperature
2 teaspoons fine sea salt
1 tablespoon freshly ground black pepper

Steps:

  • For the brine: Heat the water, thyme, garlic, onion, lemon zest, peppercorns, bay leaves, kosher salt and light brown sugar in a large saucepan over medium-high heat, stirring frequently, until the sugar and salt dissolve. Transfer the liquid to a clean 5-gallon bucket. Add enough ice to total 3 gallons of liquid and mix until incorporated.
  • For the turkey: Add the turkey to the bucket with the brining liquid and refrigerate for at least 12 hours.
  • When ready to roast, preheat the oven to 450 degrees F. Have ready a large roasting pan with a rack.
  • Remove the turkey from the brining liquid and use paper towels to pat it as dry as possible inside and out. Rub the turkey with the butter all over, including the cavity, and sprinkle with the sea salt and pepper. Stuff the cavity with the thyme, garlic, onions, bay leaves and lemon zest from the brine solution. Fold the wingtips underneath the turkey. Truss the legs with kitchen twine. Place the turkey in the roasting pan, breast-side up. Fold the neck flap under.
  • Roast the turkey for 1 hour to brown it, then reduce the oven temperature to 350 degrees F and cook for another 1 1/2 to 2 hours or until a thermometer inserted in the thickest part of the thigh registers 165 degrees F. Let the turkey rest at room temperature, covered with foil, for 30 minutes before carving.

1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 350 degrees F.
  • Remove the turkey breast from the fridge 30 minutes before cooking to bring it to room temperature. Cut 3 pieces of kitchen twine and set aside.
  • Add the butter, parsley, lemon zest, thyme, onion powder, garlic, 1/4 teaspoon salt and 1/4 teaspoon pepper to a small bowl. Use a fork or a rubber spatula to incorporate all of the ingredients into the butter. Set aside.
  • Pat the turkey breast dry. Using clean hands, starting at one end of the breast, slide your fingers under the skin to create a pocket between the meat and the skin. Use your hands to transfer the butter into the pocket and smooth the butter into an even layer.
  • Use the kitchen twine to tie the turkey horizontally in 3 places. This will help the turkey breast cook evenly and remain juicy. Flip the turkey breast so that it is skin-side down. Drizzle it with 1 teaspoon olive oil and sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper. Flip the turkey over and repeat the same seasoning process.
  • Arrange the onion slices on a small rimmed baking sheet. Pour 1/3 cup water into the baking sheet and place the turkey breast on top of the onions. Transfer to the oven and roast for 1 hour. Remove the turkey from the oven and baste it with the butter and juices from the baking sheet. Continue to roast until the internal temperature is 160 degrees F, another 20 to 25 minutes. Allow the turkey to cool for 15 minutes. (In this time the internal temperature will rise another 5 degrees.)
  • Slice the turkey and serve it with the roasted onions.
