1/3 cup minced fresh cilantro

Steps:

  • In a large nonstick skillet, saute red pepper and jalapeno in butter until tender. Add cumin; cook for 30 seconds. Add corn and cilantro; saute 2 minutes longer or until heated through.

1 (16 ounce) bag frozen corn kernels, thawed
1 small green bell pepper, chopped
1 small red bell pepper, chopped
1/2 cup onion, chopped
1 tablespoon butter or 1 tablespoon olive oil
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a 2-quart microwave-safe casserole dish, combine corn, bell pepper, onion and butter.
  • Cover and microwave on high until bell pepper is crisp-tender (5-7 minutes), stirring once.
  • Stir in cumin, salt and ground pepper. Cover and let stand 5 minutes before serving.

1 1/2 pounds cleaned squid
1 teaspoon chili powder
Juice of 3 limes
1 sweet red pepper, seeded, cored and cut in quarters vertically
Kernels from 3 ears fresh corn
1/2 jalapeno pepper, seeded and minced, or to taste
4 ripe plum tomatoes, chopped
1/4 cup extra-virgin olive oil
Salt and cayenne pepper to taste
1 tablespoon minced fresh coriander
1/2 cup crushed unsalted tortilla chips

Steps:

  • Preheat a broiler or grill. Toss the squid with the chili powder and the juice of one lime. Grill or broil the squid until they look seared. Remove from the heat.
  • Grill or broil the pepper slices, skin side facing the source of heat, until they are blackened. Place the pepper in a paper or plastic bag, close the bag and set aside for 10 minutes.
  • Slice the squid into thin rings, keeping the tentacles whole. Place in a bowl. Rub the blackened skin off the pepper and dice the slices. Add to the squid.
  • Bring a small saucepan of water to a boil, add the corn, cook for five minutes and drain well. Add the corn to the squid along with the jalapeno pepper, tomatoes, oil and remaining lime juice. Season to taste with salt, pepper and coriander. Transfer to a serving dish or to six individual plates and top with the tortilla chips.

2 packages (10 ounces each) frozen corn kernels
1 cup milk
1 cup corn
1 finely chopped jalapeno chile
2 tablespoons sugar
coarse salt and ground pepper
2 tablespoons chopped fresh cilantro

Steps:

  • In a medium saucepan, combine frozen corn kernels with milk. Cover; cook over medium-high heat, breaking up corn occasionally, until kernels separate, 5 to 7 minutes.
  • Transfer 1 cup corn and 1/2 cup liquid to a food processor. Blend until almost smooth; return to saucepan.
  • Add jalapeno chile (seeds and ribs removed for less heat, if desired) and sugar; season with coarse salt and ground pepper. Simmer over medium-low heat until corn is tender, 4 to 6 minutes. Stir in 2 tablespoons chopped fresh cilantro.

CRISPY FRIED CALAMARI & AïOLI

500g squid, tubes and tentacles, cleaned
vegetable oil, for deep-frying
50g plain flour
50g cornflour
¼ tsp baking powder
pinch of cayenne pepper
150g mayonnaise
1 large garlic clove, finely grated
pinch of saffron
½ lemon, juiced

Steps:

  • Cut the tentacles off the squid and put in a bowl. Slice the squid tubes into roughly 1cm thick rings and add to the bowl. Heat the oil in a large heavy-based pan over a low heat, ensuring it is no more than two-thirds full.
  • For the aïoli, mix the mayonnaise, garlic, saffron and lemon juice in a small bowl. Set aside.
  • Toss the squid with the flour, cornflour, baking powder, cayenne and ½ tsp salt. When the oil has reached 170C on a thermometer, or when a cube of bread is dropped in and turns golden brown in 30 seconds, deep-fry the squid in batches for 2 mins, or until lightly golden and crisp. Set aside on a tray lined with kitchen paper. Serve the fried squid with the aïoli on the side for dipping.

1 lb corn (about 2 cups)
1/2 cup red bell pepper, diced
1/4 cup red onion, diced

1 tablespoon cilantro, chopped
1 tablespoon fresh lime juice (1 lime)
salt

Steps:

  • Heat oil in a large skillet over medium high heat. Add corn before oil smokes and saute 2-3 minutes until lightly browned. Place corn in a mixing bowl and set aside.
  • Add peppers and onions to skillet and cook 5 minutes, stirring occasionally. Add cumin and cook another 1-2 minutes.
  • Turn heat to low, stir in remaining ingredients. Toss with corn and serve.

1/4 cup chopped green onion
1/4 cup chopped onion
1/4 cup red bell pepper
1/2 cup margarine, melted
1 large tomatoes, peeled and diced

Steps:

  • Place frozen corn, green peppers and onions in a container and cover with water.
  • Place on stove top and bring to a boil.
  • Boil for three minutes. Drain.

  • Drain calamari of excess liquid and pat dry with paper towels to the extent possible. Season with salt and pepper.
  • Heat 2 tablespoons olive oil in a skillet over medium-high heat. Once hot, add calamari and cook 2-3 minutes, stirring often, until calamari is opaque. Remove calamari to a plate with tongs or a slotted spoon. Pour out and discard any liquid left in the skillet.
