OVERNIGHT CREME FRAICHE

Overnight Creme Fraiche image

Creme Fraiche has a very tangy taste and a lighter texture than sour cream. You can buy it in stores many places, but if not, just make your own. I like this as a substitute for sour cream in dessert recipes because I think commercial sour cream can add a harsh edge to some of the more delicate pastry items.

CHANTILLY CREAM (CREME CHANTILLY)

Chantilly Cream (Creme Chantilly) image

This is the classic, simple, sweetened whipped cream. I think it's the first thing I ever learned how to make as a kid. It's delicious with almost any dessert which calls for cream, as a filler for cakes, and mixed with fresh fruit for an easy dessert. Recipe can be doubled, tripled, quadrupled - just however much you need -keep the proportions of sugar and vanilla. You can use a liqueur instead of vanilla. It is easiest to make when the cream is very, very cold.

Provided by Jangomango

Categories     Dessert

Time 5m

Yield 1 cup

Number Of Ingredients 3

1 cup heavy whipping cream, chilled
2 tablespoons powdered sugar (icing sugar)
1/2 teaspoon real vanilla extract

Steps:

  • Combine all ingredients.
  • Using a hand whisk (balloon whisk) or electric whisk, beat the cream in a stainless steel or glass or china bowl (not plastic- doesn't seem to whip as well).
  • It is whipped properly when it is still soft and billowy but holds its shape when the whisk is withdrawn.
  • Once the cream is whipped, cover and store in the fridge.
  • If it separates slightly, just rewhip to restore its thickness.

TRUE CHANTILLY CREAM

True Chantilly Cream image

Alton Brown's, recipe for stabilized whipped cream is excellent, but as they say in the quarter, "Chantilly made with love, is akin to making love with Chantilly." & Cream Ain't Chantilly Cream! Without Grand Marnier and Brandy. Period! Liberty call, liberty call, liberty call! Still today, years after retirement from thre USN, the memories of hearing the bells and voice calling out that I was free to salute, and scoot, down to the frech quarter or the Garden district of 'Naw-lins'. For beignets n Chantilly Cream. Ooh-wee, p-i-g, hog!

CRèME FRAîCHE WHIPPED CREAM

Crème Fraîche Whipped Cream image

Rich and tangy crème fraîche adds a wonderful zing to whipped cream. It brightens the flavor of the Berry Compote and makes Hazelnut Waffles even yummier, but it's a delicious topping for desserts too.

Provided by Nicole Rees

Categories     Breakfast/brunch

Yield Yields about 3 cups.

Number Of Ingredients 3

4 oz. (1/2 cup) crème fraîche
3 Tbs. granulated sugar
1 cup cold heavy cream

Steps:

  • In a large bowl, whisk the crème fraîche with the sugar until smooth. In a separate large bowl, whip the cream with an electric hand-held or stand mixer until the cream just barely reaches the firm-peak stage (it should hold a peak when the beater is pulled away, but it shouldn't be grainy). With a rubber spatula, gently fold half of the whipped cream into the crème fraîche and then gently fold in the remaining half. Cover and refrigerate until ready to serve; whisk a few times before serving.

HOW TO MAKE HOMEMADE CREME FRAICHE - TASTE OF HOME
Although creme fraiche looks a lot like sour cream, these condiments differ in a couple of key ways. Creme fraiche is slightly thicker than sour cream, and it tastes less sour, too. Another big difference is that creme fraiche contains more protein and less fat, so when you’re adding it to hot stuff like soup, it holds its texture instead of falling apart or curdling.
