This Smoked Pork Tenderloin is extremely easy to cook and can be cooked with a variety of flavors, spices, and sauces. It's a great weekday dinner option, and can even be fancied up for special occasions.

2 1-pound pork tenderloins
3 Tablespoons Hey Grill Hey Signature Sweet Rub
½ cup Whiskey Peach BBQ Sauce

Steps:

  • Remove your pork tenderloins from the package and use a sharp knife to remove any excess fat and silver skin.
  • Preheat your smoker to 225 degrees F.
  • Season the tenderloins on all sides with the sweet rub. Place the tenderloins on the grill, close the lid, and smoke until the internal temperature of the tenderloins reaches 135 degrees F.
  • Baste on all sides with BBQ Sauce. I like to use my Whiskey Peach BBQ Sauce, but you are welcome to use whatever is your favorite. Cook until the internal temperature of the tenderloin reaches 145 degrees F and the sauce tightens up.
  • Remove the pork tenderloin from the grill. Slice against the grain in 1/2 inch medallions. Serve immediately.

1 tablespoon paprika
Kosher salt and freshly ground pepper
1 teaspoon packed light brown sugar
1 teaspoon ground cumin
1 teaspoon mustard powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
2 teaspoons extra-virgin olive oil, plus more for brushing
2 small pork tenderloins (about 1 1/2 pounds total)
4 ears corn, husked
3/4 cup apple cider vinegar
3 tablespoons packed light brown sugar
2 tablespoons ketchup
1/2 teaspoon red pepper flakes
Kosher salt

Steps:

  • Make the pork: Combine the paprika, 2 teaspoons salt, 1/2 teaspoon pepper, the brown sugar, cumin, mustard powder, onion powder and garlic powder in a bowl. Rub the olive oil all over the pork, then coat with the spice rub. Wrap each tenderloin tightly in plastic wrap and refrigerate 3 to 6 hours.
  • Make the sauce: Combine the vinegar, 1/2 cup water, the brown sugar, ketchup, red pepper flakes and 1 teaspoon salt in a small saucepan over medium heat. Bring to a simmer, stirring until the sugar dissolves; remove from the heat.
  • Remove the pork from the refrigerator about 30 minutes before grilling. Preheat a grill to medium high. Cook the pork, turning occasionally, until a thermometer inserted into the thickest part registers 140 degrees F to 145 degrees F, about 20 minutes. Transfer to a cutting board and let rest 15 minutes.
  • Meanwhile, brush the corn with olive oil; grill, turning, until marked, about 5 minutes. Slice the pork and drizzle with the sauce. Serve with the corn.

4 tablespoons oil
2 pounds pork or veal tenderloin, minced
Salt
Freshly ground black pepper
3 tablespoons butter
1 onion, finely chopped
3 cloves garlic, minced
1 pound chanterelles, trimmed
1 cup heavy cream
1 teaspoon sweet paprika
1/4 teaspoon spicy paprika
1 tablespoon minced marjoram leaves
2 tablespoons minced parsley leaves, plus extra for garnish
2 tablespoons creme fraiche
1 pound wide egg noodles, cooked to al dente

Steps:

  • Heat heavy saute pan. Then add oil until it begins to smoke. Sear the meat until golden brown, season with salt and pepper. Transfer meat to a strainer. Reserve meat and juice separately.
  • Add the butter to the pan. When it begins to brown, add onions, garlic, and chanterelles. Saute over high heat until all the liquid has reduced. Add heavy cream, paprikas, and the juice from the meat. Reduce until sauce has lightly thickened. Add the reserved meat, marjoram and parsley, and season with salt and pepper. Stir in creme fraiche.
  • Serve over noodles, on heated plates, and garnish with minced parsley.

2 teaspoons juniper berries
2 teaspoons whole coriander
1/4 teaspoon crushed red pepper
2 pork tenderloins
1 tablespoon peanut oil
Salt
1 diced onion
1 tablespoon butter
1 teaspoon chopped garlic
Salt and white pepper, to taste
1 cup white stoned grits
2 cups water
1 bouquet garni
1/4 cup cooked garbanzo beans
1 branch celery, sliced and steamed
1/2 leek, sliced and steamed
1 roasted red pepper, julienned
2 tablespoons chives, chopped
1/3 cup carrots, steamed and diced
1/3 cup turnips, steamed and diced
Salt, to taste

Steps:

  • Grind juniper berries, coriander and red pepper in a blender. Then rub the pork tenderloin with the spices. Smoke the pork for 6 minutes at low heat. Put aside.;
  • Saute the onion in the butter and garlic. Add salt and pepper. Add the stone grits, water and bouquet garni. Bring it to a boil, then finish cooking in the oven for 30 minutes in a preheated 380 degree F oven.;
  • Cook the grits. Once cooked, add all the vegetables and mix well. Check the seasonings. Put aside.
  • Broth: 1 branch celery, sliced 1 carrot, sliced 1 red pepper, sliced 1/2 onion, sliced 2 teaspoons harissa Salt, to taste 2 1/2 cups chicken stock
  • Garnish: Whole grain mustard Sage, julienned
  • Boil all the vegetables in the chicken stock for 30 minutes. Put everything in the blender to make a puree. Check the seasoning. Strain and put aside.
  • Saute the pork in the peanut oil and salt until cooked medium. Let it rest for 5 to 10 minutes. Brush the pork with some whole grain mustard and sprinkle some julienne of sage. Put the grits in the middle of the plate and the sliced pork on top. Pour the broth around.

  • Combine the water, honey, and salt in a saucepan and stir over warm heat. Bring the brine back to room temp and then brine the pork tenderloins for 8-10 hours (in the refrigerator).
  • Remove the pork tenderloins from the brine and pat dry and then remove the silverskin from each of them.
  • Generously apply the rub to the surface of each pork tenderloin and then tie them together using butcher string.
  • Smoke the pork tenderloins for about 2 hours at 180 degrees (until internal temp hits 120) then configure your smoker to cook at 400+ degrees. The tenderloins are done when the internal temp hits 160.
