Steps:
- Preheat your oven to 350ºF (180ºC).
- Oil a large knife and cut the jackfruit in half.
- NOTE: If using fresh jackfruit, line your work surface with plastic wrap
- Carefully remove the core of the jackfruit by cutting into it at an angle.
- Pull each fruit out and remove its seeds and outer coating. Rinse the fruit thoroughly then dry.
- NOTE: You can save the seeds to roast.
- Heat the oil over medium heat in a large pan or Dutch oven.
- Add the onions and garlic, and cook until translucent.
- Add the jackfruit, spices, Worcestershire, and liquid smoke. Stir to coat evenly.
- Add the vegetable stock and bring to a simmer. Reduce heat, cover and simmer for 45 minutes, until the liquid is mostly absorbed and the fruit has broken down.
- Spread the jackfruit on a prepared baking sheet.
- Bake for 75 minutes, until the liquid has baked out and the jackfruit has a deeper brown color.
- Pour the vegan barbecue sauce over the jackfruit.
- Mix and return to the oven for 15 minutes.
- Serve warm on vegan buns with vegan coleslaw.

- Heat the oil in a frying pan and cook the onion until very soft, for around 10-12 mins. Add the cinnamon, cumin and paprika to the onions and cook for a further 2-3 mins. Next add the Tabasco, vinegar and bbq sauce and mix well before adding in the tomato, the drained jackfruit and 200ml water. Leave to simmer gently, covered, for 30 mins stirring every 5-10 mins to help break down the jackfruit, then take the lid off and cook a further 10 minutes.
- Once cooked, use a fork to make sure all of the jackfruit is well shredded. Check seasoning and add another tbsp of bbq sauce if necessary for extra stickiness.

- Preheat your oven to 400ºF (200ºC).
- Drain and rinse the jackfruit, then cut the jackfruit into smaller pieces, removing the core.
- Add the olive oil, onions, garlic, salt, and pepper to a large frying pan or skillet over medium-high heat. Sauté until the onions are tender and become translucent.
- Add the jackfruit, chili powder, paprika, cumin, liquid smoke, salt, pepper, and liquid smoke, and stir.
- Add the vegetable stock, cover, and cook another 10-15 minutes, until the jackfruit is soft enough that it can be mashed.
- Mash the jackfruit with potato masher or a couple of forks, until it looks pulled or shredded.
- Spread an even layer of pulled jackfruit across a parchment paper-lined baking sheet.
- Bake for 25 minutes.
- Remove from oven and pour over the vegan BBQ sauce and stir to combine.
- Place back in the oven for 10 more minutes.
- Build your burger, top with dressings of your choice.
- Enjoy!

Trick your taste buds with one of my favorite vegan food hacks of all time. Jackfruit is a magical ingredient in that it has a similar texture to pulled pork and can take on whatever flavor you cook it in. After one taste, I bet you'll be amazed!

- Make the smoky sweet BBQ sauce: Combine the tomato sauce, mustard, brown sugar, cane sugar, vinegar, garlic powder, onion powder, liquid smoke and smoked paprika in a small saucepan. Bring to a boil, then simmer until thickened, about 30 minutes. Set aside. Season to taste.
- For the sliders: Heat the canola oil in a saucepan over medium-high heat. Add the onion and cook until it begins to brown, 3 to 4 minutes. Add the jackfruit and 1 1/2 cups of the Smoky Sweet BBQ sauce and bring to a boil. Stir well to combine, then cover and simmer for 20 minutes, stirring occasionally. Add water if the sauce becomes too thick.
- After 20 minutes, remove the lid and shred the jackfruit with two forks. Increase the heat and cook until the jackfruit is well coated with BBQ sauce and heated throughout, another 3 to 4 minutes. Remove the pan from the heat. Divide the jackfruit evenly among the slider buns and top with pickles.

- In a frying pan, heat the oil and fry the red onion for 5-10 minutes over a medium heat until softened and browned at the edges.
- Meanwhile, drain the jackfruit and rinse well. Trim off the core and pop out the seeds with the tip of a knife. (You can skip this. The seeds taste absolutely fine, but rather spoil the "pulled pork" illusion.) Cut each piece of jackfruit in half.
- When the onions are caramelised, add the garlic, the smoked paprika, cumin, oregano, black pepper and tomato puree. Fry for a minute, stirring, then add the jackfruit, soy sauce, treacle or brown sugar, and vegetable stock. Stir everything together, bring to a gentle simmer for 20 minutes.
- When the sauce is reduced and thickened, remove the pan from the heat and use a fork to mash the jackfruit into shreds. Taste and adjust the seasoning with a bit more soy sauce, sugar or some chilli sauce of your choice.
- Serve immediately in the burger buns or wraps.

- Place the jackfruit into a colander and rinse it under cold water. Pat the jackfruit dry with paper towels and slice the cores of the jackfruit.
- Whisk the brown sugar, paprika, garlic powder, onion powder, salt, cayenne pepper, chili powder in a bowl.
- Sprinkle the seasoning over the jackfruit and toss to coat it.
- Place the olive oil into a skillet, heat it over medium-high heat, and add the jack fruit once it is hot.
- Cook the seasoned jackfruit for 2-3 minutes until the jackfruit develops a slightly browned color.
- Add the bbq sauce, lemon juice, and water, place the lid on the pot, and cook for 20 minutes, periodically stirring.
- Use two forks to shred the jackfruit, cover the pot and cook it for an additional 15 minutes.
- Place the jackfruit onto the bottom buns and add the top bun.
- Serve and enjoy!

- Drain the jackfruit. Place in a thick kitchen towel, fold and squeeze out as much liquid as possible. This will shred some of the jackfruit. Slice the rest using a knife or separate using hands until somewhat shredded. Remove any hard seeds if any (There are rarely hard seeds in the canned version. The tender seedbox and stem area are all edible).
- Add the jackfruit to a large bowl with sliced onion, garlic and ginger. Add bbq seasoning and sugar mixture, and salt and mix well.
- Add 1/2 to 2/3 cup bbq sauce and mix. Add 2 tbsp veggie broth if the bbq sauce is too thick and mix in (I use 2 tbsp of broth to clean out the mixing bowl after transferring to the baking dish). Spread the mixture in a large baking dish (parchment lined).
- Bake at 400 deg F For 30 minutes. Shred some of the larger pieces by pressing with a spatula. Taste and adjust salt, sweet, heat at this point. Add some salt, sugar/maple syrup and cayenne for heat if needed and mix in and move the jackfruit around.
