Canned corn,green chilies,jalapenos,green onions, mayo and sour cream. So.... easy. I found this is the Almost Homemade Gooseberry Cookbook, submitted by C.Snodgrass in Rolla, Mo. So easy, and so good. I have made a few Bakinbaby adjustments.

Number Of Ingredients 11

2 (11 ounce) cans corn mixed with chopped peppers (drained)
7 ounces green chilies (diced)
6 ounces jalapenos (chopped or drained-reserve juice)
1/2 cup green onion
1/4 cup red bell pepper (chopped)
1 cup mayonnaise
1 cup sour cream
1 teaspoon fresh ground pepper
1 garlic clove (minced)
1 cup monterey jack cheese (shredded)
1 cup cheddar cheese (shredded)

Steps:

  • Combine ingredients, do a taste test, if it needs more spice, add 1 teaspoons of the jalapeno juice or if you really like it hot, add 1/4 teaspoons cayenne pepper or more jalapenos.
  • Flavor is better if allowed to set overnight or up to two days.
  • Serve with corn chips.

1 1/2 cups sour cream
1/2 cup mayonnaise or salad dressing
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon garlic salt
1/4 teaspoon onion powder
1/4 teaspoon paprika
1 cup shredded Cheddar cheese (4 ounces)
1 can (4.5 ounces) Old El Paso™ chopped green chiles, drained
Tortilla chips, if desired

Steps:

  • In medium bowl, mix all ingredients except cheese, chilies and tortilla chips. Stir in cheese and chilies.
  • Cover and refrigerate 2 to 4 hours to blend flavors. Serve with tortilla chips.

1 (16-oz) can Hormel chili without beans
1 (8-oz) package cream cheese
1 (16-oz) package shredded mild or sharp cheddar cheese
Nachos or chips, to serve

Steps:

  • Microwave the cream cheese in a 12x12-inch glass pie or Pyrex dish for 1 minute, or until cheese is easily spreadable.
  • Spread the cream cheese to coat the bottom of the dish completely.
  • Pour the Hormel chili over the cream cheese.
  • Top with shredded cheddar cheese.
  • Microwave the dip for 3 minutes or until cheese has melted.
  • Serve with nachos or chips.

ADDITIONAL INGREDIENTS (for each batch):
1 cup mayonnaise
1 cup sour cream
Tortilla chips or fresh vegetables

Steps:

  • Combine first eight ingredients. Store in an airtight container in a cool, dry place for up to 6 months. Yield: 12 batches (1-1/2 cups total)., To prepare one batch of dip: Add 2 tablespoons of mix to mayonnaise and sour cream; stir until blended. Serve with chips or vegetables.

1 (8 ounce) package sharp cheddar cheese, grated
1 cup mayonnaise or 1 cup salad dressing
1 (4 1/2 ounce) can chopped ripe olives, drained
1 (4 ounce) can chopped green chilies, drained
1/4 teaspoon garlic powder
bottled hot sauce, to taste
1 tomatoes, seeded and diced
1/2 cup green onion, sliced thinly with green tops

Steps:

  • In a large mixing bowl, stir together the cheddar cheese, mayonnaise or salad dressing,HALF of the ripe olives,green chili peppers, garlic powder, and hot pepper sauce until well combined.
  • Spread the mixture into a 9 inch quiche or pie plate.
  • Bake in a preheated 350 degree oven for about 20 minutes, or until heated through.
  • Sprinkle with the tomato, remaining olives, and green onions in three rings, starting at the edge of the plate.
  • * I like to start with the tomatoes, green onions, then the olives.*.
  • Serve warm with chips of your choice.

2 large onions, chopped
2 green bell peppers, cored, seeded and chopped
2 tablespoons minced (3 large cloves) garlic
3 tablespoons vegetable oil
1/4 cup chili powder, or to taste
1 tablespoon ground cumin
1 tablespoon dried oregano
2 tablespoons tomato paste (recommend getting tube)
3 pounds boneless beef chuck, ground coarse
1 (28-ounce) can whole tomatoes, including liquid
1 to 1 1/2 cups beef broth
4 tablespoons cider vinegar
1-ounce unsweetened chocolate, chopped
1 (19-ounce) can kidney beans, rinsed and drained
Rice, as an accompaniment
Toppings: Tortilla chips; sour cream; grated cheddar; chopped red onions; chopped jalapenos; diced avocado; minced cilantro; etc.

Steps:

  • In a casserole cook the onions, peppers and garlic in the oil over moderate heat, stirring occasionally, for 5 minutes. Add the chili powder, cumin and oregano and cook, stirring, for 3 minutes. Add the tomato paste and cook, stirring, for 2 minutes more. Add the beef and cook, stirring occasionally, until no longer pink. Add the tomatoes, 1 cup of the broth, the vinegar and chocolate and bring the mixture to a boil, crushing the tomatoes with the back of a spoon. Simmer the chili, covered, for 1 hour, adding additional broth, if necessary. Add the kidney beans and simmer, uncovered, for 15 minutes more. Ladle into bowls and serve with rice and desired toppings.

6 dried ancho or guajillo chiles or a mixture (about 3 ounces)
3 tablespoons olive oil, divided
3 pounds beef stew meat, trimmed and cut into 1-inch cubes
1 large onion, chopped
2 garlic cloves, minced
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon ground cumin
2-2/3 cups water, divided
1 bottle (46 ounces) V8 juice
1 can (14-1/2 ounces) beef broth
Sliced seeded jalapeno peppers, optional

Steps:

  • In an enameled cast-iron Dutch oven over medium heat, toast chiles 2-3 minutes (do not burn). Remove from heat; transfer to a small bowl. Add hot water to cover. Soak 30 minutes., Meanwhile, in the same pot, heat 2 tablespoons olive oil over medium heat. Brown beef in batches. Remove with a slotted spoon. Add onion and remaining oil to pot; cook and stir until onion is tender, about 5 minutes. Add garlic; cook 1 minute more. Remove from heat., Drain and split chiles, discarding stems and seeds. Pulse, covered, with salt, pepper, cumin and 2/3 cup water in a blender until pureed, adding water if needed (mixture should be a slightly runny paste)., Return beef to pot, and pot to stovetop. Add V8 juice, broth, chili mixture and remaining water. Bring to a boil. Reduce heat; simmer, uncovered, stirring occasionally, until thickened and meat is tender, 1-1/2 to 1-3/4 hours. If desired, top with jalapeno pepper slices.
