4 slices whole-wheat bread (1-ounce each)
Nonstick cooking spray
1/2 cup whole-wheat flour
1 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 pound flounder fillets
2 eggs, beaten to mix
1/3 cup nonfat plain Greek-style yogurt
2 tablespoons mayonnaise
1 1/2 tablespoons Dijon mustard
1/2 teaspoon Worcestershire sauce
1 tablespoon snipped fresh chives
Pinch cayenne pepper, optional

Steps:

  • Put the bread in the bowl of a food processor and pulse until bread crumbs form. Toast the crumbs in a large, dry nonstick skillet over a medium-high heat, stirring frequently and breaking up the crumbs with a spoon if they begin to stick together, until crisp and golden, about 2 minutes. Remove from heat.
  • Preheat the oven to 400 degrees F.
  • Spray a baking sheet with olive oil cooking spray. On a plate, combine the flour, salt and pepper. Cut the fillets into 4 by 1-inch strips. A few pieces at a time, dip the fish into the flour mixture, dusting off the excess. Dip the fish in the egg and then the bread crumbs. Arrange on the baking sheet and continue until all of the fish is breaded. Bake until golden and cooked through, about 10 minutes.
  • Meanwhile, in a small bowl, stir together the yogurt, mayonnaise, mustard, Worcestershire sauce, chives and cayenne, if using. Season, to taste, with freshly ground black pepper.

Use panko to coat these strips of chicken breast, then dip them in your favorite sauce.

1 1/2 pounds boneless skinless chicken breasts
1/2 cup all-purpose flour
1/4 cup milk
1 pinch cayenne pepper
4 large eggs
Kosher salt and freshly ground black pepper
2 cups panko breadcrumbs
Vegetable oil, for shallow frying
Honey mustard, spicy ketchup and/or ranch dressing, for serving

Steps:

  • Cut the chicken lengthwise into 3/4-inch-wide strips. Put the flour in a shallow dish. Whisk the milk, cayenne, eggs and a pinch of salt and pepper in another shallow dish until combined. Put the breadcrumbs in a third shallow dish.
  • Dredge the chicken fingers in the flour, shaking off the excess, then dip into the egg mixture, and finally coat with the panko breadcrumbs, pressing to help adhere well. Set aside on a piece of wax paper or a baking sheet.
  • Heat about 1/2 inch of oil in a large skillet over medium-high heat. Working in batches, fry the chicken fingers, turning occasionally, until golden brown and cooked through, about 3 minutes. Transfer the chicken fingers to a paper towel-lined plate to drain and season with salt. Serve with honey mustard, spicy ketchup and/or ranch dressing for dipping.

250g pollock fillets
juice half a lemon
½ tsp fish seasoning (we used Schwartz)
50g polenta
50g dried breadcrumbs
1 omega-3 enriched egg , lightly beaten
2 tbsp olive oil
mangetout, broccoli and mashed potato , to serve

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Cut the fish into 8 pieces, then squeeze over the lemon juice.
  • Line a baking sheet with baking paper, and mix the fish seasoning, polenta and breadcrumbs on this. Dip the fish into the egg, then turn several times in the polenta and breadcrumb mixture to coat. Repeat with all the pieces of fish.
  • Drizzle with olive oil and bake for 15 mins, turning halfway through cooking. Serve with mangetout, broccoli and mashed potato.

300g chunky haddock fillet
2 tsp cornflour
2 tsp polenta
3 tbsp sunflower oil
½ red chilli , finely sliced
12 basil leaves , torn, plus a few extra leaves to serve
3 tbsp soy sauce
juice ½ lime , plus lime wedges to serve
100g Thai fragrant rice

Steps:

  • Cut the fish into pieces approximately 5 x 10cm. Pat dry with some kitchen towel. Mix the cornflour and polenta on a plate and season with salt and pepper. Add the haddock and turn to coat in the mixture.
  • Heat 2 tbsp of the oil in a large frying pan and add the haddock fingers. Cook for 5-8 mins, turning occasionally. Remove from the pan and drain on kitchen paper. Keep warm.
  • Wipe out the pan with kitchen towel. Return to the heat and add the remaining oil. Add the chilli and cook for 1 min, then remove from the heat and add the basil, soy and lime juice.
  • Cook the rice for 10-12 mins, until tender. Drain well and serve with the haddock fingers, spicy sauce, lime wedges and a few basil leaves.

4 -6 ounces beer
1/8 teaspoon salt
1/2 teaspoon Old Bay Seasoning
4 cups vegetable oil (for frying)
4 large russet potatoes, cut potatoes in even, finger-sized pieces
2 lbs fish fillets, cut in half, crosswise

Steps:

  • Preheat oven to 250°F.
  • Prepare batter: Mix flour, cornmeal, old bay, and salt together.
  • Add ale and mix well.
  • Batter should be thin.
  • Heat oil in deep fryer.
  • DO NOT FILL TO TOP.
  • The potatoes and the fish will cause the oil to bubble.
  • Allow room for the oil to rise.
  • Cook 1/4 of the potatoes until golden brown, about five minutes.
  • Drain on paper towels.
  • Place in warmed oven.
  • Repeat process until potatoes are done.
  • Season with salt and pepper.
  • Dip fish in batter, allowing excess to drip off.
  • Fry in batches until golden brown, about 5 to 8 minutes.
  • Drain on paper towels.
  • Keep warm in oven until all fish are cooked.
  • Season with salt and pepper.
  • Serve with a sprinking of malt vinegar.

1 lb. orange roughy fillets
1 env. OVEN FRY Fish Fry Seasoned Coating Mix for Fish
1/2 cup KRAFT Lite Ranch Dressing
2 jalapeño peppers, stemmed, halved and seeded
1/4 cup cilantro leaves
2 Tbsp. lime juice
1 bag (10 oz.) salad greens, torn
2 cups cherry tomatoes, halved

Steps:

  • Line 15x10x1-inch baking pan with foil. Coat evenly with oil. Cut fish into 3x1-inch strips. Moisten with water, then coat evenly with coating mix. Arrange in prepared pan.
  • Bake at 425°F 12 to 15 minutes or until fish flakes easily with fork.
  • Meanwhile, place dressing, jalapeno peppers, cilantro and lime juice in blender or food processor container; cover. Process until smooth.
  • Toss greens and tomatoes in large bowl. Add 1/2 of the dressing mixture; mix lightly. Top with baked fish fingers; drizzle with remaining dressing mixture.
